MASHED POTATOES WITH SMOKED PAPRIKA AND CHIVES

Mashed Potatoes with Smoked Paprika and Chives image

Provided by Bobby Flay

Categories     side-dish

Time 1h30m

Yield 12 to 15 servings

Number Of Ingredients 9

1 pound butter, slightly softened
2 tablespoons smoked paprika
Kosher salt and freshly ground black pepper
6 pounds Yukon gold potatoes, peeled and cut into large dice
Kosher salt
2 cups milk
1 cup heavy cream
Small bunch chives, thinly sliced
Freshly ground black pepper

Steps:

  • For the smoked paprika butter: Combine the butter, paprika, salt and pepper in a bowl. Roll into a log, wrap in waxed paper or parchment and refrigerate until very cold.
  • For the mashed potatoes: Put the potatoes in a large pot, cover by 2 inches with cold water and add 2 tablespoons kosher salt. Bring to a boil and cook until fork-tender, about 35 minutes. Drain the potatoes, run through a food mill set over a large bowl and rice until very fine.
  • Combine the milk and heavy cream in a small saucepan and bring to a simmer over low heat.
  • Put the potatoes back in the pot, place the pot back over low heat and, using a wooden spatula, stir the potatoes to dry them out. Begin adding the cold paprika butter little by little, vigorously stirring with a wooden spoon until the butter is incorporated. (Adding the cold butter slowly will create an emulsion.) Slowly stir in the warm milk mixture bit by bit, and then switch to a whisk and whisk until light and fluffy. Fold in the chives and season with salt and pepper.

  • Meanwhile, in a bowl, whisk together the mayonnaise, vinegar, paprika, sugar and shallots.
  • When the potatoes are done roasting, toss them with half of the paprika mayonnaise (save the rest for dipping or another use). Taste and adjust the seasonings as needed. Top with chives and enjoy!

BROCCOLI RABE WITH PAPRIKA POTATOES

Broccoli Rabe with Paprika Potatoes image

Broccoli rabe pairs well with the warmth and depth of smoked paprika. Cooking the pepper in oil activates its flavor-but don't let it go too long or it will become bitter. If you have a lemon on hand, grate a little zest right into the pan before the final toss.

Provided by Food Network Kitchen

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

1 bunch broccoli rabe (12 ounces to 1 pound)
Kosher salt
12 ounces small new potatoes, skin-on, scrubbed (about 1 1/2 inches in diameter)
2 cloves garlic
3 tablespoons olive oil, plus more for finishing
2 teaspoons smoked paprika
Freshly ground black pepper

Steps:

  • Fill a 12-inch high-sided skillet with 2 inches of water, cover and bring to a boil. Trim 1/4 inch from the stem ends of the broccoli rabe (as they can be dried out) and discard.
  • Add 1 tablespoon salt and the trimmed broccoli rabe to the boiling water. Boil until the stems are tender when pierced with a knife, 4 to 5 minutes. Remove with tongs to a colander to drain. When cool enough to handle, press out as much excess water as possible from the broccoli rabe, and then chop into 1- to 2-inch pieces. Reserve 1/2 cup of the cooking water.
  • Quarter the potatoes and slice the garlic into thin slivers.
  • Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the potatoes, cut-side down, and cook until browned, about 4 minutes. Turn with tongs or a slotted spoon to the other cut side and cook until browned, 3 to 4 minutes more.
  • Lower the heat to medium, add the garlic and stir until it softens a bit, about 1 minute. Stir in the paprika until the potatoes are coated, about 30 seconds more. Season with 1/2 teaspoon salt and a few grinds of pepper. Add the reserved cooking water and bring to a gentle simmer. Cover and cook the potatoes until tender when pierced with a knife, about 5 more minutes. If there is still a lot of water in the skillet, uncover, increase the heat and reduce until only 2 to 3 tablespoons remain, enough to coat the broccoli rabe. Add the chopped broccoli rabe to the skillet and toss to coat. Drizzle with a generous amount of olive oil and serve.

Provided by Geoffrey Zakarian

Categories     side-dish

Time 1h5m

Yield 6 to 8 servings

Number Of Ingredients 16

2 pounds baby red potatoes, skin on
3 cloves garlic
Kosher salt
2 tablespoons minced fresh parsley
1 tablespoon minced fresh dill
1 tablespoon minced fresh tarragon
1 Fresno chile, seeds removed and finely chopped (about 1 tablespoon)
1 tablespoon minced fresh chives
2 tablespoons finely-minced shallot
2 tablespoons chardonnay vinegar
1 tablespoon lemon juice, plus additional to taste
1 tablespoon whole-grain mustard
1/2 teaspoon honey
1/4 teaspoon kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • For the potato salad: Place the potatoes and whole garlic cloves in a large pot and cover by 2 inches with cold water. Season the water liberally with salt. Bring the potatoes to a simmer over medium heat and cook until fork-tender, 20 to 25 minutes. Drain the potatoes and garlic in a colander. Transfer to a sheet tray or cutting board. Gently press each potato and garlic clove to smash them and set them aside in a bowl, covering the bowl with aluminum foil to keep the potatoes warm.
  • For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lemon juice, mustard, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.
  • Add the warm potatoes to the vinaigrette and toss to combine. Add the parsley, dill and tarragon to the potatoes. Toss to coat, seasoning with additional lemon juice and salt to taste. Transfer to a serving bowl and garnish with the Fresno chile and chives. Serve at room temperature or keep covered in the refrigerator overnight, tossing again before serving.

HAKE WITH PAPRIKA OIL POTATOES

Hake with paprika oil potatoes image

Let the subtle flavour and meaty texture of hake be the star of the show with just a little paprika oil to lift it. Ideal for an easy, light, romantic meal

Provided by Rosie Birkett

Categories     Dinner, Fish Course, Main course, Supper

Time 35m

Number Of Ingredients 10

200g potatoes , peeled and chopped into chunks
2 bay leaves
60ml olive oil , plus 1 tbsp
1 parsley sprig
1 red onion , finely sliced
150ml white wine , plus 1 tbsp
2 hake steaks , about 160g each
160g purple sprouting broccoli
½ lemon , juiced
1 tbsp smoked paprika

Steps:

  • Heat oven to 190C/170C fan/gas 5. Boil the potatoes in a pan of salted water with a bay leaf for about 12 mins, or until tender. Drain, reserving the cooking water.
  • Heat 1 tbsp olive oil with a bay leaf in a non-stick frying pan. Add the red onion, season with salt and pepper and fry gently. After 5 mins add a tbsp of white wine and cook for a further 10-15 mins, until softened, fragrant and starting to caramelise.
  • Season the hake steaks and rub with a little olive oil. Put them in a roasting tin and pour in the wine and 100ml of the potato water, along with the tbsp olive oil and parsley sprig. Cook for 10 mins in the oven, or until the steaks are opaque and flaking.
  • Cook the broccoli in salted water for 3-6 mins (depending on thickness) until tender. Season with lemon juice and black pepper. Pour the rest of the oil into the onion pan and gently warm it - you want it warm, but not scalding or sizzling. Stir in the smoked paprika, then turn off the heat.
  • When the fish is ready, toss the potatoes through the onions and warm oil, and divide between plates. Remove the fish from the water with a fish slice and put on the plates with the broccoli. Drizzle over the remaining paprika oil and serve.

Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 12

2 lbs new potatoes, quartered
salt
1/2 cup olive oil
6 tablespoons butter
1 onion, chopped
6 garlic cloves, minced
2 teaspoons fresh oregano leaves
2 teaspoons fresh thyme leaves
2 tablespoons paprika
1/2 teaspoon white pepper
2 tablespoons flour
1/2 cup hot chicken broth

Steps:

  • Preheat oven to 400 degrees.
  • Bring water to boil in a large saucepan and add potatoes and salt. Return to rolling boil.
  • Boil for 10 minutes, until potatoes are tender. Remove from heat, drain and set aside.
  • In a large saute pan (I used a cast iron skillet), combine olive oil and butter and melt butter over medium low heat. Do not allow butter to brown.
  • Once butter has melted, add onion and garlic. Raise heat to medium and cook until onions are soft and golden, about 7 minutes.
  • Add oregano, thyme, paprika and white pepper. Mix well and add potatoes. Mix again to coat potatoes with mixture.
  • Cook over medium heat 2 minutes, stirring often to prevent sticking and burning.
  • Meanwhile, stir flour into hot chicken broth until well dissolved. Add to potatoes and cook until sauce thickens, about 3 minutes longer. Remove from heat.
  • Transfer potatoes to ovenproof glass or ceramic baking dish (I just left them in the cast iron skillet). Bake 15 minutes.

MASHED POTATOES AND CARROTS WITH PAPRIKA AND PARSLEY

Mashed Potatoes and Carrots With Paprika and Parsley image

This recipe, based on one from Cooks Illustrated, is a nice variation on traditional mashed potatoes. (I've used lower fat ingredients to reduce the calories) The color is just incredible. And the carrots add a sweetness which particularly compliments pork. Like most mashed potato recipes, this freezes well, too.

Provided by dianegrapegrower

Categories     Mashed Potatoes

Time 1h5m

Yield 4 serving(s)

Number Of Ingredients 9

4 tablespoons unsalted butter
8 ounces carrots, peeled, cut into 1/4-inch slices
1 1/2 lbs yukon gold potatoes
1/3 cup low-sodium low-fat chicken broth
3/4 cup 2% evaporated milk
3/4 teaspoon salt
3 tablespoons fresh parsley leaves, minced
1 1/2 teaspoons paprika
salt and pepper, to taste

Steps:

  • Prepare potatoes: Peel, quarter lengthwise, and cut crosswise into 1/4-inch-thick slices; rinse well in 3 or 4 changes of cold water and drain.
  • Melt butter in large saucepan over medium heat. When foaming subsides, add carrots and cook, stirring occasionally, until butter is browned and carrots are caramelized, 10 to 12 minutes. (If after 4 minutes vegetables have not started to brown, increase heat to medium-high.).
  • Add potatoes, broth, and 3/4 teaspoon salt and stir to combine. Cook, covered, over low heat (broth should simmer gently; do not boil), stirring occasionally, until potatoes fall apart easily when poked with fork and all liquid has been absorbed, 25 to 30 minutes. (If liquid does not gently simmer after a few minutes, increase heat to medium-low.) Remove pan from heat; remove lid and allow steam to escape for 2 minutes.
  • Gently mash potatoes and root vegetables in saucepan with potato masher (do not mash vigorously). Gently fold in milk, parsley, and paprika. Season with salt and pepper to taste. Serve immediately, or freeze for future use.

ROASTED SWEET POTATOES WITH SMOKED PAPRIKA

Roasted Sweet Potatoes With Smoked Paprika image

This is a simple way to put an enormous amount of flavor on a plate, and it is particularly delicious with roast chicken - or as a side dish for slab-bacon tacos with burned scallion crema. (Drizzle a little of the crema onto the potatoes just before serving, as if to recall the aioli served with patatas bravas in Spain.) As always when using paprika, smoked or plain, if you can't recall the last time you did so, it is time for a new jar. All spices go stale. Paprika does so quickly.

Provided by Sam Sifton

Categories     vegetables, side dish

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 7

4 large sweet potatoes, peeled and cut into cubes
1 large Spanish onion, peeled and cut into cubes
2 cloves garlic, peeled and sliced
3 tablespoons olive oil
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon smoked paprika, or to taste

Steps:

  • Heat oven to 425 degrees. Combine the sweet potatoes, onion and garlic in a large bowl, and drizzle the olive oil over it, then toss to coat. Sprinkle the salt, pepper and smoked paprika over the potatoes, and toss again to coat. Tip the potatoes onto a sheet pan or into a shallow casserole, then cover it with foil.
  • Roast the potatoes in the oven, tossing occasionally, until they are soft at the center and beginning to crisp at the edges, approximately 30 to 40 minutes. Serve hot, drizzled with burned-scallion crema if you like.
