PISTACHIO-CRUSTED TILAPIA WITH CHARD, FLASH-FRIED PROSCIUTTO, GORGONZOLA AND PINE NUTS

- In a food processor, combine pistachios, oregano, thyme, and garlic powder. Process until finely chopped and transfer to a shallow dish. Season both sides of tilapia fillets with salt and pepper. Brush honey mustard over both sides of tilapia and then transfer to pistachio mixture. Press mixture into both sides of fish.
- Heat 1 tablespoon of the oil in a large skillet over medium heat. Add tilapia and cook 2 to 3 minutes per side, until fork-tender.
- Heat remaining oil in a small skillet over high heat. Add prosciutto and cook 2 minutes, until golden brown. Add pine nuts and cook 1 minute, until nuts are golden brown. Add chard leaves, cover and steam 2 minutes, until leaves soften. Arrange chard mixture on a serving platter and top with Gorgonzola and serve with tilapia.
TILAPIA WITH PROSCIUTTO AND SAGE
Prosciutto (Ham) and sage add deep flavor to tilapia, which is a mild fish. Separating the two sides of the fillet helps to keep the thinner part from overcooking.

- Cut fillets lengthwise to separate smaller and larger portions, then pat dry and season with pepper. Wrap each piece of fillet crosswise in a slice of prosciutto, leaving ends of fillet exposed if necessary and tucking 1 or 2 sage leaves between prosciutto and fillet (use 1 leaf for smaller pieces of fish).
- Heat 2 teaspoons oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then sauté the 4 larger pieces of fish 4 minutes. Turn over and sauté until just cooked through, about 3 minutes more. Transfer to a platter and keep warm, loosely covered with foil. Wipe skillet clean and heat remaining 2 teaspoons oil, then sauté the 4 smaller pieces of fish, turning over once, until just cooked through, about 4 minutes total.

PROSCIUTTO-BAKED TILAPIA

Steps:
- Preheat oven to 400°F Lightly coat a rimmed baking sheet with cooking spray.
- Arrange four slices of prosciutto evenly spaced on the baking sheet. Place a second slice over each of the first four. Set one tilapia fillet over pair of prosciutto slices.
- Season the fish with salt and pepper, then drizzle each with about 1/2 tablespoon olive oil.
- Spoon a quarter of the diced red pepper over each fillet and spread it evenly.
- Starting at one end of each fillet, carefully roll it up, holding the prosciutto so that it wraps around the outside of the fish. Poke a toothpick through the center of each roll to help it hold together.
- Bake 20 to 25 minutes, or until the flesh feels firm and flakes easily.

LIGHT FLAX & OAT BAKED TILAPIA
I came across a few breading/coating recipes online that used alternatives to flour. I've tweaked them a bit to come up with this, to add some more flavour and improve the texture. I'm happy with the results, a simple tasty fish with healthy ingredients and low fat. You could add whatever herbs or spices you like to the flax & oat base. I use my 'magic bullet' for this and it works really well! (have to justify that purchase after all!) Don't try to over coat these, it won't crisp up because there intentionally isn't much oil in this recipe. If your diet doesn't permit eggs you could omit them. Tilapia is quite wet anyway, the coating will still stick, of course not quite as well but I've tried it and it works. Serve this with #216546, brown rice and spaghetti squash for a healthy meal!

- Put all the dry ingredients into your magic bullet or blender (from oats to pepper in the list), and process until you have a smooth texture.
- Get 2 large bowls out, add the egg whites to one bowl, whisk them up a bit. Add the coating mixture to the other bowl.
- Using one hand, add about half of your tilapia to the egg white bowl, mix it up to coat them all. With your other hand, coat each filet one by one in the flax/oat mixture, getting it even on each side and both ends. Transfer to an oiled baking sheet. Do same with the second half of the filets. You may need a second cookie sheet depending on the size.
- Spritz the top of the filets with oil if you like (ie with an oil sprayer or store bought oil spray).
- Bake on 375 for about 20 minutes, flipping them half way through. Alternatively you could broil 3-4 minutes per side. Serve 2 pieces per person, with sauce on the side. Enjoy!

BAKED TILAPIA
This my own creation. We love baked fish but don't like the heavy crust type so I came up with this and everyone loves it. The measurements are an estimation because it depends on how many filets you are cooking and how spicy you want your fish.

Steps:
- Mix all of the dry ingredients (bread crumbs to cheese) in a plate.
- Dip your filets in the melted butter then dredge in the bread crumb mixture.
- Place in a baking dish that is large enough the filets will not overlap (make sure you spray or grease your dish).
- Place the sliced onions mushrooms and pepper (if used) on top of filets.
- Pour any left over melted butter over this and sprinkle juice over this.
- Cover with foil and bake in a 350º oven for about 20 minutes (check to see if fish is starting to flake easily, if not bake a little longer).
- Remove foil and bake for another 10 minutes or until the crust turns a light golden brown color.
- Serve with pan juices spooned over the fish.
