- Preheat the oven to 400 degrees F.
- Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.
MINI CHOCOLATE CHIP MUFFINS
Steps:
- Preheat oven to 375 degrees F. Line mini muffin tins with paper cups. In a mixer with a whip attachment, mix together the peanut butter, egg, and sugars until smooth. Add milk in 3 additions, mixing well each time. Stir the flour, baking powder, and salt together and add to the peanut butter mixture. Mix on low just until the flour disappears. Stir in the chocolate chips. Spoon into muffin cups filling 3/4 full (a small ice cream scoop works well for this) and bake until puffed up and firm on top, about 10 to 15 minutes. Cool in the pan.
- Some people have allergies to peanuts, and if serving to guests, please make them aware of the inclusion of this peanut product.
MINT-CHOCOLATE CHIP CAKE

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Combine sugar, flour, cocoa, baking soda, baking powder, and salt in a medium bowl. Add eggs, milk, oil, vanilla extract, and peppermint extract; mix using an electric mixer until smooth. Whisk in boiling water. Pour batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Let cake cool 10 to 15 minutes before transferring to a wire rack to cool completely.
- While cake is cooling, combine milk and peppermint extract in a small bowl and set aside. Cream butter in a separate bowl using an electric mixer until smooth. Pour in confectioners' sugar and peppermint-milk mixture alternately while continuing to beat. Add green food coloring until frosting reaches desired color. Whip frosting on high until fluffy, 2 to 3 minutes. Divide between two bowls. Stir chocolate chips into 1/2 the frosting using a spoon. Set mint-chocolate chip frosting aside.
- Frost cooled cake with pure mint frosting without chocolate chips. Place cake in the refrigerator to set.
- Meanwhile, combine chocolate squares and butter in a double boiler; stir until thoroughly melted. Remove from heat. Stir ganache vigorously to a smooth consistency.
- Remove cake from the refrigerator. Cover entire cake with ganache; return to the refrigerator and allow to completely set, about 30 minutes.
- Remove set cake from the refrigerator. Frost sides of cake with mint chocolate chip frosting.

MEGA-CHOCOLATE CHIP MUFFINS

- Heat the oven to 400°. Spray each cup in muffin pan with the cooking spray, or put a paper baking cup in each muffin cup. Save for later (you will need the muffin pan in step 4).
- Put the margarine in the saucepan. Heat over low heat for about 1 minute, stirring a few times with the wooden spoon, until margarine is melted. Take saucepan off hot burner. (Or put margarine in the microwavable bowl. Cover bowl with waxed paper. Microwave on High 30 to 45 seconds or until margarine is melted.) Cool for 5 minutes.
- Crack the eggs on side of the small mixing bowl, letting eggs slip into bowl. Add melted margarine and milk to egg. Beat with the fork until well mixed.
- Put the flour, brown sugar, baking powder and salt in the large mixing bowl. Stir with the wooden spoon until mixed. Add the milk mixture to flour mixture. Stir just until flour is wet (the batter should still be a little lumpy; you don't want it to be smooth). Stir in the chocolate chips. Spoon batter into the sprayed muffin cups until cups are about 2/3 full.
- Bake 18 to 20 minutes or until the muffins are golden brown and the toothpick poked in center of muffin comes out clean.
- Use the pot holders to take muffin pan out of oven. Carefully tip pan on its side to take muffins out of cups, and put muffins on the wire cooling rack. Cool muffins on cooling rack 10 minutes before serving.

- In large bowl, sift together flour, baking powder and salt. Stir in cocoa, sugar and cinnamon.
- In medium bowl lightly beat the egg. Stir in the corn oil, milk and mint extract.
- Add the egg mixture to the flour mixture and stir in the chocolate chips. Stir just until the dry ingredients are moistened.
- Fill greased muffin tins.
- Bake for 18 minutes or until a tester comes out clean.

- Grease 12 (3-1/2-inch) large muffin cups; set aside.
- Combine flour, sugar, cocoa, baking powder, baking soda and salt in large bowl.
- Combine sour cream, butter, milk and eggs in small bowl until blended.
- Stir into flour mixture just until moistened.
- Fold in mint chips.
- Spoons into prepared muffin cups, filling half full.

- Preheat the oven to 400°F/200°C and line a muffin pan with 12 paper liners.
- Place the halloumi, both flours, the baking powder, nigella seeds, and mint in a large mixing bowl and add 1/4 teaspoon each of salt and white pepper.
- In a separate bowl, whisk together the eggs, oil, and yogurt, then stir them into the flour mixture until just combined. Do not overmix, or the muffins will be dense.
- Spoon the batter into the muffin liners and bake for about 20 minutes, until the tops are golden and a toothpick inserted into the center of a muffin emerges clean.
