1 (18.25-ounce) box yellow cake mix (recommended: Betty Crocker)
8 tablespoons butter, room temperature
1 egg
2 cups leftover sweet potatoes (or 1 (15-ounce) can) (recommended: Princella)
1 (8-ounce) package cream cheese, softened
1 egg
1/2 cup sugar
1 1/2 teaspoons pumpkin pie spice
1 cup oats
1/4 cup all-purpose flour
2 tablespoons honey
1/2 cup white chocolate chips
1/4 teaspoon pumpkin pie spice
1/2 cup crushed mixed nuts
3 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 by 13-inch baking pan with cooking spray; set aside.
  • Beat cake mix, butter, and egg in a large bowl with an electric mixer on low speed. Beat into well combined crumbs. Press cake mixture evenly into prepared pan, set aside.
  • Blend all potato filling ingredients in food processor until smooth. Spread evenly over crust layer.
  • Combine all topping ingredients in small bowl. Sprinkle over and press into sweet potato filling. Bake in preheated oven for 30 to 35 minutes, until just set and tester inserted comes out clean.

CRUNCHY POTATO SQUARES WITH HERBY SALT

1 ¼kg potato , peeled and cut into 2.5cm cubes
3 tbsp vegetable, sunflower or rapeseed oil
1 tbsp fine polenta or cornmeal
6 rosemary sprigs
6 thyme sprigs
3 sage leaves
3 tbsp coarse sea salt

Steps:

  • To make the herby salt, put all the ingredients in a small food processor (or use a pestle and mortar) and grind to a fine salt.
  • Tip the potatoes into a large roasting tin and toss with the oil, polenta, 2 tbsp of the herby salt and some black pepper. Any leftover salt will keep for up to 5 days in a small sealed container.
  • Bake underneath a joint of meat, if cooking, at 200C/180C fan/gas 6 for 30 mins. When the meat comes out, turn up the heat to 220C/200C fan/gas 7 and cook on the top shelf for another 45 mins, shaking the tin halfway through the cooking time.

These Sweet Potato Pie Bars are Gluten-Free, Vegan, and made with only 9 healthy ingredients! Perfectly spiced, Refined Sugar-Free, and Oil-Free.

2 tablespoons ground flax + 5 tablespoons filtered water
1 cup (105 g) pecans
1 cup (92 g) rolled oats, gluten-free if necessary
1/2 teaspoon salt
4 cups (580 g) sweet potato, peeled & diced (about 2 medium)
1/2 cup (120 mL) unsweetened non-dairy milk (I used Soy)
1/2 cup (120 mL) grade A maple syrup
3 tablespoons arrowroot powder*
1 tablespoon pumpkin pie spice
1 teaspoon vanilla extract
pinch of salt

Steps:

  • Preheat the oven to 350F and grease or line a 9×9″ baking pan. Mix the flax and water together in a small bowl and set aside for 5 minutes, to let thicken.
  • Add the diced sweet potatoes to a vegetable steamer or a pot + colander combination with 3″ of water. Cover and steam for 15 minutes, or until fork tender.
  • In the meantime, prepare the base layer for the bars. Add the pecans, oats, and salt to a food processor with an S-blade attached. Process until a fine crumble forms. Add the flax egg to the mixture and pulse until well-combined. A sticky "dough" should form. Press the dough into the baking dish; I like to use a spatula to make sure it is really packed down and even. Quickly rinse out the food processor, then return it to its base.
  • Add the steamed sweet potato to the container with the milk, maple syrup, arrowroot powder, pumpkin pie spice, vanilla, and salt.Process for at least 60 seconds, or until the mixture is thick and smooth. Spread this mixture over top of the crust, using a spatula again to smooth out the top.
  • Bake on the middle rack of the oven for 30 to 35 minutes. Let the bars cool for at least 30 minutes before removing from the pan and slicing. Top as desired (I like to serve mine with some coco whip and a pecan). Leftovers will keep in an airtight container in the refrigerator for up to one week.

1 cup heavy cream
Coarse salt and freshly ground black pepper
3 pounds russet potatoes (three 1-pound potatoes if possible)
5 tablespoons unsalted butter, 1 tablespoon softened and 4 tablespoons cut into 1/2-inch cubes
Canola oil
2 fresh thyme sprigs
2 cloves garlic, skin-on, lightly crushed
Minced fresh chives

Steps:

  • Preheat oven to 350 degrees.
  • Pour cream into a large bowl; season with 1 teaspoon salt and 1/2 teaspoon pepper. Peel potatoes. Trim all sides of one potato to make a rectangular shape. Set a mandoline over bowl of cream and, starting with the flat side of the potato, slice potato lengthwise into very thin slices (alternatively, if you cannot set your mandoline over bowl, slice potatoes, adding slices to cream as you work). Toss potato slices in cream occasionally to keep them from oxidizing. Repeat process with remaining potatoes.
  • Brush a 10-by-5-by-2 3/4-inch-high baking pan with half of the softened butter. Line pan with parchment paper, leaving a 5-inch overhang on all sides. Brush parchment paper with remaining softened butter and sprinkle with salt and pepper.
  • Trim slices to form an even layer in the bottom of the pan; repeat process to form a second layer. Dot with a few cubes of butter; season with salt and pepper. Continue layering potatoes and adding butter and seasoning after every two layers until pan is filled. Fold sides of parchment paper over potatoes. Cover pan tightly with aluminum foil and transfer to oven.
  • Bake until potatoes are completely tender when pierced with the tip of a sharp knife, about 1 hour and 50 minutes. Remove from oven and let cool for 15 minutes. Cut a piece of cardboard slightly smaller than the size of pan; wrap with aluminum foil. Place foil-wrapped cardboard on top of potatoes and weight down with heavy cans; let potatoes cool to room temperature. Remove weights and tightly wrap pan. Refrigerate potatoes at least 6 hours or up to 2 days.
  • To serve, run an offset spatula between the parchment paper and pan to release. Using the parchment paper overhang, carefully lift pave out of pan or invert onto a cutting board. Trim sides of pave and cut into 12 equal pieces; let stand at room temperature for 30 minutes.
  • Heat a large skillet over medium-high heat; add enough canola oil to coat. When oil is hot, add potatoes, cut-side-down, along with thyme and garlic. Cook, basting with oil, until browned on first side. Carefully turn and brown on opposite side.
  • Transfer potatoes to a serving platter and arrange browned side up. Place a small piece of butter on each and sprinkle with chives. Serve.

3 cups peeled and 1/2-inch-diced boiling potatoes (4 potatoes)
12 extra-large eggs
22 ounces ricotta cheese
1 pound 2 ounces Gruyere cheese, grated
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/4 cups chopped fresh basil leaves
1/2 cup all-purpose flour
1 teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 12-by-18-by-1 1/2-inch half sheet pan.
  • Melt 4 tablespoons of the butter in a 12-inch saute pan over medium-low heat. Add the potatoes and fry them until cooked through, turning often, 10 to 15 minutes. Melt the remaining 8 tablespoons of butter in a small saute pan and set aside.
  • Meanwhile, whisk the eggs in a large bowl, then stir in the ricotta, Gruyere, melted butter, salt, pepper, and basil. Sprinkle on the flour and baking powder and stir into the egg mixture.
  • Distribute the potatoes over the bottom of the sheet pan. Pour the egg mixture over the potatoes and spread evenly. Bake the frittata until it is browned and puffed, 30 to 35 minutes. Allow the frittata to cool and cut into 20 single-serving squares.

1/4 cup cooking oil (I use Canola)
6 medium potatoes, pared and shredded
1 large onion, grated
2 eggs, separated
2 tablespoons all-purpose flour
2 teaspoons salt
1/4 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 425 degrees.
  • Pour 3 T. oil into an 8 inch square pan and heat in preheated oven while preparing potatoes.
  • Drain potatoes and onions thoroughly and pat dry with paper towels, if necessary.
  • Mix potatoes and onion with egg yolks, flour, salt and pepper.
  • Beat egg whites until stiff but still moist peaks form; gently fold into potato mixture.
  • Remove pan from oven and spoon in potatoes; smooth top and drizzle with remaining tablespoon of oil on top.
  • Bake in oven for 45 to 60 minutes or until tender and crusty.
  • Serve hot.

6 tablespoons coconut oil, plus more for your hands
1 10-ounce bag marshmallows
1 teaspoon pure vanilla extract
1 7-ounce bag rippled potato chips, lightly crushed (about 5 cups)
3 cups sweetened cereal
3/4 cup freeze-dried strawberries, finely crushed

Steps:

  • Line a 9-inch square baking dish with foil, leaving a 2-inch overhang on two sides; coat with cooking spray. Melt the coconut oil in a large wide pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted, about 4 minutes. Stir in the vanilla.
  • Add the potato chips, cereal and freeze-dried strawberries to the pot and stir to coat. Spread the mixture in the prepared pan and press firmly and evenly with oiled hands. Let cool completely, at least 1 hour.
  • Lift the bars out of the pan using the foil overhang; discard the foil. Cut into squares.

  • Bake for about 45 minutes.
  • Remove from oven and sprinkle the remaining cheese on top and return to oven, bake for an additional 25-30 minutes.
  • Cut into squares and serve hot.
