We're drunk in love with this quick and easy dish! Buttery, wine-soaked pasta topped with crunchy garlic breadcrumbs is the pasta party dreams are made of.

1 tablespoon olive oil
½ cup panko breadcrumbs
1 clove garlic, grated
½ bunch fresh parsley, chopped
½ lemon zest
¼ teaspoon kosher salt
1 pinch kosher salt, plus more for cooking pasta
½ lb spaghetti
2 tablespoons extra virgin olive oil
3 cloves garlic, chopped
¼ teaspoon red pepper flakes
6 tablespoons unsalted butter, divided
1 ¼ cups red wine, such as cabernet sauvignon
freshly ground black pepper, to taste

Steps:

  • Bring a large pot of heavily salted water to a boil.
  • Make the bread crumb gremolata: Heat the olive oil in a small pan over medium heat. Add the bread crumbs and garlic and cook, stirring frequently, until the bread crumbs are golden brown, 2-4 minutes. Transfer the bread crumbs to a heatproof bowl.
  • Add the parsley, lemon zest, and salt and stir to combine. Set aside.
  • Make the drunken bucatini: Once the water is boiling, add the bucatini and cook until just shy of al dente, 6-7 minutes. Reserve ½ cup (240 ml) pasta cooking water, then drain.
  • While pasta is cooking, heat a large, high-walled skillet over medium heat. When the pan is hot, add the olive oil, garlic, and red pepper flakes. Cook, stirring constantly, for about 30 seconds, until fragrant. Melt 1 tablespoon of butter in the pan and continue to stir for about 1 minute more, until the garlic starts to brown.
  • Add the red wine to the pan and cook until reduced by about 25%, 2-3 minutes.
  • Add the drained bucatini to the pan and toss gently with tongs. The wine will reduce more as the noodles cook through and soak up the wine, 2-3 minutes.
  • Add the remaining 5 tablespoons of butter, the salt, and pepper. Toss until the butter is melted and the pasta is silky, about 2 minutes.
  • Divide the pasta between 2 bowls and top with the bread crumb gremolata. Serve immediately.

My favorite Thai dish is EASY, fast, and fiery Drunken Noodles, a delicious recipe that's ready in 30 minutes!

8 oz wide rice noodles
2 Tbsp sesame oil ((or canola))
2 shallots (, chopped)
2 carrots (, thinly sliced)
1 large chicken breast (, chopped (or shrimp or tofu))
3 large cloves of garlic (, minced)
½ teaspoon fresh minced ginger
1 zucchini (, thinly sliced)
1 green bell pepper (, thinly sliced)
2 green onions (, chopped)
1 roma tomatoes (, sliced)
1 cup fresh Thai Holy Basil leaves (or substitute regular basil) (, roughly chopped)
3 Tbsp oyster sauce
1/3 cup low sodium soy sauce
2 teaspoons fish sauce
2 teaspoons brown sugar
2 Tbsp water
1 teaspoon Thai red chili paste (, more or less, to taste (or substitute sriracha or crushed red pepper flakes))

Steps:

  • Cook noodles according to package instructions.
  • Mix sauce in a small bowl and set aside.
  • Heat 1 tablespoon of oil in wok or large skillet over high heat. Add shallots and carrot and cook for 2 minutes. Add another tablespoon of oil to the pan. Add chicken and season with pepper. Add garlic and ginger and cook for 10 seconds. Add bell pepper, zucchini, tomato and the whites of the chopped green onion and cook for 2 minutes.
  • Add noodles to the pan and pour the sauce over the noodles. Toss and cook for a few minutes until warmed through. Remove from heat and stir in chopped basil.
  • Serve immediately, garnished with remaining green onion and extra chili sauce, sriracha, or crushed red pepper, for added spice.

1 lb thick spaghetti or 1 lb linguine
2 large garlic cloves or 4 small garlic cloves, peeled and sliced thin
2 tablespoons butter
1/2 cup extra virgin olive oil
dried red pepper flakes, to taste (optional)
1/2 cup red wine
1/4 cup chopped Italian parsley

Steps:

  • In a stock pot, bring 2 qt water and 2 qt wine to a boil. Season generously with salt.
  • In a large saute pan, melt butter in oil over low heat.
  • Add spaghetti to boiling water-and-wine. Stir often to prevent sticking.
  • Add garlic and optional red pepper flakes to saute pan. Saute slowly until garlic is a pale blond and sizzling.
  • Add 1/2 c red wine to garlic. Add a generous splash of liquid from the pasta pot as well. Turn heat up to medium and bring to a simmer.
  • When pasta is al dente, transfer pasta to the saute pan, along with the parsley. Toss and shake saute pan until the pasta has absorbed all the liquid and is fully cooked.
  • Serve immediately on warmed plates. Grated Pecorino Romano or Parmigiano-Reggiano is optional.

1 pound dried spaghetti
1/4 cup olive oil
3 garlic cloves (peeled and minced)
4-5 cups red wine
1 teaspoon beef bouillon
Salt, black pepper, and red pepper flakes (to taste)
1/4 cup freshly chopped parsley
Freshly grated Pecorino (for serving)

Steps:

  • Bring a large pot of salted water to a boil. Add the dried spaghetti and cook until just pliable, 2-3 minutes.
  • While the water is coming to a boil, drizzle the olive oil into a separate large pot over medium heat.
  • Add the garlic to the heated oil and cook until just fragrant, 30 seconds to 1 minute. Pour in 4 cups of the red wine and bring to a boil.
  • Stir in the beef bouillon and add the now pliable spaghetti. Simmer, stirring often to keep the pasta from sticking, until the noodles have soaked up the wine mixture and are al dente, just tender, 6-8 minutes.
  • Season to taste with salt, freshly ground black pepper, and about 1/8-1/2 teaspoon red pepper flakes, or to taste.
  • Serve immediately topped with fresh parsley and grated Pecorino cheese.

1 (750 ml) bottle tuscan red table wine (Rosso di Montalcino or Chianti)
coarse salt
1 lb spaghetti or 1 lb perciatelli
3 tablespoons extra virgin olive oil
1/4 lb deli-sliced pancetta
3 portabella mushroom caps, thinly sliced
2 -3 sprigs fresh rosemary, leaves finely chopped
4 garlic cloves, chopped
red pepper flakes (a couple of pinches)
4 -5 cups spinach or 4 -5 cups kale
black pepper
1/4 teaspoon grated fresh nutmeg
grated parmigiano-reggiano cheese

Steps:

  • Pour the entire bottle of wine into a large pan; add water and fill the pot up as you would to cook pasta.
  • Bring the wine and water to a boil over high heat.
  • When the liquids boil, add salt and the pasta; cook to al dente. (you will use some of the cooking liquid later).
  • Heat a large nonstick skillet over medium heat; add 2 tablespoons of olive oil; then chop and add the pancetta.
  • Brown the pieces until they are golden at the edges and transfer them to a paper-towel lined plate.
  • Add the mushrooms to the olive oil in the same skillet; season with rosemary; cook 6-8 minutes until deeply golden.
  • Push the mushrooms to the sides of the skillet; add in the garlic and red pepper flakes; cook for a minute or so, then toss the mushrooms together with the garlic.
  • Add the greens to the pan; season with salt, pepper, and nutmeg.
  • When the greens have wilted down, add a couple ladles of the starchy pasta cooking liquid to the pan; cook for a minute to reduce it a little.
  • Drain pasta well and add it to the skillet.
  • Add in the pancetta and a handful of cheese to the pan; toss the pasta for a minute or so to allow it to absorb the remaining liquid.
  • Adjust the seasonings and serve; pass the extra cheese at the table.

3 to 4 anchovy fillets, chopped
3 dried chili peppers, crushed, optional
2 cups red wine
Small bunch fresh Italian parsley, chopped
1/2 cup freshly grated pecorino cheese

Steps:

  • Bring salted water to boil in a large pot. Add the spaghetti and cook for 6 to 7 minutes, pasta should still be a little firm in the middle (just before the pasta is al dente).
  • In a saucepan, heat the extra-virgin olive oil. Add the garlic, anchovy fillets and chili peppers, and cook for about 2 to 3 minutes. Add the spaghetti to the pan, and toss well. Pour in the red wine, and cook until it has reduced and the spaghetti has finished cooking. Add freshly chopped parsley and grated pecorino cheese to pasta, and toss well.
  • Remove the pasta from heat, transfer to a warm bowl and serve immediately.

1 tablespoon olive oil
3 tablespoons butter
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
3 cloves garlic, minced
One 750-milliliter bottle red wine, such as Chianti
Freshly ground black pepper
1 pound spaghetti
1 pound portobello mushrooms, sliced 1/4 inch thick
1 pound button mushrooms, sliced
1 tablespoon balsamic vinegar
1/2 cup grated Parmesan cheese
2 tablespoons fresh basil leaves, torn

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat the olive oil and 1 tablespoon butter in a large skillet. Add the Italian seasoning, red pepper flakes and garlic and cook for 3 minutes. Turn the heat off. Add the red wine, turn on the heat and bring it to a boil. Season with a dash of salt and pepper.
  • Meanwhile, add the spaghetti to the boiling water and cook for 3 minutes. Drain the pasta, reserving some of the water, and add the pasta to the skillet with the simmering wine. Stir everything together with tongs and cook for 5 minutes.
  • Meanwhile, melt 1 tablespoon butter in a saute pan. Add the sliced mushrooms, season with salt and pepper and fry until cooked on both sides. Drizzle over the balsamic vinegar and toss.
  • Add the final tablespoon of butter to the pasta and stir through. You can add some of the reserved pasta water if you need loosen the sauce. Add the sauteed mushrooms and stir through. Garnish with the grated Parmesan and torn basil leaves.
