Time 20m

Yield 4

Number Of Ingredients 18

1 cinnamon stick
1 teaspoon black peppercorns
1/2 teaspoon white peppercorns
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon whole allspice
1/2 teaspoon whole cloves
2 cardamom pods
1 teaspoon ground ginger
1 teaspoon turmeric
1/4 to 1/2 teaspoon cayenne pepper
1/2 teaspoon freshly grated nutmeg
Kosher salt
3 tablespoons unsalted butter
Large pinch of saffron (optional)
2 1/4 cups (12 ounces) whole-wheat couscous
3 cups low-sodium chicken broth, warmed
1 to 2 teaspoons fresh lemon juice

Steps:

  • Make the spice blend: Toast the cinnamon stick, both peppercorns, cumin, coriander, allspice, cloves and cardamom in a small dry skillet over medium heat until fragrant, 2 minutes; let cool. Grind in a spice grinder or mini food processor with the ginger, turmeric, cayenne, nutmeg and 1 teaspoon salt. Store in an airtight container for up to 2 weeks; use leftover spice blend as a rub for meat or fish.
  • Make the couscous: Heat the butter, 1 1/2 teaspoons spice blend and the saffron, if desired, in a large skillet over medium-high heat until lightly toasted, about 1 minute. Add the couscous and stir until toasted, about 1 minute. Stir in the warm broth, remove from the heat, cover and set aside until the couscous is plump, about 7 minutes. Add the lemon juice and fluff with a fork. Transfer to a bowl and sprinkle with 1/2 teaspoon spice blend.

MOROCCAN COUSCOUS

Moroccan Couscous image

This easy Moroccan couscous recipe with raisins and pinenuts is a fast, flavorful, versatile side dish to serve with chicken or lamb.

Provided by Erin Clarke / Well Plated

Categories     Side Dish

Time 15m

Number Of Ingredients 12

1/4 cup pine nuts (or swap pistachios or slivered almonds)
2 tablespoons unsalted butter (use coconut oil or vegan butter to make vegan)
1 small shallot (chopped)
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground cumin
2 cups low-sodium vegetable broth (or chicken broth)
1 cup whole wheat couscous
1/3 cup golden raisins
1/4 cup chopped fresh parsley
2 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil (use the good stuff here!)

Steps:

  • Preheat the oven to 350 degrees F. Spread the pine nuts in a single layer on an ungreased, rimmed baking sheet. Toast in the oven until fragrant and lightly golden, 5 to 7 minutes, stirring once halfway through. Keep an eye on them and DO NOT WALK AWAY during the last few minutes to make sure those precious pine nuts do not burn. Immediately transfer them to a bowl to stop their cooking and to make sure the hot pan doesn't burn them once they are out of the oven.
  • In a large skillet, melt the butter over medium heat. Add the shallots and cook for 3 minutes, until they begin to soften. Add the salt, pepper, and cumin and cook for 30 seconds.
  • Pour in the broth. Increase the heat to high and bring it to a boil. As soon as the liquid begins to boil, remove the pan from the heat. Stir in the couscous, cover, and let sit for 10 minutes.
  • With a fork, fluff up the couscous. Add the raisins, parsley, lemon juice, olive oil, and toasted pine nuts to the pot, then stir the ingredients together to combine. Taste and adjust seasoning as desired. Enjoy hot.

MOROCCAN COUSCOUS SALAD

Moroccan Couscous Salad image

Want a salad that is more than just leaves? Try our delicious vegan Moroccan couscous salad - real fuel for a busy day!

Provided by HurryTheFoodUp

Categories     Lunch     Salads     Sides

Time 30m

Number Of Ingredients 17

¾ cup instant couscous ((¾ cups = 130g))
½ cup water
½ tsp salt
2 tsp olive oil
1 tsp cumin, ground
1 tsp ginger powder ((fresh is fine too. Chop it finely.))
1 tsp paprika powder ((or use 3 tsp Ras El Hanout to replace the cumin, ginger and paprika powder))
½ pomegranate
½ medium zucchini
½ bell pepper, red
½ orange
¼ orange's zest
1 fig, fresh ((don't worry if you can't find one))
1 tbsp raisins
¼ cup parsley, fresh
Salt and pepper to taste
4 radish ((thinly sliced))

Steps:

  • Boil the water and add it to couscous in a large serving bowl, with ½ tsp of salt.
  • Cover the couscous with a tea towel or lid and leave for 5 minutes.
  • Take a fork and gently loosen up the couscous and add the cumin, ginger, olive oil and paprika powder. You want it nice and dry, no big clumps.
  • Wash the orange and grate the zest.
  • Peel and chop the orange and add it to the salad, along with the zest.
  • Deseed the pomegranate (here's a helpful video) and add the seeds.
  • Dice the zucchini and bell pepper finely. Add both to the salad, along with the raisins and radish slices, if using them.
  • If you managed to find a fig, chop it up and add it to the salad.
  • Wash and chop the parsley and any other optional herbs, again add them to the salad - for example, if you have any spare cilantro or mint knocking around, they would be perfect. Season with salt and pepper.
  • Give it a good toss ;)
  • That's it! You have one fresh, delicious, Moroccan couscous salad.

2 small aubergines
calorie controlled cooking oil spray
½ medium onion, finely chopped
½ tsp ground cumin
½ tsp ground coriander
¼ tsp hot chilli powder
pinch ground cinnamon
227g/8oz tin chopped tomatoes
½ red pepper, deseeded and diced
1 medium courgette, cut into 1.5cm/½in chunks
400g/14oz tin chickpeas, drained and rinsed
2 heaped tbsp roughly chopped fresh coriander, plus extra to garnish
400ml/14fl oz vegetable stock, made with ½ stock cube
½ small lemon, juice only
15g/½oz roughly chopped pistachio nuts (alternatively use toasted flaked almonds)
100g/3½oz fat-free natural yoghurt, to serve
½ vegetable stock cube
80g/2¾oz wholegrain couscous
½ small lemon, finely grated zest only
2 heaped tbsp roughly chopped fresh coriander
freshly ground black pepper

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6.
  • Cut the aubergines in half from top to bottom and score in a criss-cross pattern through the flesh. Place on a small baking tray and spray with oil. Season with a little black pepper and bake for 30-40 minutes or until very tender and lightly browned.
  • Meanwhile, spray a large non-stick frying pan with oil and place over a medium heat. Add the onion and cook for five minutes, stirring regularly until softened and lightly browned. Add the cumin, coriander, chilli and cinnamon and cook for a few seconds, stirring constantly.
  • Pour the tomatoes into the pan. Add the pepper, courgette, chickpeas, coriander and stock. Season with a little salt and lots of ground black pepper and bring to a gentle simmer. Cook for around 20 minutes, stirring occasionally until the vegetables are tender and the sauce is thick.
  • Just before the sauce is ready, make the couscous. Dissolve the stock cube in 100ml/3½fl oz just-boiled water in a medium bowl. Stir in the couscous, cover and rest for three minutes. Add the lemon zest, coriander and season to taste. Toss well together, using a fork to break up the clumps of couscous.
  • Divide the aubergines between four plates. Stir the lemon juice into the chickpeas and season to taste. Spoon the spiced chickpeas over the aubergines. Add the couscous and sprinkle with chopped nuts. Garnish with coriander and yoghurt.

  • Chicken with Sugar Pumpkins & Apricots. When we have family gatherings, we give the slow cooker kitchen duty. This yummy chicken with pumpkin and apricots has the warm flavors of Morocco.
  • Iced Melon Moroccan Mint Tea. I grow mint on my balcony, and this refreshing beverage is a wonderful way to use it. It combines two of my favorite drinks—Moroccan Mint Tea and Honeydew Agua Fresca.
  • Slow-Cooked Moroccan Chicken. Herbs and spices really work their magic on plain chicken in this dish, and the dried fruit adds an exotic touch. — Kathy Morgan, Ridgefield, Washington.
  • Moroccan Stuffed Mushrooms. Coriander and cumin are zesty updates to the familiar stuffed mushrooms. The addition of couscous makes them very filling and delicious.
  • Moroccan Pot Roast. My husband loves meat and I love veggies, so we're both happy with this spiced twist on the beefy pot roast. With chickpeas, eggplant, honey and mint, it's like something you'd eat at a Marrakech bazaar.
  • Moroccan Cauliflower and Almond Soup. This soup tastes rich and decadent but is really very healthy! Bonus—it is vegan and also makes your house smell amazing!

  • Soak the dried chickpeas in a large bowl of water overnight. (Or, use a quick soak method: boil the dried chickpeas for 4 or 5 minutes, then turn off the heat and leave them to soak for an hour.)
  • Brown the meat or chicken with the oil, onion, tomatoes and spices in the base of a couscoussier over medium-high heat. Continue cooking, uncovered and stirring frequently, for about 10 to 15 minutes, until a very thick and rich sauce begins to form.
  • Drizzle 1/4 cup of oil over the couscous. Toss and roll the couscous around between your hands for a minute to distribute the oil evenly and break up any balls or clumps. Add 1 cup of water and work it into the couscous in the same way--tossing and rubbing the couscous until all is well blended and there are no clumps.
  • Turn the couscous back into your gsaa or bowl. Allow it to cool briefly, then work in 1 cup of water, using the same tossing and turning as you did before. (You may need to use a wooden spoon if the couscous is too hot, but move to using your hands when it has cooled enough.)

  • Couscous. Couscous is prepared weekly in many Moroccan homes and the presentation pictured here, couscous with seven vegetables, is one of the most popular versions.
  • Moroccan Chicken Bastilla. Moroccan chicken bastilla is Morocco's famous rendition of a savory pie, and it simply doesn't get better than this. Traditionally pigeons were the birds of choice, but here chicken is cooked with saffron, ginger, pepper, and cinnamon, then layered within crispy warqa pastry with an herb-laden omelet and fried almonds scented with orange flower water.
  • Tagine. The sky's the limit when it comes to tagine, the famous slow-cooked Moroccan stew that takes its name from the traditional clay or ceramic dish it's traditionally cooked in.
  • Chicken With Preserved Lemon and Olives. This classic, versatile dish is also one of Morocco's most famous and ubiquitous. And no wonder. It's utterly delicious and works beautifully for any occasion ranging from casual family dinners to celebratory banquets.
  • Lamb or Beef With Prunes. Even if you don't normally reach for prunes when grocery shopping, don't be put off by this particular combination of sweet and savory.
  • Kefta Meatball Tagine. Moroccans like to heartily season their ground beef or lamb (kefta) with cumin, paprika, and herbs. In its simplest form, the spiced kefta is shaped and then grilled or pan-fried, but you'll also find kefta used extensively in other dishes, such as this popular meatball tagine with poached eggs.
  • Rfissa. There may be nothing elegant about pouring hot meat and broth over a plateful of bread, yet around the world such humble fare is regarded as savory, satisfying comfort food at its best.
  • Harira. You'll find all kinds of soups served in Moroccan homes and restaurants, but this one stands out from the crowd for being uniquely Moroccan and very much loved throughout the country.
  • Mechoui. Moroccan roasted lamb, referred to as mechoui, is perhaps best sampled in Marrakesh, where whole lamb is roasted in deep pits with smoldering araar wood.
  • Sardines and Other Fish and Seafood. The waters along Morocco's extensive coastline provide an abundant supply of sardines, making this tasty, very healthy fish an affordable indulgence.
