Pumpkin Wheat Honey Muffins image

The goodness of whole wheat flour and pumpkin sweetened with honey. Plump raisins and chopped walnuts add to the wholesome goodness of these muffins. Good for breakfast, brunch or snack!

½ cup raisins
1 ½ cups whole wheat flour
½ cup packed brown sugar
1 teaspoon pumpkin pie spice
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 eggs
¾ cup canned pumpkin puree
½ cup vegetable oil
½ cup honey
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan, or line with paper liners. Place the raisins in a cup, and add enough hot water to cover. Let stand for a few minutes to plump.
  • In a large bowl, stir together the whole wheat flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt. Make a well in the center, and put in eggs, pumpkin, oil and honey. Mix just until the dry ingredients are absorbed. Drain excess water from raisins, and stir in along with the walnuts. Spoon into muffin cups so they are about 2/3 full.
  • Bake for 18 minutes in the preheated oven, or until the tops spring back when lightly touched. Cool in the pan before removing from cups.

1/2 cup whey protein powder, plain
2 teaspoons pumpkin pie spice
1/3 cup golden monkfruit, granulated
1/8 teaspoon kosher salt
1 teaspoon baking powder
1 cup pumpkin puree
1/3 cup coconut oil, melted and cooled
1/4 cup, plus 2 tablespoons, Greek yogurt, plain
2 egg
2 teaspoons vanilla extract

Steps:

  • Lightly grease muffin liners or muffin tin with cooking spray.
  • In a large mixing bowl whisk together flour, protein powder, pumpkin pie spice, sweetener, salt and baking powder.
  • In a separate bowl mix the pumpkin puree, coconut oil, eggs, yogurt and vanilla extract together until well combined.
  • Form a well in the middle to the dry mixture and pour the wet mixture in the center.
  • Fold all ingredients together with a rubber spatula. Don't over mix.
  • Add 1/4-1/3 cup to each prepared muffin liner.
  • Bake at 325°F for 15-20 minutes or until a toothpick comes clean when placed in the center of the muffin.
  • Remove from oven and let sit for 5 minutes before transferring the muffins to a cooling rack.

2/3 cup protein powder
1/2 tsp baking powder
1/4 tsp salt
2 tsp pumpkin spice
1/2 tsp cinnamon
1/2 cup plain whole milk greek yogurt
1 egg
3/4 cup pumpkin
1/3 cup sugar
1 tsp vanilla

Steps:

  • Preheat oven to 400 degrees. Line a muffin tin with liners or use non-stick spray.
  • In a large bowl combine flours, protein powder, baking powder, pumpkin spice, cinnamon and salt.
  • In a medium sized bowl whisk together pumpkin, yogurt, egg, sugar and vanilla.
  • Add wet ingredients to the flour mixture and mix until just combined.
  • Fill the prepared muffin tin, nearly filling each muffin to the top. This should make ~7 or so muffins, depending on the size of your muffin tin.
  • If desires, top with chopped nuts (I used pecans!), chocolate chips or even shredded coconut!
  • Bake muffins at 400 for 18-20 minutes until golden brown and a toothpick inserted comes out clean.
  • Allow to cool fully and enjoy! Store in an airtight container for up to 1 week or freeze for up to 2 months.

1 cup all-purpose flour
3/4 cup whole wheat flour
3 tablespoons sugar (or splenda)
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/4 teaspoon baking soda

1 beaten egg (or egg substitute)
3/4 cup skim milk
2 tablespoons butter, melted (or applesauce)
1/2 cup canned pumpkin
cooking spray

Steps:

  • Preheat oven to 375 degrees.
  • Spray 12 2-1/2 inch muffin cups with nonstick cooking spray. Dust with flour and set asie.
  • In a large bowl, stir together dry ingredients and make a well in center of flour mixture.
  • In a small bowl, combine egg, milk and butter and then stir in pumpkin.
  • Add pumpkin mixture all at once to flour mixture and stir until just moistened (batter should be lumpy).
  • Spoon batter into prepared muffin cups, filling about 2/3 full.
  • Bake for 15 to 18 minutes or until a wooden toothpick inserted in centers comes out clean. Cool in pan on a wire rack for 5 minutes. Remove from muffin cups. Serve warm.
