1 cup sugar
1 cup mashed potatoes
1/2 cup lard or shortening
3 eggs, beaten
1 1/2 teaspoon salt
1 1/2 to 2 packs yeast
1 cup warm water
5 cups flour

Steps:

  • Mix together well the sugar, potatoes, lard, eggs, and salt.
  • Dissolve the yeast in 1 cup warm water; then add that to the above mixture.
  • Stir in about 3 cups flour. Add the remaining 2 cups flour while kneading. Knead until the dough is no longer sticky but moist.
  • Let rise until doubled.
  • Preheat oven to 325 degrees F.
  • Roll out dough to a 3/4 to 1-inch thickness. Cut into bun shapes with a jar or doughnut cutter (or cloverleaf or crescent-shaped cutter) and pour on greased cookie sheets about 2 inches apart. Let them rise until puffy but not doubled (they should not be touching).
  • Brush with milk. Bake until lightly golden brown, about 12 minutes.

Homemade Pretzel Buns with Butter and Ham image

1 1/4-ounce (2 1/4 teaspoons) packet active dry yeast
Kosher salt
4 tablespoons unsalted butter, melted plus 8 tablespoons unsalted butter, room temperature
3 1/4 cups unbleached all-purpose flour plus more for dusting
Coarse sea salt for sprinkling
1/2 cup baking soda
1 1/2 pounds thinly sliced French ham
2 cups arugula
6 ounces brie cheese, sliced

Steps:

  • Add 1 1/2 cups of lukewarm water and the yeast to a large bowl and allow the yeast to sit until foamy, about 5 minutes. Whisk in 1 teaspoon of salt and 1 tablespoon of the melted butter. Add the flour and stir with a wooden spoon to combine. Once the dough is shaggy, but mostly holding together, turn it out onto a lightly floured surface. Dust your hands with flour and knead the dough for about 3 minutes, adding more flour as needed to prevent sticking. Form the dough into a ball and place back inside the mixing bowl. Cover with plastic wrap or a clean kitchen towel and leave in a warm, dry place to rise until the dough has doubled in size, about 1 hour. Punch the dough down once to release some of the air bubbles. Turn the dough out onto a very lightly floured surface and divide the dough into 8 equal pieces with a pizza cutter or a sharp knife. Form each piece into a ball, and place seam side down. Let rise, uncovered, for 10 minutes.
  • Meanwhile, line a rimmed baking sheet with parchment paper. Preheat the oven to 400 degrees F. Bring 12 cups of water and the baking soda to a light simmer in a large pot.
  • Submerge 2 to 3 dough balls at a time into the simmering water using a slotted spoon. Let them sit in the water for 10 seconds per side. Carefully remove each roll, making sure to drain off as much liquid as possible and place on the prepared baking sheet. Using a sharp knife, make an X on the top of each roll. Brush the remaining melted butter on the rolls and sprinkle with a generous pinch of sea salt. Bake until golden brown, about 25 minutes. Remove from the oven and let rest for 10 to 15 minutes before slicing.
  • To assemble the sandwiches: Slice each roll in half. Spread softened butter on each of the cut sides of the roll, using about 1 tablespoon of butter per roll. Delicately fold and layer ham on the bottom half of each roll. Top with brie and place about a 1/4 cup of arugula on top of the ham. Sandwich with the top buns.

4 large waxy-style potatoes (about 2 1/4 pounds)
2 tablespoons, plus 2 teaspoons kosher salt
3 strips bacon (about 2 ounces), minced
1/2 medium Spanish onion, chopped
1 tablespoon all-purpose flour
3/4 cup chicken broth, homemade or low-sodium canned
1/3 cup white wine vinegar
1 tablespoon plus 1 teaspoon Dijon mustard
1 1/2 teaspoons sugar
Freshly ground black pepper
2 tablespoons chopped flat-leaf parsley leaves

Steps:

  • In a large saucepan, place the potatoes and cover with cold water by 1 inch. Stir in 2 tablespoons salt. Bring to a boil, lower the heat, and simmer until just tender, about 30 minutes. Drain, transfer to a large bowl, and cover with plastic wrap to keep warm.
  • Meanwhile in a small saucepan, over medium-high heat, add the bacon and cook, stirring frequently, until crispy and its fat has been released, about 3 minutes. Lower the heat to medium, add the onion and cook, stirring, until translucent, about 6 minutes. Stir in the flour and cook for 45 seconds more. Add the remaining 2 teaspoons salt, broth, vinegar, mustard, and sugar. Bring to a boil while whisking constantly. Remove from the heat.
  • Using your hands, rub the skins off the potatoes. Cut the potatoes in half lengthwise, then cut crosswise into 1/4-inch slices. Return the potatoes to the large bowl. Pour over the vinegar mixture and toss to coat the potatoes. Toss in the parsley and season with pepper to taste. Transfer to a serving platter and serve immediately.

1 pound red potatoes
2 teaspoons extra-virgin olive oil
8 ounces kielbasa, sliced into 1/4-inch-thick rounds
1/2 cup finely chopped celery
1/4 cup thinly sliced green onions
1 1/2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil

Steps:

  • Bring a large pot of water to a boil. Add the potatoes; boil about 25 minutes or until tender. Drain and let cool. Cut potatoes into quarters and place in a large bowl.
  • In a large skillet, heat the 2 teaspoons oil over medium-high heat. Brown the kielbasa. Transfer to a paper towel-lined plate to drain. Add kielbasa to the bowl with the potatoes along with celery and green onions.
  • For the dressing, in a small bowl, whisk together the vinegar, mustard, garlic, salt, and pepper. Slowly whisk in oil. Add the dressing, celery and green onions to the potato mixture and toss to combine. Serve warm or at room temperature.

These fabulous rolls are wonderful stuffed with your favorite sandwich ingredients. This is one of those recipes that is not hard to make...but makes you feel a great sense of accomplishment when looking at the finished product. You can either make them into a tight knot, pretzel shape or simple bun shape. The recipe is a combined effort from Thorsten, his German baker friend, and myself. The dough also makes great pretzels. Hope you enjoy it as much as we did! Scoring the top with an X has some cool results as well! BEER PAIRING: Live Oak Pilz, a Bohemian-style pilsner, is perfect with these rolls!

1 1/3 cups warm water
2 tablespoons warm milk
2 1/2 teaspoons active dry yeast
1/3 cup light brown sugar
2 tablespoons butter, melted
4 cups all-purpose flour
kosher salt or pretzel salt
2 quarts cold water
baking soda (1/2 cup)

Steps:

  • In a small bowl if using a bread machine, or in the bowl of a standing electric mixer fitted with a dough hook, mix a 1/3 cup of the warm water (105-115 degrees) with the yeast and let stand until foamy.
  • Add the remaining cup of warm water along with milk, sugar & melted butter and swirl to dissolve the sugar. (If using a bread machine add mixture to bread machine at this point and continue).
  • Add flour and mix on dough cycle or med-low speed.
  • Remove dough from bread machine once it forms a nice a firm, pliable dough ball.
  • Add more flour if necessary.
  • Turn dough out onto a lightly floured table and knead for 2 minutes.
  • Roll into a 2 foot long log and cut into 12 even pieces.
  • Cover dough with plastic and a damp cloth and let sit for 10 minutes.
  • Pat dough into rolls or form knots and arrange on a lightly floured surface about an inch apart and cover with lightly oiled plastic wrap.
  • Let the pretzels rest for an additional 30 minutes.
  • Preheat the oven to 425°.
  • Lightly oil 2 baking sheets.
  • In a large stockpot, bring the cold water to a rolling boil and add baking soda.
  • Drop two rolls into the boiling water and boil for no more then 30 seconds, turning once.
  • Carefully remove with tongs or slotted spoon and hold above pot and let drain.
  • Sprinkle lightly with salt.
  • Repeat with the remaining rolls.
  • Arrange rolls on the oiled baking sheets and bake on the upper and middle racks of the oven for about 8-10 minutes, or until browned all over; shift pans from top to bottom and back to front halfway through, for even baking.
  • Let rolls cool on the baking sheets for about 5 minutes, then transfer them to a rack.
  • Serve warm or at room temperature.

3 tablespoons vegetable oil
4 medium red onions, thinly sliced (4 cups)
2 teaspoons fresh thyme or 3/4 teaspoon dried thyme
1 teaspoon caraway seed
6 medium very firm potatoes
1/2 lb low-fat kielbasa
2 tablespoons cider vinegar
2 tablespoons brown sugar
1/2 teaspoon Dijon mustard
salt
freshly ground black pepper
chopped fresh dill

Steps:

  • In a large frying pan, heat the butter and 1 tablespoon of the oil over medium-high heat.
  • Add the onions, thyme, and caraway seeds.
  • Sauté 2-3 minutes, or until the onions begin to soften.
  • Lower the heat, cover, and cook, stirring occasionally, 20-30 minutes, or until the onions are tender but not browned.
  • While the onions are cooking, place the potatoes in a large pot, cover with water, and bring to a boil over high heat.
  • Lower the heat and simmer, covered, 15 minutes.
  • Pierce the kielbasa several times with a fork, add to the potatoes, and simmer 10 minutes, turning several times.
  • Drain, cool slightly, and then slice the potatoes and kielbasa into ½“ pieces- place in a large bowl.
  • In a small bowl, whisk together the remaining oil, vinegar, brown sugar, and mustard.
  • Season with salt and pepper.
  • Drizzle this mixture over the potatoes and kielbasa and mix well.
  • Arrange the onions on a serving platter and top with the potato mixture.
  • Sprinkle with dill and serve warm.
