CILANTRO LIME SALMON IN FOIL RECIPE

Baked salmon with cilantro and lime is a tangy Mexican inspired salmon entrée that is perfect for summer and super easy to clean up.

1 lb salmon filet, skin removed (on is OK too)
1/2 lime, juice squeezed
2 tablespoons honey
2-3 tablespoons cilantro, chopped
1-2 garlic cloves, minced
1/2 teaspoon cumin
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • Preheat the oven to 350° F.
  • In a small bowl, combine lime juice, garlic, honey, cilantro, olive oil, and cumin. Stir well and set aside.
  • Season salmon filet with salt and pepper to taste and place on a large piece of greased tin foil. Fold up all four sides of the foil slightly to prevent the sauce from spilling onto the counter. Pour the cilantro lime sauce over the salmon.
  • Fold the sides of the foil over the salmon covering completely, and seal into a closed packet. Place directly on oven rack and bake until cooked through, about 15-20 minutes.
  • Optional step: Open the foil exposing the top of the salmon and broil for the last 4-5 minutes, for a browned top. Top with additional cilantro or lime juice just before serving.

1 tablespoon vegetable oil
3 tablespoons butter
Two 6-ounce fillets salmon
Kosher salt and freshly ground black pepper
1 tablespoon honey
1 tablespoon soy sauce
Zest and juice of 2 limes, plus lime wedges, for serving
2 tablespoons finely chopped fresh cilantro
Steamed rice, for serving

Steps:

  • Add the oil and 1 tablespoon of the butter to a nonstick skillet and place over medium-high heat. Season the salmon on both sides with salt and pepper. Add the fish to the skillet and cook for 3 to 4 minutes per side, depending on the thickness of the fish and the degree of doneness you like. Remove from the skillet and keep warm.
  • Return the skillet to medium heat and add the honey, soy, remaining 2 tablespoons butter and half of the lime zest and juice. Cook, stirring, until the butter melts and starts to bubble. Cook for a minute until the sauce thickens a little. Add the salmon and spoon over the sauce. Cook for another minute, basting as you go. Sprinkle generously with the cilantro.
  • Stir the remaining lime juice and zest into the cooked rice. Serve the salmon with the rice, extra sauce and lime wedges on the side.

1 lb salmon
1 tablespoon olive oil
salt and pepper
2 tablespoons honey
1 tablespoon lime juice (freshly squeezed )
2 tablespoons cilantro (, fresh, chopped )
3 garlic cloves ( minced)

Steps:

  • Preheat oven to 400 F.
  • Pat dry salmon. Brush with 1 tablespoon of olive oil from all sides. Season with salt and pepper. Place the salmon on a large piece of foil. Fold foil sides and ends up (1 or 2 inches high) tightly around the salmon. Place the salmon in foil on a baking sheet.
  • In a small bowl, combine honey, lime juice, chopped cilantro, and garlic. Mix to combine. Spread this mixture over the salmon.
  • Do not cover salmon with foil, leave it open (with foil sides up) and bake it just like that, at 400 F for 15-20 minutes.
  • Carefully remove salmon from foil, separating the salmon from the skin which will remain stuck to the foil. Place the salmon onto a serving plate. Carefully scoop the sauce from around the salmon and pour over the salmon.

1.33 lbs. skinless boneless salmon (one large piece)
1/2 tsp smoked paprika
1/2 tsp chili powder
1 tbsp butter, melted
1 tbsp lime juice
1 tbsp honey
2 tbsp fresh cilantro, minced
2 garlic cloves, minced

Steps:

  • Preheat the oven to 400 degrees. Place the salmon on a large piece of foil on a baking sheet. Fold up the sides around the salmon, but do not cover. Sprinkle with paprika, chili powder, salt, and pepper.
  • In a small bowl, combine the melted butter, honey, lime juice, cilantro, and garlic. Spread this mixture over the salmon.
  • Bake for 16-20 minutes until salmon is cooked through and flaky. Pour any remaining sauce from the foil onto salmon before serving. Add fresh cilantro and lime juice if desired.

2 tablespoons olive oil
2 garlic cloves, minced
1 1/4 tablespoons lime juice
1/2 teaspoon salt (to taste)
3 dashes cayenne pepper
1 lb salmon fillet
2 tablespoons chopped cilantro
lime, for garnishing

Steps:

  • Preheat oven to 375.
  • Combine the olive oil, garlic, lime juice, salt, cayenne pepper, and half of the cilantro in a small bowl. (I used a lot more cilantro but will post as written) Stir to mix well.
  • Marinate the salmon with the mixture while he oven is preheating.
  • As soon as the oven is preheated, transfer the salmon to a baking sheet lined with aluminum foil or parchment paper, and bake until it's cooked through, about 15 minutes. I didn't use any foil or parchment paper and found it baked just fine in my pan without.
  • Remove from the oven, top with the remaining chopped cilantro and garnish with the lime. Serve immediately.

Reader's Digest, as homey as it gets, took me by surprise with an international lineup of recipes in its "30 Minute Cookbook." I gave its recipe for salmon with lime-herb butter a try, partly because keeping compound butters in the refrigerator is a terrific time saver.

2 limes
1/4 pound (1 stick) butter
1 2-inch piece of fresh ginger, peeled and sliced
12 sprigs fresh cilantro
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
2 tablespoons sunflower oil
4 6-ounce salmon fillets

Steps:

  • Heat oven to 425 degrees. Finely grate zest from one lime, and squeeze its juice; set aside. Cut remaining lime into 8 wedges; set aside.
  • In the bowl of a food processor, combine butter, ginger, 8 sprigs cilantro and lime zest and juice. Process until the mixture is smooth. Season to taste with salt, pepper and cayenne pepper; process again. Mound butter on a piece of foil, and shape into a cylinder. Cover tightly with foil, and place in freezer.
  • Brush a baking sheet with oil, and place salmon fillets skin side down on sheet. Sprinkle with salt to taste. Bake until fish flakes easily, about 8 minutes.
  • To serve, remove lime butter from freezer, and cut into thick rounds. Place a fillet on each of four plates and top each with an equal portion of lime butter. Garnish each plate with two lime wedges and a sprig of cilantro, and serve.

Steps:

  • Grease pan with 1T olive oil.
  • Place fillets, skin side down in an 8x8 baking dish.
  • Combine cilantro, garlic, lime juice, remaining olive oil, and (if desired) salt in a small bowl.
