Til ke aloois another of those easy, delicious dishes you might enjoy with both Indian meals and simple dinners of roasted and grilled meats. You can use leftover potatoes or cook them fresh; just be sure they're completely cool before you start. This recipe is courtesy of Madhur Jaffrey.

Steps:
- Place potatoes in a large pot; cover with water by 2 inches and bring to a boil. Reduce toa low boil and cook until just tender when pierced with a knife, 15 to 20 minutes. Drain and let cool completely, 2 to 4 hours. Peel and cut into 3/4-inch cubes.
- Heat oil in a large, heavy skillet (preferably cast iron or nonstick) over medium until shimmering. Add cumin, mustard, and sesame seeds; as soon as they begin to pop -- a matter of seconds -- add potatoes. Cook, stirring occasionally, 5 minutes.
- Add 2 teaspoons salt, cayenne, and lemon juice. Cook, stirring occasionally, until potatoes are golden brown in spots and heated through, 20 to 30 minutes more. Serve warm, or store in an airtight container in refrigerator up to 2 days.

- Boil the potatoes in salted water. Pour out the water and let the potatoes cool. Peel and cube the potatoes. Heat oil in a pan.

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add potatoes, cover, and steam until easily pierced with a knife, 30 to 35 minutes. Drain and cool until easily handled, about 15 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Peel and dice potatoes into 1-inch cubes. Spread on baking sheet.
- Bake in the preheated oven until lightly golden, 15 to 20 minutes.
- Grind garlic, black pepper, basil leaves, and cumin seeds into a paste with a mortar and pestle.

- Light a lidded barbecue. Let the flames die down and the coals turn ashen, then mound the coal up on one side or heat an oven to 180C/160C fan/gas 4. Arrange the sweet potatoes on a large tray and drizzle with 1 tbsp of the vegetable oil, season and toss. Cook on the barbecue or in the oven for 25 mins until charred and softened.
- Meanwhile, whisk the remaining oils, ginger, garlic, soy and lime juice. Baste the potatoes with some of the sauce and return to the barbecue for another 30-40 mins, basting as they cook. Once the potatoes are glazed and sticky, remove and sprinkle on the sesame seeds and peanuts, and leave to cool slightly. Remove the wedges from the tray and pop into a salad bowl. - Preheat the oven to 375 degrees. Toss the sweet potatoes with the vegetable oil, chili powder, cayenne, and salt and pepper. Place on a baking sheet and roast for 20 minutes, stirring gently every 5-10 minutes.

- Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.
- Place the potato wedges in a plastic bag, or bowl with a lid. Add oil, and toss to coat. Season the potatoes with seasoning salt, paprika, chili powder, and pepper, and add the sesame seeds. Replace lid or close bag, and shake to coat evenly. Spread the potato wedges out in a single layer onto the prepared baking sheet.

EASY SESAME POTATO SIDE DISH
Steps:
- Washing the potatoes and removing any dirt and potato eyes.
- Put the potatoes in a pressure cooker and allow them to boil for about 5 mins after the first whistle (when the pressure is released). (3 to 5 minutes after reaching full pressure in an Instant pot.)
- After cooking, allow the potatoes to cool.
- Once the potatoes have cooled, cut them into circular half-inch thick circular slices and place them into a frying pan with oil.

- Heat the oven to 200C/180C/gas 6. Put the oil and sweet potatoes on a baking tray and toss with seasoning. Roast for 15-20 mins. Add the cherry tomatoes and broccoli, then toss with the sweet potatoes. Roast for 15 mins more until the tomatoes are close to bursting.

- Rinse off the potatoes, pierce the skin of each potato in a couple of places, and cook them on high in the microwave until tender.
- Remove the potatoes from the microwave and let them cool for 30 minutes (or for several hours if you are not in a rush to use them).
- When you are ready to make the potato curry, peel the potatoes and roughly dice them. Set aside.
- In a large nonstick frying pan put the oil, sesame seeds, mustard seeds, and cumin seeds.
- Heat the oil over medium-high heat. When the mustard seeds have started popping for about 15 seconds, add the potatoes.
- Use a spatula to flip over the potatoes as they cook. Cook until you get quite a number of brown spots on the potatoes (about 8 minutes).
- Sprinkle the cayenne powder and salt on the potatoes and cook and mix another minute or two.
- The potatoes can also be steamed or boiled. Green beans can also be made this way. Optional: Add 1 teaspoons sambar powder.
- Note: (a). Instead of the 2 Table. sesame seeds, 1 teaspoons black mustard seeds and 1 teaspoons cumin seeds in the original recipe, substitute with 1 teaspoons ground cumin, 1 teaspoons ground coriander, 1/2 teaspoons garlic powder and 1/2 teaspoons turmeric. This variation can also be made into a wet curry by adding water to the frying pan after adding the potatoes. Add 1/2 cup of water at a time until you have reached the desired consistency. Additional salt and cayenne powder may have to be added. (b.) Reduce the amount of potatoes and add different vegetables such as cooked carrots, green beans and/or peas. (c.) Garam masala may also be added to any of these potato curry recipes.
