1 tbsp rapeseed oil
2 large onions , halved and thinly sliced
20g dried porcini mushrooms
3 tsp vegetable bouillon powder
300g chestnut mushrooms , chopped
3 garlic cloves , finely grated
300g potato , finely diced
2 tsp fresh thyme
4 carrots , finely diced
2 tbsp chopped parsley
8 tbsp bio yogurt
55g walnut pieces

Steps:

  • Heat the oil in a large pan. Tip in the onions and fry for 10 mins until golden. Meanwhile, pour 1.2 litres boiling water over the dried mushrooms and stir in the bouillon.
  • Add the fresh mushrooms and garlic to the pan with the potatoes, thyme and carrots, and continue to fry until the mushrooms soften and start to brown.
  • Pour in the dried mushrooms and stock, cover the pan and leave to simmer for 20 mins. Stir in the parsley and plenty of pepper. Ladle into bowls and serve each portion topped with 2 tbsp yogurt and a quarter of the walnuts. The rest can be chilled and reheated the next day.

1bunch spring onions, chopped
1large potato, peeled and chopped
1 garlic clove, crushed
1l vegetable stock
250g frozen peas
100g fresh spinach
300ml natural yogurt
few mint leaves, basil leaves, cress or a mixture, to serve

Steps:

  • Put the spring onions, potato and garlic into a large pan. Pour over the vegetable stock and bring to the boil.
  • Reduce the heat and simmer for 15 mins with a lid on or until the potato is soft enough to mash with the back of a spoon.
  • Add the peas and bring back up to a simmer. Scoop out around 4 tbsp of the peas and set aside for the garnish.
  • Stir the spinach and yogurt into the pan, then carefully pour the whole mixture into a blender or use a stick blender to blitz it until it's very smooth. Season to taste with black pepper.
  • Ladle into bowls, then add some of the reserved cooked peas and scatter over your favourite soft herbs or cress. Serve with crusty bread, if you like.

Roasted Sweet Potato and Miso Soup with Collard Green Furikake image

Sweet potatoes are a must-have on my menus. This delicious root vegetable is rich in flavor and nutrients as well as cultural significance. Sweet potatoes were often sold by street vendors in Harlem, and these piping-hot nuggets on a wintry New York day were a reminder of home for the many Southerners who migrated north after the Civil War. For this miso-inspired take on sweet potatoes, I make a version of furikake, a popular Japanese seasoning that's often sprinkled over rice or fish. In place of seaweed I like to use different seasonal leafy greens, like collard greens, to add a new dimension to it. Collard furikake makes a beautiful garnish for this golden sweet potato soup enriched with coconut milk.

8 collard leaves, stems removed, leaves cut into 1-inch squares
Avocado oil
1/2 teaspoon sea salt
1 large shallot, finely diced
2 teaspoons minced peeled fresh ginger
1/2 cup benne (sesame) seeds
1 1/2 teaspoons crushed red pepper flakes
4 medium sweet potatoes, scrubbed and rinsed
4 tablespoons unsalted butter
1/2 cup avocado oil
2 medium carrots, peeled and chopped
1 medium yellow onion, finely diced
1/4 cup minced garlic
1/4 cup minced peeled fresh ginger
Sea salt
2 tablespoons coconut vinegar
2 tablespoons yellow miso
One 13.5-ounce can full-fat coconut milk
4 cups vegetable broth
Ground white pepper

Steps:

  • For the collard green furikake (can be made a day ahead): Preheat the oven to 300 degrees F. Line a sheet pan with parchment paper.
  • Rinse the collard greens and thoroughly dry them in a salad spinner or by patting them with a paper towel. Toss the greens with 1 1/2 teaspoons avocado oil and the salt. Lay them in a single layer on the prepared sheet pan. Bake until lightly browned and crispy, 15 to 18 minutes. Cool the collards on the sheet pan.
  • Heat 1/4 cup avocado oil in a small skillet over medium-high heat. Add shallot and ginger and cook until they begin to brown, 3 to 5 minutes. Remove the fried shallot and ginger with a slotted spoon and place on a paper towel to drain.
  • Put the benne seeds in a medium skillet and toast over low heat, stirring occasionally, until fragrant, about 5 minutes. Combine the toasted benne seeds, red pepper flakes and fried shallots and ginger in a small bowl. Gently crumble the crispy collard greens into the mixture. When cool, you can store the collard green furikake in an airtight container until ready to use.
  • For the sweet potato soup: Preheat the oven to 425 degrees F. Line a sheet pan with parchment paper.
  • Gently poke the sweet potatoes all over with a fork. Bake on the prepared sheet pan until the juices on the pan begin to bubble and the sweet potatoes are soft, 40 to 50 minutes.
  • Combine the butter and avocado oil in a large pot over medium-low heat. When the butter melts, add the carrots, onions, garlic and ginger and cook until the onions become translucent, 6 to 10 minutes. Season with salt. Add the vinegar and miso to the pot and cook for 3 minutes.
  • Remove the skins from the sweet potatoes. Place the flesh in a large bowl and mash lightly. Add the mashed potatoes to the pot. Stir in the coconut milk and broth. Simmer over medium-high heat for 10 minutes.
  • Blend the soup until smooth in a high-speed blender or with a hand-held immersion blender. Season to taste with salt and white pepper. Serve hot, garnished with the collard green furikake. Enjoy!

1 bunch mustard greens (about 12 ounces), stems trimmed, leaves coarsely chopped
1 10-ounce package fresh spinach, stems trimmed
Sour cream

Steps:

  • Heat 2 tablespoons oil in heavy large pot over medium heat. Add onions and sauté until tender and golden, about 8 minutes. Add potatoes; sauté 3 minutes. Add 8 cups water and crushed red pepper. Bring to boil. Reduce heat. Simmer until potatoes are tender, about 20 minutes.
  • Meanwhile, heat remaining 2 tablespoons oil in another heavy large pot over medium heat. Add garlic; sauté until fragrant, about 1 minute. Add mustard greens and all but 1 cup spinach leaves; sauté until wilted, about 3 minutes.
  • Add sautéed greens to potato mixture. Working in batches, purée soup in blender until smooth. (Can be prepared 1 day ahead. Cool. Cover and refrigerate.) Return soup to pot. Bring to simmer, thinning with more water, if desired. Season soup to taste with salt and pepper.
  • Cut remaining 1 cup spinach leaves into 1/3-inch-wide slices. Ladle soup into bowls. Add dollop of sour cream to each bowl. Garnish soup with sliced spinach leaves and serve.

GREEN PEA AND POTATO SOUP

I saw this soup on a cooking show a long time ago and I have fiddled with the ingredients until I got a flavour I liked. If you like a thicker soup, use a cup less of water.

2 cups frozen peas
3 medium potatoes, peeled and chopped into quarters
3 cups chicken stock
2 cups water
1 tablespoon olive oil
1 small onion, chopped
1 clove garlic, crushed
1/4 cup grated parmesan cheese
salt and pepper

Steps:

  • Heat oil in a large saucepan, add onion and garlic, cook, stirring until the onion is soft.
  • Pour the chicken stock into the saucepan with the onion and garlic and bring to the boil.
  • Add the potatoes, boil uncovered for 5 minutes.
  • Stir in the peas, bring to the boil and cook for a further 5 minutes or until the chopped potatoes are tender.
  • Blend potato and pea mixture in batches until smooth.
  • Serve soup with sprinkled with parmesan cheese.

1 cup drained canned chopped tomatoes
1 tablespoon fresh lemon juice
Low-fat sour cream

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add potatoes, cabbage and onion and sauté until cabbage softens, about 5 minutes. Add 8 cups broth, beets and tomatoes. Bring soup to boil. Reduce heat and simmer until vegetables are tender, about 30 minutes.
  • Working in small batches, puree 4 cups of soup in blender; return to remaining soup in pot. If desired, add more broth by 1/2 cupfuls to thin soup. Add lemon juice; season with salt and pepper.
  • Ladle soup into bowls. Top with dollop of sour cream; sprinkle with parsley. Serve, passing lemon wedges separately.

BAKED POTATO AND GREENS SOUP



Baked Potato and Greens Soup image

From the Veganomicon. This is the best potato soup I've ever made (and I have made many). I use Marsala wine, large red-skinned potatoes and vary the herbs based on what came out of the garden. I also just use skim milk in this because I'm not actually vegan. The great idea for this soup is that you bake the potatoes ahead of time, keep them in the fridge, then can pull together potato soup in 30 min after getting home from work. I like to make this in the same week as a casserole, so I just bake the potatoes while the other meal is cooking, then use them later in the week.

6 -8 baking potatoes, baked and cooled
2 tablespoons olive oil
1 large yellow onion, sliced into strips
3 garlic cloves, minced
1/2 teaspoon fennel seed, crushed
1 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon salt
fresh ground black pepper
1/4 cup dry white wine
4 cups vegetable broth
4 cups kale, torn into bite-sized pieces
1/4 cup plain soymilk

Steps:

  • Preheat soup pot and saute the onions in the olive oil over medium-high heat until good and brown, about 12 minutes.
  • Slice the baked potatoes in half lengthwise. Slice into 3/4" chunks. Three of the halves may be reserved, sliced in half, dredged in cornmeal with spices, then pan-fried into a sort of french fry crouton, if desired.
  • Once the onions are browned, add the garlic, fennel, thyme, sage, black pepper, and salt. Cook for 2 more minutes, then add the wine to deglaze the pan. Add the chunks of potatoes and the broth, cover and lower the heat to bring to a low boil. Mix in the kale. Cover and cook for 15-20 minutes more.
  • Use a potato masher to mush up about half of the soup (do not use an immersion blender here as it will make the potatoes pasty). Add the soy milk and mix. If it's too thick, add a little water or vegetable broth.
  • Ladle into bowls and top with potato croutons if desired.

3 tbsp extra virgin olive oil
1 large onion, chopped
3 garlic cloves, chopped
500g potatoes, cut into 2cm chunks
1.2 litres chicken stock
25g butter
150g spinach, any coarse stalks removed
115g rocket
5 tbsp extra virgin olive oil
150g chorizo, cut into small cubes
2 red chillies, halved, deseeded and finely sliced
2 garlic cloves, finely sliced

Steps:

  • Heat half the olive oil in a large saucepan and fry the onion until soft but not coloured, about 12 mins. Add the garlic and cook for 4 mins more. Tip in the potatoes, turn to coat, season and add about 75ml water. Cover, reduce the heat to low and cook for 12 mins, stirring occasionally. Pour in the stock, bring to the boil and continue to cook, uncovered, for 20 mins until the potatoes are completely tender. Leave to cool.
  • Heat the remaining olive oil and the butter in a medium saucepan over a medium heat. Toss in the spinach, season and cook for a few minutes until wilted.
  • Add the wilted spinach, any liquid from the pan and the rocket to the potato mixture. Use a hand blender to blitz to a smooth purée, or pulse the mixture in a food processor if you prefer a chunkier soup (you may need to do this in batches).
  • To make the garnish, heat the oil in a frying pan and fry the chorizo for a few minutes. Add the chillies and garlic, and cook until the garlic is softened but not brown - this will happen quickly so watch it carefully. Reheat the soup if needed, divide between bowls and top with the chorizo garnish to serve.
