SPICED UP POTATO CHIPS

- Scrub the potatoes under water until totally clean. Use a mandolin or Japanese slicer to slice the potatoes as thinly as possible. As you slice them, submerge them in cold water and set aside. Mix together the garlic salt, paprika, black pepper, cayenne and salt in a small bowl and set aside.
- In 2 heavy Dutch ovens, heat some vegetable oil to 375 degrees F (use a thermometer to keep the temp right!). Lay the potatoes on a baking sheet lined with paper towels, and blot them with more paper towels to dry completely.
- Lower batches of potatoes into the oil using a spatula. They will fry very quickly, about 1 1/2 minutes; remove with a spatula when they're nice and golden and crisp. Immediately sprinkle on the spice mix. Repeat with the rest of the potatoes!

- In a 2 1/2 quart microwave safe bowl, cook chocolate pieces, uncovered, on high for 1 1/2-2 minutes or until pieces are melted and smooth, stirring half way through the cooking time.
- Stir in potatoes, peanut butter and vanilla. Add powdered sugar and stir till well blended. With the back of a spoon, press the mixture into a greased 8x8x2-inch pan. Cover and chill. When firm cut into squares.

- Add semi-sweet chocolate, 3/4 of the can of dulch de leche (leaving 1/2 cup in the can) to a double boiler, and melt completely. Once melted, remove from heat and slowly add in sweetened condensed milk, peanut butter and vanilla extract, stirring with a large spatula until mixed. The chocolate will be thick. Mixture is going to get super thick but slowly stir and just fold the chocolate mixture over until combined. Use the spatula or a large spoon to spread the chocolate into the pan. It will be very thick, just try and spread as evenly as you can. Place in the fridge for 10 minutes to set.
- Melt the dark chocolate in the microwave on 30 second intervals, stirring after each interval until melted and smooth. This takes me about 1 minute and 30 seconds.
- Remove the pan from the fridge. Pour 3/4 of the dark chocolate over the fudge. Using the back of a spoon, spread it evenly over the top of the fudge. Immediately cover it with the chopped Reese's and chopped Hershey's kisses. Take the remaining dulce de leche and melt in the microwave for 30 seconds. Let cool for three minutes and then drizzle over the top of the candy. Add the potato chips on top of top of the candy (crushing them if you would like). Now grab the remaining melted chocolate and drizzle over the potato chips. Let set in the fridge for 30 minutes or so.

- Start by adding 3 cups of potato chips to your food processor. Pulse 4-5 times until potatoes chips resemble 1 inch pieces. Then measure out 1 cup of potato chips and set aside.
- Blitz remaining potato chips in your food processor until finely ground. Once the chips are finely ground you should have one cup. If you have less than 1 cup, add in another handful of chips and blitz until you have reached 1 cup of potato chips. Set aside.
- In a medium sized bowl melt together chocolate chips, peanut butter, and butter. Using the microwave stir the chocolate mixture every thirty seconds until completely melted.
