I found this recipe on another recipe site. I've changed a few things to suit our tastes. This cake tastes wonderful, but if you can let it set for a day, the lemon flavor really comes out!

1 cup butter, softened
2 1/2 cups sugar (divided)
4 large eggs, room temperature
1/3 cup grated lemon zest
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup plus 3 1/2 tablespoons fresh lemon juice (divided)
3/4 cup buttermilk
1 teaspoon vanilla
2 cups powdered sugar

Steps:

  • Heat oven to 350 degrees. Grease and flour a large bundt pan.
  • In a large mixing bowl, cream butter and 2 cups of the sugar until light and fluffy. about 5 minutes.
  • Add the eggs one at a time.
  • Stir in the lemon zest.
  • Sift the flour, baking powder, baking soda and salt in a small bowl.
  • In another bowl, combine 1/4 cup of the lemon juice, buttermilk and vanilla.
  • Add flour and buttermilk mixtures alternately to the butter and sugar mixture.
  • Pour batter into prepared bundt pan.
  • Bake for 50 minutes or until cake tests done with a toothpick.
  • Combine 1/2 cup of the sugar with 1/2 cup of the lemon juice in a small saucepan and cook over low heat until the sugar dissolves.
  • When cake is done, let cool for 10 minutes and remove from the pan.
  • Poke holes in the cake with a large fork, and pour the lemon syrup over the top. Let cool completely.
  • For the glaze, combine the powered sugar and remaining lemon juice, about 3 1/2 tablespoons. Pour over the top of the cooled cake and allow to drizzle down the sides.

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-inch loaf pan. Dust with sugar, and tap out excess; set aside. Whisk together flour, salt, and baking soda. Stir together 1 tablespoon lemon juice and the milk.

Steps:

  • Preheat the oven to 180°C/350°F.
  • In the bowl of a stand mixer fitted with a paddle attachment, mix the dry ingredients together.
  • Add the room temperature butter and oil then beat until the mixture is well combined and starts clumping together. You want the butter to be dispersed with no lumps remaining in the flour.
  • Whisk the eggs, coconut milk, lemon juice and zest together.
  • Pour the wet ingredients into the batter while mixing on a low speed. Beat until just combined.
  • Pour the batter into a greased and lined loaf pan (the one I used was 9"x 5" or 22cm x 12cm).
  • Place in the oven and bake for 45-60 minutes or golden brown and a skewer inserted comes out clean.
  • Remove from the oven and allow to cool for 20 minutes in the pan before turning out and cooling completely.
  • Whisk the lemon juice, coconut milk and icing sugar together then drizzle over the cake.
  • Decorate with strawberries and coconut flakes (optional) and serve.

3 large eggs, at room temperature

Steps:

  • 1. Preheat oven to 325f. Spray either bundt pan or 3 8-in loaf pans.
  • 2. In mixing bowl cream soften butter and sugar. Add flour alternately with eggs. Add salt & baking soda. Pour in milk. Add in lemon juice. Fold in coconut.
  • 3. Bundt pan: bake 1hr 15 and loaf pans 1 hr. Check loaf pans after 45 min.

Steps:

  • Grease then flour or use Wilton cake release in a 10-inch tube pan or bundt pan.

1 cup Crisco

3 teaspoons coconut flavoring
1 cup buttermilk
3 cups cake flour

2 tablespoons white Karo
1 teaspoon coconut flavoring
3 tablespoons butter

Steps:

  • Preheat oven to 325°F.
  • Cream sugar and Crisco.
  • Add eggs, 1 at a time, beating well after each.
  • Add Flavoring.
  • Sift dry ingredients together and add alternating with the milk--begin and end with the flour.
  • Bake in greased and floured tube pan for 1 hour and 20 minutes. You might want to start checking on this after 1 hour - sometimes my cake is finished about then.
  • When cake is almost finished, start making the glaze.
  • To make the Glaze: Put all ingredients for the glaze in pot and cook over medium heat.
  • Let mixture boil for 5 minutes. It will bubble so you will need to watch it carefully so it won't boil over onto your stove - trust me, you don't want that to happen.
  • When removed from the oven, pour glaze over the cake while it is still in the pan and let sit at least 8 hours or overnight.
  • To remove from the pan, place the cake in the oven at 250°F for 5 minutes or long enough to loosen to the sugar glaze surrounding the cake.
  • The cake should slide out of the tube pan easily - if it does not, put it back into the oven for a few more minutes and then try again.

3 cups organic granulated sugar
6 Horizon Organic Large Eggs, at room temp
3 cups organic all-purpose flour
1 cup Horizon Organic Whole Milk
1 teaspoon salt
2 teaspoons vanilla extract
1 teaspoon almond extract (may be omitted and use 3 teaspoons vanilla extract instead)
1 cup confectioners' sugar
1 tablespoon Horizon Organic Whole Milk, or as needed for consistency

Steps:

  • Preheat oven to 325F and spray a 12-cup Bundt pan plus 1 mini loaf pan (for the excess batter) OR a 10-inch tube pan very well with floured cooking spray, or grease and flour the pan; set aside.
  • To the bowl of a stand mixer fitted with the paddle attachment (or handheld electric mixer), add the butter and cream on medium-high speed until fluffy, about 2 minutes.
  • Add the sugar and and beat until smooth and incorporated, about 2 minutes.
  • Add the eggs, one at a time, beating well after each addition. Stop to scrape down the sides of the bowl as necessary.
  • Add the flour and milk, alternately, while beating on medium-low speed to incorporate; don't overmix.
  • Add the salt, extracts, and beat until just combined.
  • Turn batter out into prepared pans, smoothing the tops lightly with a spatula.
  • Bake for about 1 hour 15 minutes (and I baked my mini loaf for 47 minutes). Start checking at 1 hour and bake until done, whatever that means in your oven and with your pans, until a toothpick comes out clean or with a few moist crumbs but no batter. Do not overbake.
  • Allow cake to cool in pan for about 30 minutes before inverting it onto a serving platter to cool completely.
  • To a small bowl, add the confectioners' sugar, milk, and whisk to combine.
  • Evenly drizzle the glaze down the sides of the cake before serving.
