One 3-pound boneless pork shoulder roast, fat trimmed, at room temperature
Kosher salt and freshly ground pepper
All-purpose flour, for dusting the roast
2 tablespoons olive oil
1/4 cup apple cider vinegar
5 shallots, cut into large pieces
4 stalks celery, chopped
3 big carrots, chopped
3 big parsnips, chopped
8 cloves garlic, smashed
2 cups chicken stock
Splash of bourbon

Steps:

  • Preheat the oven to 300 degrees F. Season the roast very generously with salt and pepper, and then dust lightly with the flour.
  • Put a Dutch oven over medium-high heat, and then add the olive oil. When the oil is hot, add the roast, and brown deeply on all sides, about 4 minutes per side.
  • Remove the roast to a platter. Stir in the vinegar, shallots, celery, carrots, parsnips and garlic, and then set the roast on top of the vegetables. Pour the chicken stock and bourbon around the meat, cover, and roast in the oven for 2 hours.
  • Transfer the roast to a cutting board. Spoon the vegetables and pan juices onto a large serving platter. Slice the roast, arrange the meat on top of the vegetables, and serve family style.

1 pork roast (2 1/2 pounds), tied at 1-inch intervals
Salt and pepper
3 Gala apples, quartered
2 sweet potatoes, cut into 1/2-inch wedges
1 tablespoon flour
1 1/2 cups chicken broth

Steps:

  • Preheat oven to 475 degrees. Coat a heavy-bottomed metal roasting pan with 2 teaspoons oil. Place pork in center and season with salt and pepper. Roast until top is golden, about 15 minutes.
  • Toss apples and sweet potatoes with remaining 2 teaspoons oil and add to pan, arranging around pork. Return to oven and roast until apples and sweet potatoes are tender and an instant-read thermometer inserted in center of pork reads 140 degrees, about 20 minutes.
  • Remove pork, apples, and sweet potatoes from pan. Allow meat to rest 10 minutes before slicing. To make the sauce, whisk flour into pan drippings over medium heat, then slowly whisk in chicken broth and cook until thickened.

I whipped this up in the slow cooker, and it was awesome served with broccoli and rice, and also as pulled pork sandwiches for the 2 kids and hubby for a few days without them getting tired of it! It got better and better until it was gone, so I figured it was worth sharing. You let me know what you think!

6 apples with peel, cored and cut into 8 wedges
1 large red onion, roughly chopped
¼ teaspoon ground cinnamon, or to taste
7 pounds pork shoulder roast
½ teaspoon salt, or to taste

1 (24 ounce) jar cinnamon-flavored applesauce
¼ teaspoon ground cinnamon, or to taste

Steps:

  • Place the apples and onion into the bottom of a slow cooker, and sprinkle with 1/4 teaspoon cinnamon.

3 tablespoons plus 2 teaspoons extra-virgin olive oil plus more for drizzling
6 small celery roots (celeriac; each about 4 ounces), unpeeled, trimmed with some stem still attached
1/2 cup (1 stick) unsalted butter, cut into 1" cubes
Kosher salt
12 sprigs thyme
6 sprigs rosemary
6 sprigs sage
1 tablespoon coffee beans (optional)
1 cup buttermilk
1/2 lemon
1/4 cup oil-cured black olives, pitted, quartered lengthwise

Steps:

  • Heat 3 tablespoons oil in a large heavy pot over medium heat. Add celery roots and cook, turning frequently, until golden, 8-10 minutes. Add butter and a large pinch of salt. When butter begins to foam, reduce heat to medium-low. Add herb sprigs, coffee beans, if using, and 1 1/2 cups water. Cover and gently cook, adding more water by tablespoonfuls if pan is dry, until celery roots are very tender, about 1 hour.
  • Remove herbs and coffee beans (if using) from pot and discard. Baste celery roots with buttery juices in pot. Remove from heat. Transfer celery roots to a cutting board, slice in half through stems, and place 2 halves on each plate.
  • Meanwhile, very gently warm buttermilk in a small saucepan over low heat (it will break if warmed too much). Squeeze in a few drops of lemon juice and add remaining 2 teaspoons oil and a pinch of salt to make a loose sauce. Spoon sauce around celery roots on plates. Garnish with olives, drizzle with oil, and squeeze a few more drops of lemon juice over each.

Salt and freshly ground black pepper
2 tablespoons vegetable oil
1 1/2 cups celery root in half-inch dice
1 1/2 cups carrots, peeled and diced
1 1/2 cups onions, diced
2 cups apple cider
1 teaspoon fresh thyme leaves
5 juniper berries
3 apples, peeled, cored and cut into eighths
2 pounds Yukon gold potatoes, peeled and quartered

Steps:

  • Preheat the oven to 300 degrees and season the pork with salt and pepper. In a large, heavy pot or Dutch oven with a tightly fitting lid, heat 2 tablespoons of the oil over high heat. Brown the meat on all sides, remove it from the pan and set aside.
  • Add the celery root, carrots and onions to the pan and cook, stirring, until the vegetables are lightly browned, about 5 minutes. Add the meat, cider, thyme leaves and juniper berries and bring to a boil. Cover the pot, transfer it to the oven and cook for 2 hours.
  • Add the apples and potatoes to the pot and continue to cook until the potatoes and meat are very tender, about 40 minutes longer. Remove from the oven, season with more salt and pepper and serve.

1 1/2 teaspoons brown sugar, firmly packed
1/4 teaspoon ground ginger
2 apples, cored and cut in 1-inch thick slices
1 lb small red potato, halved
10 white pearl onions, peeled
1 tablespoon olive oil
3/4 teaspoon salt
3/4 teaspoon pepper
3/4 teaspoon fresh rosemary
2 lbs pork loin

Steps:

  • Preheat oven to 450.
  • Stir together apple jelly, brown sugar and ginger.
  • Set aside.
  • Combine apples, potatoes, onions, olive oil, salt, pepper and rosemary.
  • Place pork in center of roasting pan.
  • Arrange apple mixture around pork in a single layer.
  • Roast 15 minutes.
  • Reduce oven temp to 350 and roast another 20 minutes.
  • Stir apple mixture.
  • Spread apple jelly glaze on pork and roast another 15-20 minutes or until center of pork reaches and internal temp of 145.

1/2 teaspoon freshly grated nutmeg
Garnish: celery leaves

Steps:

  • Peel celery root with a sharp knife, then cut into 1-inch cubes. Peel and core apples, then cut into 1-inch pieces.
  • Melt butter in a 6- to 8-quart heavy pot over moderately low heat, then add celery root, apples, and salt and stir to coat with butter. Cover with a tight-fitting lid and cook (without adding liquid), stirring occasionally, until celery root is tender, 50 minutes to 1 hour.
  • Purée mixture in batches in a food processor until smooth, about 2 minutes per batch. Return purée to pot and stir in cream, white pepper, and nutmeg. Reheat, covered, over moderate heat, stirring occasionally, until hot, about 5 minutes.

3 tablespoons butter, softened, divided
2 tablespoons fresh sage leaves, chopped and divided
1 teaspoon salt, divided
1/4 teaspoon pepper
3 lbs boneless pork roast
1 1/2 lbs baby red potatoes, cut in half
1 large onion, chopped
1 1/2 lbs gala apples, cored and cut into 6 wedges (3-4 med)

Steps:

  • Preheat oven to 450 degrees F. In small bowl stir 1 tbsp butter, 1 tbsp chopped sage, 1/2 tsp salt, 1/4 tsp pepper. With hands rub this mixture all over pork.
  • In 15x10 jelly-roll pan melt the remaining butter in oven. Remove pan from oven. Add potatoes, onion, 1/2 tsp salt, and remaining chopped sage. Toss to coat. Push potatoes and onion to edge of pan and set small roasting rack in center. Place pork on the rack. Roast 20 minutes.
  • Add apples to pan around the pork, and roast 30 to 40 minutes longer, depending on the thickness of pork, or until meat thermometer inserted into center of pork reaches 145 degrees F.
  • Transfer pork to a warming platter; let stand 15 minutes to set juices. Transfer potatoes, onion, and apples to platter around the pork. Pour pan drippings into a small bowl; skim off fat from drippings. Serve with pork.

1/4 lb unsalted butter
1 cup fennel bulb, tops and core removed, large-diced
2 lbs celery root, peeled and (3/4-inch)
8 ounces yukon gold potatoes, peeled and (3/4-inch)
3 golden delicious apples, peeled, cored, and (3/4-inch)
1 1/2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1/2 cup apple cider, good quality
1/4 cup heavy cream
kosher salt, to taste
fresh ground black pepper, to taste

Steps:

  • In a shallow pot or large saute pan over medium heat melt butter. Saute the fennel, celery root, potatoes, and apples with the 1 1/2 teaspoons of salt and 1/2 teaspoon of pepper, stirring occasionally, until the vegetables begin to soften or about 4 to 5 minutes. Add the cider and cover the pot tightly with a lid. Over low heat simmer for 30 to 40 minutes, stirring occasionally, until the vegetables are tender. If the vegetables seem to dry add a few more tablespoons of apple cider or water.
  • When the vegetables are cooked stir in the cream and cook for 1 minute. Using a food mill fitted with the coarsest blade process vegetable mixture. A food processor can also be used but will result in a smoother texture.
  • Taste and season with salt and pepper if needed than return to pot to keep warm until serving.
