TOMATO ASIAGO FETTUCCINE & ITALIAN CHICKEN SAUSAGE
This is one of those, WOW dishes that came about purely accidentally. It has delicious flavor and I plan to make it often.

Steps:
- Put sausage links in skillet with the 2 cans of diced tomatoes and about 1 c. of water, Mrs. Dash tomato and basil, sugar and black pepper. Gently simmer for about 20-30 min. till sausage is done. Add more water if needed. Once done, remove sausage. You will want a juicy sauce, so if you need to add a little water go ahead. Your pasta will soak up some of the liquid.
- Meanwhile cook pasta according to package directions until al dente, drain and place in skillet with tomatoes, add 1/4 c of butter and Asiago. Heat for a few minutes longer, stirring to mix together pasta and sauce.
- Garnish with chopped flat leaf Italian parsley.
CHICKEN SAUSAGE WITH PASTA AND TOMATO SAUCE
I found this recipe in Woman's World and made it last night. It is so fresh tasting and flavourful. It is a nice change for a pasta dish.

Steps:
- Cook pasta according to package directions adding peas during the last 5 minutes of cooking time.
- Drain pasta and reserve 1/2 cup of cooking water.
- Meanwhile, heat 1 tblsp. of oil in a large non-stick skillet over med. high heat.
- Add the sausage and cook until browned and cooked through.
- Remove sausage from the pan and reserve.
- Slice the sausage into 1/2" thick slices.
- Heat the remaining oil over medium heat in the same skillet as the sausage was removed from.
- Add onion and garlic and cook until softened, about 5 minutes.
- Stir in the next 5 ingredients.
- Cook, stirring occasionally, until tomatoes soften and start to reduce, about 8 minutes.
- Toss with pasta, sausage and cheese.
- Stir in reserved pasta water.
- Sprinkle with basil.
- Enjoy!

FETTUCCINE WITH ITALIAN SAUSAGE AND OLIVES
A pasta recipe that's on my 'to-try-in-the-immediate-future' list (and it's quite a list, trust me).

Steps:
- Bring a large saucepan of water to a boil. (If desired, add a little salt to the boiling water to season it.).
- Add the pasta and cook till just tender. Drain well.
- Cook sausages in a dry pan over medium heat, turning regularly, for at least 10 minutes, or until browned and cooked through. Drain on absorbent paper and cut sausages into 1 cm slices.
- Heat oil in a saucepot and add the mushrooms and garlic. Cook, stirring constantly, for at least 2 minutes or until the mushrooms have softened.
- Add the sliced sausage, olives, lemon rind, lemon juice, parsley and cream.
- Allow it to simmer, stirring occasionally, for about 10 minutes or until reduced by one-third.
- Add pasta and cook, stirring occasionally, for about 3 minutes or until the pasta is heated through.

FETTUCCINE WITH CREAMY TOMATO AND SAUSAGE SAUCE

Steps:
- Heat oil in heavy large pot over medium-high heat. Add shallots and garlic and sauté until beginning to soften, about 3 minutes. Add sausages and sauté until no longer pink, breaking up with back of fork, about 5 minutes. Add cream; simmer 5 minutes. Add tomatoes with juices, sage and crushed red pepper. Simmer until sauce thickens, stirring occasionally, about 15 minutes.
- Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta, reserving 1/2 cup cooking liquid.
- Return pasta to same pot; add sauce. Toss over medium heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if mixture is dry. Season with salt and pepper. Transfer to bowl; sprinkle with cheese and serve.

ASIAGO CHICKEN PASTA WITH SUN-DRIED TOMATOES AND SPINACH

- Use sun-dried tomatoes in oil - if the sun-dried tomatoes are too big, chop them into smaller bites.
- Heat sun-dried tomatoes (cut them) in 2 tablespoons of olive oil and chopped garlic on medium heat. Add chopped chicken breast to the sun-dried tomatoes and oil - generously season the chicken in the skillet with salt and paprika. Cook chicken until it's cooked through completely.
- To the same skillet with chicken and sun-dried tomatoes, add 1 cup of half and half and 1/4 teaspoon salt - bring to boil. Add 1/2 cup of grated Asiago cheese (half of what the recipe calls for) and stir for about 30 seconds to melt the cheese. Reduce the heat from boil to medium and continue stirring to make sure all cheese melts. At this point, if the sauce is too thin, gradually add the remaining 1/2 of Asiago cheese on medium heat, constantly stirring all around the skillet.

- Add the tomatoes, sausage pieces (either cut them up or take them out of the casings and crumble into small pieces), olive oil, garlic powder, Italian seasoning, and salt & pepper to a baking dish. Toss gently to coat. Roast for 20 minutes.
- Take the sauce out of the oven and give it a good stir. Roast for an additional 15-20 minutes (or until it's fully cooked and lightly browned), watching carefully towards the end that it doesn't burn.
- Meanwhile, boil salted pot of water for the pasta, and cook it al dente according to package directions.
