Vegan Sweet Potato Soup with Kale Pesto image

This vegan recipe has fiber, flavonoids, beta-carotene, and the anti-inflammatory compounds in ginger, turmeric, and cayenne, along with omega-3 in the walnuts, and vitamin C in the lemon juice. All this, plus kale, one of the most nutrient-dense foods on the planet! I promise, though, with all the great flavors in the pesto, you will barely know it's kale. Store any extra pesto in the refrigerator, sealed, for up to 1 week.

2 tablespoons extra-virgin olive oil
½ cup chopped celery
⅔ cup chopped onion
2 cloves garlic, minced
2 cups vegetable broth, or more to taste
¾ teaspoon ground turmeric
¾ teaspoon ground ginger
¼ teaspoon cayenne pepper
¼ teaspoon ground cumin
salt and ground black pepper to taste
2 cups cooked and mashed sweet potatoes
1 cup canned unsweetened coconut milk
1 cup kale, stemmed and chopped
½ cup English walnuts, coarsely chopped
¼ cup nutritional yeast
½ lemon, juiced, or more to taste
1 clove garlic
salt and ground black pepper to taste
5 tablespoons extra-virgin olive oil, or more to taste

Steps:

  • Heat olive oil in a large saucepan over medium heat until shimmering. Add celery and onion; cook and stir until the vegetables soften, 3 to 4 minutes. Stir in garlic and cook until fragrant, about 1 minute. Mix in broth, turmeric, ginger, cayenne, cumin, salt, and pepper. Bring to a boil.
  • Pour carefully into a high-speed blender, cover with a lid, and puree on high speed for 1 minute. Add mashed sweet potato and coconut milk; puree until soup has a creamy consistency, about 4 minutes. Add more broth or water if soup is too thick. Cover and keep warm.
  • Combine kale, walnuts, nutritional yeast, lemon juice, garlic, salt, and pepper in a blender or food processor. Process or blend at high speed into a paste, stopping to scrape down the sides of the bowl with a spatula as needed, about 3 minutes. Pour in olive oil, one tablespoon at a time, blending after each addition. Add more oil or lemon juice if pesto seems too thick.
  • Ladle the warm soup into bowls and spoon some pesto on top of each serving.

This kale pesto recipe is made with Omega 3-rich hemp seeds and flaxseed oil. Ready in under 10 minutes! For a more pantry-friendly option, use walnuts/pecans instead of hemp seeds and/or olive oil for the flaxseed oil (it's just as tasty). Recipe yields about 1 1/4 cups pesto.

2 to 3 cloves garlic
3 cups packed kale (about 1 small bunch)
3/4 cup hemp seeds or toasted walnuts or pecans
2 tablespoons lemon juice (about 1 lemon)
3/4 teaspoon fine-grain sea salt
1/4 teaspoon ground pepper
Red pepper flakes, optional (if you want to add some kick)
1/4 cup flaxseed oil or extra-virgin olive oil (more if desired)
Entirely optional: 1/3 cup grated Parmesan cheese
1 pound (16 ounces) whole grain pasta, like linguine
1 cup reserved pasta water

Steps:

  • Make the pesto: In a food processor, add the peeled garlic cloves and process until the garlic is minced. Add the kale, hemp seeds, lemon juice, salt and pepper. Turn on the food processor and drizzle in the oil. Process until the pesto reaches your desired consistency, stopping to scrape down the sides as necessary. Taste and add more lemon, salt or pepper if necessary. (You can thin out the pesto with more oil, but if you're serving with pasta, keep in mind that you can also thin it out with reserved pasta cooking water.)
  • Cook the pasta (optional): Bring a large pot of salted water to boil. Add the pasta and cook until al dente, according to package directions. Reserve one cup cooking liquid before draining the pasta. Let the pasta and pasta water cool for a minute to make sure the high heat doesn't damage the flax oil pesto.
  • If you intend to have leftovers, transfer the amount of pasta you think you'll be eating immediately to a serving bowl and mix in pesto with splashes of cooking water. Otherwise, you can mix the pasta and pesto together in your cooking pot, adding splashes of cooking water as necessary. Keep in mind that you have diluted the flavor a bit with the cooking water, so taste and add more lemon, salt or a drizzle of olive oil as necessary.

3 cups chopped kale

1/2 cup grated parmesan cheese
1/2 cup extra-virgin olive oil

Steps:

  • Toast the walnuts in a dry skillet until lightly browned; let cool. Pulse in a food processor until finely ground.
  • Add the kale and 1/4 teaspoon salt and pulse until finely chopped.
  • Add the parmesan and pulse to combine.
  • Slowly pour in the olive oil, pulsing to incorporate. Transfer the pesto to a bowl. You'll have about 1 cup pesto; use about 1/2 cup for 1 pound pasta.

3 garlic cloves
75ml extra-virgin olive oil , plus extra to serve
75ml olive oil
85g kale
juice 1 lemon
spaghetti or linguine, to serve

Steps:

  • Put the pine nuts, Parmesan, garlic, oils, kale and lemon juice in a food processor and whizz to a paste. Season to taste. Stir through hot pasta to serve, topping with extra Parmesan and olive oil, if you like.
  • To store, put in a container or jar, cover the surface with a little more olive oil and keep in the fridge for a week, or freeze for up to a month.
