GRAMMIE BEA'S OLD FASHIONED CORNFLAKE CUSTARD PUDDING
My gram used to make this all the time for us... This old fashioned recipe is easy to make, and it is so YUMMY, you won't make it just once! A MUST TRY! Top it with whipped cream for an even yummier treat!

Steps:
- Mix all ingredients in a glass baking dish.
- Preheat oven at 375, and then turn down to 350 when you put the casserole dish in the oven.
- Cook 25-35 minutes or until top is golden brown.
- Serve hot or cold with whipped cream.
CORN PUDDING

- Preheat oven to 350 degrees F. In a large bowl combine corn, eggs, grated cheeses. In another bowl mix together flour, sugar, salt, chipotle pepper and add to egg mixture. Stir in milk, heavy cream and melted butter. Pour into a lightly oiled gratin dish. Place dish in a larger pan and add water to halfway up the sides of dish. Place in oven and bake for 1 hour or until a tester inserted in the center comes out clean. Garnish with chives.

- Preheat the oven to 350 degrees F. Grease a 1-quart casserole dish with butter.
- Beat the cream cheese, creamed corn, corn, cornmeal and chopped onion in the bowl of a stand mixer with the paddle attachment until combined.
- Remove the bowl from the mixer and add the milk, 3 tablespoons melted butter, beaten egg, sugar and Cheddar. Season with the salt and pepper and stir with a rubber spatula until combined.
- Spread the mixture in the casserole dish and bake for 50 minutes. Let stand 10 minutes before serving.

- Put the apples, caster sugar and 3 tbsp water in a pan and cook over a medium heat, stirring occasionally, for 10 mins until softened.
- Divide mixture between 4 glass tumblers and leave to cool. Meanwhile, heat the golden syrup and butter in a large bowl in the microwave for 1 min to melt. Add the cornflakes and stir well to coat.
- Top the cooled apple with the crème fraîche, then divide the cornflake mix between the glasses.

- Preheat oven to 325°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in sour cream. CORNFLAKE PIE
This is an older recipe I can remember my mom making. I don't know where mom got the recipe (it's in her own writing), but she made it often judging by the spatters. For a change, I've filled the pie with Jello pudding and pie filling (the kind you cook on the stove) and top w' whipped cream. Cooking time is an estimate (I haven't made this myself in a while).

Steps:
- CRUST:
- Mix cornflakes, sugar and butter. Press firmly into a greased 9" pie plate and chill.
- FILLING:.
- Whisk milk, egg yolks, cornstarch, salt and sugar together in top of a double boiler. Cook over simmering water, stirring constantly, until mixture gets thick.
- Remove from heat & stir in vanilla.
- Cool slightly & pour into pie crust.
- MERINGUE:.
- Beat egg whites until they form soft peaks.
- Slowly beat in the sugar until meringue goes stiff.
- Spread over filling & bake in a preheated 350* oven until golden (should take 10-15 minutes).

Steps:
- Heat the oven to 180C/160C fan/gas 4. Unroll the pastry and briefly roll out on a lightly floured work surface until it's large enough to fit a 23cm loose-bottomed tart tin. Use the rolling pin to lift the pastry over the tin, then press into the corners and sides so the excess pastry hangs over the rim. Trim this away, leaving just a small amount of excess hanging over the rim.
- Line the pastry with baking parchment and fill with baking beans or uncooked rice. Bake for 15 mins. Remove the parchment and beans, then bake for another 5-10 mins until just golden. Remove from the oven and trim any excess pastry from the edges using a serrated knife.
- Heat the butter, syrup and sugar in a small pan with a pinch of salt, stirring frequently, until melted and smooth. Fold in the cornflakes to coat in the butter mixture.
- Spoon the jam into the cooked pastry base, then level the surface. Tip the cornflake mixture over the jam and gently press down until all of the jam is covered with a layer of the mixture. Return the tart to the oven and bake for another 5 mins until the cornflakes are golden and toasted. Leave to cool until just warm before slicing and serving with custard.
