GOAT CHEESE-STUFFED FIGS WRAPPED IN PROSCIUTTO

Steps:
- Heat the oven to 375 degrees.
- Line a sheet tray with parchment paper.
- Place about ½ teaspoon of goat cheese in the center of each fig half.
- Wrap each fig half with a piece of prosciutto.
- Place figs on the sheet tray and drizzle with olive oil.
- Sprinkle on the rosemary and orange zest and season with salt and pepper.
- Roast in oven for 10 minutes.
- Remove from oven, drizzle with the hot honey and serve warm.

- Preheat oven to 350 degrees F (175 degrees C).
- Lay prosciutto onto a work surface. Place 1 fig on the end of each prosciutto slice. Spread a thin layer goat cheese onto each fig. Roll prosciutto around each fig; arrange on a baking sheet.
- Bake in the preheated oven until prosciutto is crisp, 3 to 4 minutes.

Steps:
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper; set aside.
- Cut a small hole in the center of the flesh of each fig. Fill each hole with 1/4 teaspoon of goat cheese.
- Take a prosciutto slice and tear in half. Use 1 half to diagonally wrap around the fig, starting from the top. Tuck underneath at the ends. Repeat until all figs are wrapped. (Secure with toothpicks if necessary.) Place wrapped figs on prepared baking sheet, evenly spaced.
- In a small bowl, combine honey and pumpkin pie spice. Drizzle honey evenly over each fig.
- Place in the oven on the top rack and roast for 8 to 10 minutes. Remove and serve immediately.

Steps:
- Heat skillet on medium-low.
- Butter one side each of both slices of bread, then spread the opposite side of one slice with fig jam, and the other slice with goat cheese.
- Place jam-covered slice of bread butter-side down on the heated skillet. Top with slices of Gruyere, and sprinkle with salt and pepper.
- Place the other slice of bread on top, goat cheese side down.
- Cook until the browned on the bottom, approximately 4 minutes. Carefully flip the sandwich and continue to cook until the opposite side is browned and the cheese is melted, about 4 more minutes.
- Slice in half and serve immediately.

GRILLED PROSCIUTTO WRAPPED FIGS STUFFED WITH GOAT CHEESE
Steps:
- Preheat the grill and brush with a grill brush to remove any excess crud and fat. After brushing, run an oiled towel over the grates to pick up any loosened crud or soot.
- Drizzle each fig half with vinegar and fill each fig center with goat cheese. Sprinkle a couple flakes of crushed red pepper, if using, on top of the goat cheese and wrap each fig with a slice of prosciutto. Paint the outside of each fig very lightly with olive oil.
- Put the figs on a cooler spot of the preheated grill. The idea here is that we want to grill the figs gently to cook the fig all the way through but to still get the char on the outside. Grill the figs on all sides so the prosciutto is starting to become crispy and the fig feels soft when squeezed, about 5 to 6 minutes.
- While the figs are grilling, in a large bowl, toss the arugula with a little extra-virgin olive oil, some balsamic vinegar and the Parmigiano-Reggiano. Taste, and add salt, if needed. Arrange on individual serving plates or a serving platter and top with the figs. Drizzle a couple of drops of balsamic on each fig and serve.

- Place goat cheese on a sheet of plastic wrap. Top with another sheet of plastic wrap and use a rolling pin to flatten into a 4x8-inch rectangle.
- Remove the top sheet of plastic wrap and cover goat cheese with slices of prosciutto, slightly overlapping the edges. Cover prosciutto with a new sheet of plastic wrap and flip both sheets over so the goat cheese layer is now facing up.
- Remove top sheet of plastic wrap. Cover goat cheese evenly with figs, basil, and black pepper. Starting from the long edge, roll tightly to form a log. Wrap log in plastic wrap and refrigerate at least 2 hours.

- In a large skillet, heat 2 tablespoons butter over medium heat. Add onions, sugar and salt; cook and stir until softened, about 15 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally., Meanwhile, place figs, water and honey in a small saucepan. Bring to a boil; reduce heat. Steps:
- Spread the fig preserves onto 4 slices of bread.
- Cut the Brie into 8 long, thin slices.
- Lay 2 slices of Brie over the preserves. (I have also used creme de brie since I don't really care for the rind of Brie. If you go this route you can just spread the creme de Brie over the other slices of bread.).
- Arrange the prosciutto over the Brie.
- Top with the remaining 4 slices of bread.
- Spread half of the butter over the tops of the sandwiches and invert onto a hot skillet or pan.
- Spread the remaining butter on the other side of the sandwiches.
- Cook on the stove or in the oven, turning the sandwiches over once or twice, until the bread is golden brown and the Brie is melted.
- Cut in half to serve.

- Preheat the oven to 425 degrees F. Prepare the chicken by pounding thin using a mallet or rolling pin in a resealable freezer bag or between pieces of wax paper (about 1/2 inch in thickness). Salt and pepper both sides of each chicken breast and set aside.
