This apple cake (bolo de maçã) will become one of your favorites, it looks great and tastes incredible.

4 golden apples
4 eggs
1 and 1/4 cups of sugar
3/4 cup of melted butter
2 and 1/3 cups of flour
1 teaspoon of baking powder
1/2 cup of milk

2 and 1/3 cups of flour
1 teaspoon of baking powder
1/2 cup of milk

Steps:

  • Grease a cake form with butter and sprinkle it with sugar. Peel, cut the apples into thin slices, drizzle with lemon juice to keep them from changing color and place a layer of apple slices on the bottom of the form. Beat the egg yolks with the sugar until you get a fluffy cream, then add the melted butter and milk and continue to beat. Add the sifted flour with the baking powder and stir with a spoon. Beat the egg whites until firm, add to the batter and stir well. Put a layer of the batter over the apples in the form. Then add another layer of apple slices and top it with the remainding batter. Bake at 180ºC or 350ºF for about 40 minutes or until cooked, but test the toothpick. Remove it from the oven, let it cool a bit, gently slide a knife around the form and unmold the cake. 2 red apples
100 grams (1/2 cup) granulated sugar
200 grams (1 1/2 cups) all-purpose flour
1 tablespoon liquid caramel
1 teaspoon baking powder
Zest of one lemon
5 eggs
200 grams (about 1 cup) granulated sugar to caramelize

Steps:

  • Wash and peel the apples. Remove the seeds and cut into slices; reserve.
  • Preheat the oven to 180ºC (350ºF). Pour 200 grams (about 1 cup) sugar in a round cake pan (22 x 7 centimeters (8 2/3 x 2 3/4 inches)). Place the cake pan on the stove over low heat until the sugar caramelize (go turning the cake pan until stays completely caramelized). Turn off the heat and place on the bottom of the cake pan the apple cut in slices.
  • In an electric mixer, beat on medium speed the eggs, sugar and the lemon zest until obtain a creamy and homogeneous mixture. Add the liquid caramel and mix for 2 to 3 minutes to incorporate. Reduce the mixer speed to low, add the flour mixed with the baking powder and beat until obtain a quite creamy mixture.
  • Pour the mixture into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 30 minutes (the time depends on the oven).
  • Turn off the oven and unmold the cake onto a plate. Let cool to room temperature and serve.

1 cup brown sugar

1 cup oil
2 teaspoons vanilla

1/2 cup brown sugar
1/4 cup milk
1/4 lb butter

Steps:

  • Cake:.
  • Mix all cake ingredients by hand in order given.
  • Pour in a greased 9 x 13 inch pan or springform pan.
  • Bake at 350 degrees for 45 minutes and remove.
  • Topping:.
  • In saucepan mix all ingredients and bring to a slow boil for 3 minutes.
  • Pour over cake and return to oven for 4 minutes.

Steps:

  • Pre-heat the oven to 350F (180C).
  • Mix together the first seven ingredients. Pour half the mixture in a 8 X 13 pan. Cover with apples or pears. Pour the other half of the mixture and sprinkle with sugar and cinnamon.
  • Bake around 30 minutes or when a toothpick comes out dry.
  • Serve with cream or ice cream.

2 cups flour (sifted)

2 apples (chopped fine)
1 pear (chopped fine)
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup brown sugar
2 tablespoons margarine or 2 tablespoons butter
1/2 cup nuts, chopped (walnuts are best)

Steps:

  • Preheat oven to 350.
  • Cream sugar and butter (or margarine).
  • Add vanilla and eggs and beat well.
  • Sift flour, salt, powder and soda together. Add to egg mixture and alternate when adding sour cream.
  • Fold in the pear and apples.
  • Grease a 13x9x2" pan and pour in the mixture, spreading evenly.
  • Combine topping mixture and spread evenly on top of batter.
  • Bake for 45 minutes.
