1 1/2 cups plain flour
2 teaspoons baking soda
2 teaspoons baking powder
1 egg
1 cup low-fat milk
1/2 cup light sour cream
1 teaspoon mustard
1 teaspoon horseradish cream
2 tablespoons chives, chopped (plus extra, to garnish)
black pepper
200 g smoked salmon, slices

Steps:

  • Combine sifted flour with baking soda and baking powder. In a separate bowl, lightly beat egg and add milk. Make a well in the centre of the flour mixture and pour in egg and milk. Stir with a whisk until smooth and thick.
  • Spoon a tablespoon of mixture into a lightly greased, non-stick frying pan. Cook over a medium heat for 3 minutes, until bubbles appear on the surface. Turn and cook for 1 minute. Repeat with remaining batter and set aside to cool completely.
  • Combine sour cream, mustard and horseradish. Stir in chives and season with pepper. Spoon onto cooled pancakes and top with slices of smoked salmon. Garnish with extra chives and serve.

Why stick to lemon and sugar pancakes when this savoury pancake recipe can kick off a night of batter-based feasting? Flippin' marvellous.

55g/2oz plain flour
pinch salt
1 free-range egg
140ml/4½fl oz milk
vegetable oil, for frying
25g/1oz butter
25g/1oz plain flour
225ml/8fl oz milk
100g/3½ oz Emmental, grated
freshly ground black pepper, to taste
80g/3oz good-quality smoked ham
3 spring onions, finely sliced
4 sun-dried tomatoes in oil, drained and chopped

Steps:

  • Sift the flour and salt into a large bowl. Whisk together the egg and milk in another bowl then slowly pour the liquid into the dry ingredients. Whisk together until the batter is smooth. Set aside.
  • For the cheese sauce, melt the butter in a small pan and whisk in the flour. Cook for 1 minute then gradually add the milk whisking continuously. Bring to the boil and reduce the heat to a simmer for 1 minute until the sauce is thick and smooth. Stir in half of the cheese and season with black pepper.
  • To make the pancakes, heat a 20cm/8in crêpe or omelette pan until very hot. Drizzle in a small amount of oil and tip the pan to swirl the oil around. Ladle in about two tablespoons of batter mix and immediately tilt the pan from side to side to get a thin, even layer of batter to cover the base of the pan. Cook for around 30 seconds until the underside is golden then flip or turn with a pallete knife.
  • As soon as the pancake is turned, scatter over some ham, spring onions and sun-dried tomatoes. Spoon over some cheese sauce then top with a scattering of the remaining cheese.
  • Once you've topped the pancake the underside will be done. Fold the pancake in half then slip it out of the pan onto a warmed serving plate and keep warm under some foil while you make the remaining pancakes.

PRAWN, SMOKED SALMON AND SPINACH PANCAKES



Prawn, Smoked Salmon and Spinach Pancakes image

Made these for Shrove Tuesday instead of the more usual sweet pancakes. A tasty savoury alternative. Makes four large pancakes or six small (depending on the size of your frying pan). Serve with a fresh salad or green beans.

125 g plain flour
1 egg, beaten
300 ml 1% low-fat milk
1 teaspoon salt
sunflower oil, for frying
25 g butter
25 g plain flour
300 ml double cream
1 teaspoon Thai fish sauce
1 large handful parmesan cheese, grated
200 g raw prawns, shelled
150 g smoked salmon

Steps:

  • Make the batter by sifting the flour and salt into a bowl. Make a well in the middle and pour in the beaten egg, then whisk in the milk a little at a time until the consistency of pouring cream. Set aside for at least 20 minutes.
  • Melt the butter in a pan then whisk in the flour to make a roux. Heat, whisking, for a couple of minutes then add the cream little by little to avoid lumps. Heat until it thickens. You may need to add a little more milk or cream at this stage, to make the consistency of a luxurious sauce.
  • Mix in the fish sauce and Parmesan then remove from the heat.
  • Make the pancakes by heating a teaspoon of oil in a frying pan and pouring in a quarter of the batter mix, tilting the pan to make an even, thin covering. Once it has set and browned on the bottom, flip over and brown the other side. Turn out onto a warmed plate and repeat to make the others.
  • Put the filling back over a gently heat and add the prawns, stirring until cooked through. Remove from the heat and stir in the smoked salmon.
  • Assemble the pancakes by adding a quarter of the filling to each pancake and folding. Arrange on a tray and sprinkle with a little more Parmesan.
  • Place under a pre-heated grill for a couple of minutes, until the Parmesan has melted.

100g tagliatelle
1 tsp olive oil
1 garlic clove , finely chopped
50g spinach
75g cream cheese
zest and juice ½ lemon
75g smoked salmon , sliced
small handful basil , finely chopped

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the oil in a large saucepan and cook the garlic for 1-2 mins until softened. Add the spinach and continue to cook until just wilted. Stir through the cream cheese, lemon zest juice and, and some black pepper.
  • Drain the pasta but reserve a few spoonfuls of the cooking water. Add the salmon, basil and pasta to the sauce, along with the cooking water to loosen it a little. Toss together and season with more pepper, to taste, before serving.

2 tbsp wholegrain mustard
100ml olive oil
juice 1 lemon
4 eggs , beaten
140g plain flour
250ml milk
handful chives , chopped
vegetable oil , to cook
6 handfuls mixed salad leaves
12 slices of smoked salmon , preferably wild Irish salmon
1 lemon , finely sliced
handful chives , halved

Steps:

  • To make the dressing, place the wholegrain mustard in a bowl, then using a whisk, add the olive oil slowly. Add a squeeze of lemon, season to taste, then set aside.
  • To make the pancake mixture, mix together the eggs, flour, milk and chopped chives until smooth. Season with pepper and salt, if you want
  • Heat a medium non-stick frying pan over a highish heat. Using a piece of kitchen paper wipe the pan with some vegetable oil. Pour a ladleful of the pancake batter into the pan and swirl to cover the base. Cook for about 1 min, then flip, cook for 30 secs more, remove and place on greaseproof paper. Repeat until you've made all six pancakes, then set aside.
  • To serve, arrange handfuls of salad leaves in piles on the side of each of six plates. Fold pancakes into four and sit next to the leaves. Loosely drape two slices of smoked salmon over the leaves and pancakes. Tuck two slices of lemon and a few chives under the salmon, then drizzle the mustard dressing over everything and serve.

1.2kg spinach
15g butter
6 lightly smoked raw salmon fillets, skin removed (about 140g each)
300ml double cream

Steps:

  • Put the spinach in a really big saucepan (or two saucepans) and add a few tablespoons of water. Cover, set over a medium heat and cook for about 5-8 mins, turning the spinach over every so often, until wilted. Tip it into a colander to drain and allow it to cool (spread it out on a plate to cool it quicker). Take big handfuls of it in your fists and squeeze out the excess water. It's really important that you do this, otherwise the water will leach out and make the cream watery and green.
  • Chop the spinach. Melt the butter in a saucepan and gently toss the spinach in it. Season with pepper and a tiny bit of salt (there's so much salt in the salmon). Heat the oven to 160C/140C fan/gas 3. Lay the spinach in the bottom of a gratin dish (about 30cm x 20cm), then arrange the salmon fillets on top.
  • Heat the double cream in a small pan, then pour it all over the salmon and spinach. Bake for 35 mins, or until the top is golden and the cream is bubbling.

125g self-raising flour
1 tsp baking powder
½ tbsp sugar (any kind)
2 eggs
1 tbsp melted butter, plus extra for frying
100ml milk
50g baby spinach leaves, washed and chopped
berries and maple syrup, to serve

Steps:

  • Put the flour, baking powder, sugar, eggs, butter, milk and spinach in a blender and whizz until you get a smooth, bright green batter.
  • Heat a little more butter in a non-stick frying pan over a medium heat and add small dollops to the pan, 2-3 at a time. Cook for 2 mins until the edges are set, and bubbles are rising to the surface, then flip and cook for 1-2 mins more. Keep warm while you cook the remaining batches.
  • Serve with berries and a drizzle of syrup to serve.
