1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Heat oven to 400°F.
  • Mix meat, stuffing mix, eggs, onions and water just until blended. Shape into 32 meatballs, each about 1 inch in diameter. Place in 2 foil-lined 13x9-inch pans sprayed with cooking spray.
  • Bake 20 min. or until done (160ºF).
  • Mix gravy and sour cream in large saucepan. Add meatballs; stir to evenly coat. Cook on low heat 5 min. or until sauce is heated through, stirring occasionally.

1/2 cup milk
1 egg, beaten
1/2 tsp. ground nutmeg, divided
2 Tbsp. butter or margarine
1 Tbsp. flour
1 cup fat-free reduced-sodium beef broth
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
3 cups hot cooked long-grain white rice

Steps:

  • Mix meat, stuffing mix, milk, egg and 1/4 tsp. nutmeg just until blended; shape into 1-inch meatballs.
  • Melt butter in large skillet on medium heat. Add meatballs; cook 10 to 12 min. or until done, turning occasionally. Remove meatballs from skillet, reserving drippings in skillet; cover meatballs to keep warm.
  • Add flour to reserved drippings in skillet; stir until blended. Cook 1 min., stirring constantly to scrape browned bits from bottom of skillet Stir in broth; bring to boil. Simmer on medium-low heat 3 min. or until thickened, stirring constantly. Stir in sour cream and remaining nutmeg. Return meatballs to skillet; simmer 3 to 5 min. or until meatballs and sauce are heated through, stirring occasionally.

1 package (16 ounces) egg noodles
1/4 cup butter, cubed

  • In a large bowl, combine the first 6 ingredients. Add beef; mix lightly but thoroughly. Shape into 1-1/2-in. meatballs (about 36). In a large skillet over medium heat, brown meatballs in batches. Using a slotted spoon, remove to paper towels to drain, reserving drippings in pan., For gravy, stir flour into drippings; cook over medium-high heat until light brown (do not burn). Gradually whisk in milk until smooth. Stir in the consomme, Worcestershire sauce, pepper and salt. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened., Reduce heat to medium-low; return meatballs to pan. The dish has been a main attraction at Ikea Restaurants since an in-store chef developed the recipe in Switzerland in 1985. Although Ikea's Real Swedish Food Book, published in 2000, included a meatball recipe, reps confirmed that it is not the one served at their restaurants. Ikea is keeping that baby a secret, so chefs in Food Network Kitchens hit a nearby store for a tasting, then created this spot-on copy.

Steps:

  • Make the meatballs: Put the breadcrumbs in a large bowl. Heat the butter in a skillet over medium heat. 1 (6 ounce) box Stove Top stuffing mix (we use Roasted Garlic)
2 eggs, beaten

  • Preheat oven to 400 degrees.

¼ cup milk
1 pound ground beef
¼ cup dry cream of wheat cereal
¼ cup minced onion
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (12 fluid ounce) can evaporated milk
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.

⅓ cup dry bread crumbs
2 tablespoons heavy cream
1 teaspoon heavy cream
1 large egg
1 large clove garlic, minced
¼ teaspoon salt

¼ teaspoon ground allspice
1 pound ground beef
½ pound ground pork
½ medium onion, minced
2 tablespoons finely chopped fresh parsley
1 tablespoon salted butter
2 teaspoons olive oil
⅓ cup salted butter
¼ cup all-purpose flour
1 cup vegetable broth
1 cup beef broth
1 cup heavy cream
2 teaspoons soy sauce
1 teaspoon Dijon mustard
salt and ground black pepper to taste

Steps:

  • Mix milk, bread crumbs, 2 tablespoons plus 1 teaspoon cream, egg, garlic, salt, black pepper, white pepper, and allspice together in a large bowl. Set aside to soak until bread crumbs have absorbed the milk, at least 10 minutes.
  • Mix in beef, pork, onion, and parsley, using your hands to mix until well combined. Roll into about 24 small meatballs or 16 larger meatballs.
  • Heat butter and oil in a pan over medium-high heat. Fry meatballs in small batches until cooked through and browned on all sides, 10 to 12 minutes. 2 tbsp rapeseed oil
1 onion , finely chopped
1 small garlic clove , finely grated
375g lean pork mince
1 medium egg yolk
grating of nutmeg
50g fine fresh breadcrumbs
300ml hot low-salt beef stock
½ tbsp Dijon mustard
2 tbsp fat-free natural yogurt
400g spring greens , shredded
lingonberry or cranberry sauce , to serve

Steps:

  • Put 1 tbsp rapeseed oil in a frying pan over a medium heat. Add the onion and fry for 10 mins or until soft and translucent. Add the garlic and cook for 1 min. Leave to cool.
  • Mix the cooled onions, pork mince, egg yolk, a good grating of nutmeg and the breadcrumbs in a bowl with your hands until well combined. Form into 12 balls and chill for 15 mins.
  • Heat the remaining oil in a frying pan and fry the meatballs for 5 mins over a medium heat, turning often until golden. Pour over the stock and bubble for 8-10 mins or until it has reduced a little. Stir through the mustard and yogurt.
  • Steam the greens for 5 mins or until tender. Serve the meatballs with the greens and a dollop of the sauce.

1/2 cup minced onion
1 teaspoon minced garlic
1 teaspoon parsley flakes
1 tablespoon olive oil
1 tablespoon chicken bouillon granule (or beef)
10 1/2 ounces cream of mushroom soup
4 ounces canned mushrooms, drained
8 ounces heavy whipping cream
1 teaspoon Hungarian paprika
1 cup sour cream
1 teaspoon onion powder
salt and pepper

Steps:

  • Saute onion in olive oil until softened.
  • Stir in garlic and mushrooms, cook until heated through.
  • Add the can of mushroom soup and a half can of water.
