CRISPY BROWNIE BARS

Crispy Brownie Bars image

I saw this recipe on the Betty Crocker Website. These look so delicious! In the original recipe, it has 3/4 cup chopped peanuts that you add to the top of the frosting layer, but I despise nuts and so these are optional if you like them! I am not including the chill times, just in preparing in each step.

Provided by LDSMom128

Categories     Bar Cookie

Time 1h10m

Yield 24 Bars

Number Of Ingredients 8

24 ounces betty crocker Original Supreme brownie mix
1/2 cup oil
1/3 cup water
3 eggs
1 lb vanilla frosting
3 cups crisp rice cereal
1 cup creamy peanut butter
1 (12 ounce) bag semi-sweet chocolate chips (2)

Steps:

  • Make the brownies by combining the brownie mix, oil, water, and eggs. Stir well. Pour the batter into a large baking dish and bake at 375 degrees for about 18-20 minutes and they are cooked through.
  • Cool completely for about an hour. Frost the brownies and refrigerate for about 20 minutes.
  • While the brownies are chilling again, melt the peanut butter and the chocolate chips in a large pan on the stove. Add the crispy rice cereal and stir well. Remove the brownies from the refrigerator and pour the cereal mixture on top of the frosting, smoothing out the top. Allow to cool completely until set, for about 25 minutes or until ready to serve.

BETTY'S CRUNCHY BROWNIE BARS

Betty's Crunchy Brownie Bars image

A goodie Betty shared with the group at our annual rughooking retreat. Recipe originally came from the back of a Duncan Hines brownie box, but she decided she liked a Betty Crocker boxed brownie mix better. Cook time does not include time to cool. I thought the oatmeal layer might detract from the brownie, but it was a wonderful compliment.

Provided by SharleneW

Categories     Bar Cookie

Time 1h5m

Yield 24 large brownies

Number Of Ingredients 15

3/4 cup flour, sifted
1/4 teaspoon baking soda
1/4 teaspoon salt

3 tablespoons butter or 3 tablespoons margarine
2 1/4 cups confectioners' sugar, sift if lumpy
1 1/2 teaspoons vanilla
3 tablespoons hot water

Steps:

  • Add the 3/4 cups melted butter and pat mixture in bottom of an ungreased 13 x 9-inch baking pan.

  • Spread batter in pan over crunchy layer.
  • Return to oven and bake for approximately 25-30 minutes until done (do not over bake).

FIBER ONE CRUNCHY FUDGE COOKIES

Fiber One Crunchy Fudge Cookies image

These taste like little crunchy brownie bites!! I made this exactly as the recipe stated, but I realized I had a box of brownie mix that was a couple ounces bigger than the recipe called for. I added another 1/3 cup water to compensate as the mix was pretty dry. I also baked them the full 12 minutes, which was fine for my oven. BROWNIE COOKIES

Brownie Cookies image

These are extra rich, extra fudge-like, and extra chewy brownie cookies. For best results, use good chocolate and follow this recipe closely.

Provided by Sally

Categories     Cookies

Time 50m

Number Of Ingredients 12

2 four ounce bars (226g) semi-sweet chocolate, coarsely chopped
3/4 cup (94g) all-purpose flour (spoon & leveled)
1/4 cup (21g) natural unsweetened or dutch-process cocoa powder
1 teaspoon espresso powder
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup (5 Tablespoons; 72g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light brown sugar
1/4 cup (50g) granulated sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
optional: 3/4 cup (135g) semi-sweet chocolate chips

Steps:

  • Melt the chocolate in a double boiler or use the microwave. Microwave in 20 second increments, stirring after each until completely melted. Set aside to slightly cool (so it doesn't melt the butter or cook the eggs).
  • Whisk the flour, cocoa powder, espresso powder, baking powder, and salt together. Set aside.
  • In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar together on medium-high speed until smooth and creamy, about 2 minutes. Add the eggs and vanilla extract, and beat on high speed for 2 full minutes. Scrape down the sides and up the bottom of the bowl, then beat on high for 1 more minute. Pour in the slightly cooled melted chocolate and mix on medium-high speed for 2 full minutes.
  • Pour in the the dry ingredients and beat on low speed until combined. Finally, beat in the chocolate chips.
  • Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats. As the oven preheats, continue to step 6.
  • Cover and chill the dough in the refrigerator for just 20 minutes as the oven preheats. This quick chill time helps slightly solidify the chocolate and butter in the dough, which gives the cookies a nice spread (not over-spread). Chilling for longer creates thicker cookies where, in some cases, they may not spread at all. If chilling for longer than 20 minutes, allow the dough to sit at room temperature for 15 minutes before rolling and baking.
  • Roll or scoop the dough into balls, 1.5 Tablespoons of dough each. I recommend a medium cookie scoop. Place 3 inches apart on the baking sheets and bake for 12-13 minutes or until the edges appear set. (The centers will be quite soft, but will set up as the cookies cool.)
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Cookies stay fresh covered at room temperature for up to 1 week.

This recipe came from an old friend. I lost it, then found it again many years later. It is an extremely rich desert, but it is so amazing. Unless you are sharing this with a lot of people, I would suggest using a small pan, because you need to just eat a little bit to be on a sugar high!

  • Preheat the oven to 325 degrees. Line a large baking sheet, 18x13 inches, with parchment paper. In a mixing bowl, whisk the egg white until it is frothy, about 1 minute. (I used the whisk attachment on my stand mixer, although this could certainly be done by hand.) Add the sugar, and whisk again until combined. Add the oil, water, and vanilla and which until smooth again.
  • Add the cocoa, flour, starches, baking soda, and salt, and whisk once more until smooth and shiny. The batter should be pourable and similar to cake batter. Scrape it onto the parchment lined baking sheet and use a spatula to spread it close to the sides of the pan. It should be very thin and as even as possible. Sprinkle the chocolate chips across top of the batter.
  • Bake for 15 minutes, remove from the oven and slice (or score) into desired sizes. Return the pan to the oven and bake an additional 10 minutes. Remove from the oven and let cool completely before breaking the brownie crisps along the scored lines. Enjoy!
