PERFECT PINTO BEANS

Steps:
- Put the beans in a large bowl, cover with cold water and let soak overnight.
- Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.

- Wash beans. Place beans in large pot cover with cold water and soak overnight.
- When ready to cook bring beans to a boil. Reduce heat and simmer 1 hour.
- Stir in remaining ingredients cover and simmer 3 hours or till beans are tender.
- Add more water if necessary.

- Rinse beans in cool water; pour into a pot, cover with water by 2 to 3 inches. Bring to a boil, then reduce heat and cover. Simmer 2 hours, or until beans are tender. Add water to pot as needed. Beans should have a thick broth. Toward end of cooking time, add salt and pepper and season to taste. Don't over-salt. For a variety try adding chili powder, garlic or Tabasco. Serve in a bowl with cornbread. Can serve with small bowls of grated cheese, chopped onions, chopped fresh jalapenos, sour cream, and/or cilantro.

- beans bowl cover with cold water, overnight .
- Instapot on simmer.
- Oil.
- spices: cumin, cayenne, turmeric, coriander & minced garlic.
- Add pork belly of bacon.
- simmer 2 minutes.
- add beans.
- add chicken stock.
- add vinegar.
- add molasses.
- add bay leaves.
- put lid on Instapot. Switch to pressure cook. 1 hour.
- let pot sit 1/2 hour after cooking. Then release remaining pressure.
- serve with diced onion & minced cilantro.

PINTO BEANS FOR MAKE YOUR OWN BURRITOS
This makes flavorful "soupy" pinto beans that are great for wet burritos. Our family always called these "make your own burritos" since everyone's end up so unique. Serve with recipe #202702

Steps:
- Sort beans to make sure there are no small rocks.
- Place beans in large pan and fill with water to within a few inches of the top. Soak beans overnight, or bring to a boil and let sit, covered, off heat for one hour. Drain and rinse beans.
- Refill pot with water. There should be about 3 cups of water per each cup of beans.
- Add bacon grease, cover, and bring to a boil.
- Turn down to simmer and cook about 4-5 hours, or until beans are fairly tender.
- Add remaining ingredients, cover and bring to a boil again. Then turn down to simmer and cook one more hour. Adjust spices to your liking.
- Once beans are tender, you can remove the lid and continue cooking to make the beans less soupy if you prefer.
- Serve with other burrito fixings like taco meat, cheese, onions, tomatoes, guacamole, sour cream, olives, etc.
BRAZILIAN-STYLE BEANS
A delicious dish to be served with long-grain white rice or brown rice if you prefer. Soaking the beans overnight will reduce the cooking time. Another dish from my "James McNair's Favorites" cookbook.

- Pick over and rinse the beans; set aside.
- In a large, heavy pot, cook the bacon over medium-high heat until fat is rendered. Add the onion and cook, stirring frequently, until soft but not browned, about 5 minutes. Add the beans, garlic, cumin, bay leaves, brown sugar and enough water to cover by about 2 inches. Cook until the beans are tender. .
- Add the tomato puree and salt and pepper to taste and simmer until the flavors are well blended, about 20 minutes. Just before serving, stir in the cilantro and lime juice.

- Add all other ingredients except the salt.
- Bring to a boil while stirring.
- Reduce heat and allow to simmer for two hours, covered.
- Stir occasionally, bringing up the beans from the bottom.
- Add salt after 1 hour.
- Beans are done when soft but still hold their shape.
- Note: If doubling this recipe, do not increase the amount of chili powder.
