Baked cauliflower in a creamy cheese sauce that doesn't use cream-of-X soup. Note: I have made this with skim milk and lowfat cheese and it works, but you have to cook the sauce longer to get it to thicken.

Steps:
- Cut cauliflower into bite size pieces and steam until just tender.
- While it is steaming, melt the butter and add the red pepper flakes and garlic powder (if using).
- Add the flour and mix until smooth and thickened.
- Mix in the milk a bit at a time stirring each time until smooth.
- Cook, stirring constantly, over a medium heat until thick and creamy (this takes awhile).
- Add 1 cup cheese cheese and stir until melted.
- Remove sauce from heat and salt and pepper the sauce to taste.
- Spread the cauliflower in a 9 x 13 pan (or casserole dish).
- Pour the cheese sauce evenly over the cauliflower and then sprinkle with 1 cup cheese (if desired).
- Bake at 350 F until cheese is melted.

- For the Instant Pot, add the cauliflower, water, carrots and cashews to your Instant Pot and cook on high pressure for 5 minutes, then carefully do a quick pressure release by moving the valve to release the pressure.
- Pour the cooked mixture into a strainer over the sink and drain the extra water.
- For the blender, put the drained mixture along with the nutritional yeast, liquid drained from the canned tomatoes, smoked paprika, salt, chili powder, jalapeño powder (if using) and mustard powder into your blender. Blend until smooth.
- For the mix-ins, scrape out the blender contents into a mixing bowl and stir in the tomatoes and green chiles, bell pepper (if using), minced onion (if using) and cilantro.
- You can serve this at room temperature or keep it warm on the lowest slow cooker setting.

- Turn Instant Pot to SAUTE mode and let the Instant Pot inner cooking pot heat for a couple of minutes. Add diced bacon and cook until crispy. Remove from Instant Pot and place on a plate lined with paper towels to drain any extra bacon grease.
- Add diced onion to the pot and cook until the onion is fragrant and translucent, about 2 minutes. Add garlic and continue to cook for 1 minute.
- Press CANCEL to stop sautéing.
- Add diced cauliflower florets, broth, salt and pepper.
- Cover the Instant Pot with the lid and place the valve in the LOCK mode. Turn pressure to MANUAL and set the timer to 3 minutes.
- Carefully quick release the value when the timer is complete.
