3 ounces blue cheese, crumbled, plus more for garnish
3 tablespoons buttermilk
2 tablespoons sour cream
1 clove garlic, minced
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground mustard powder
1/4 teaspoon kosher salt

Steps:

  • Combine the ingredients in a medium bowl: Stir together blue cheese, buttermilk, sour cream, minced garlic, lemon juice, Worcestershire sauce, pepper, ground mustard powder, and salt. If a creamier sauce is desired, blend with an immersion blender or in a food processor.
  • Refrigerate the sauce: Place in refrigerator for 30 minutes for flavors to blend.
  • Serve: Use immediately and garnish with additional crumbled blue cheese or transfer to an airtight container and store in refrigerator for up to a week.

This easy blue cheese sauce recipe for pasta uses only three ingredients and comes together in a snap by melting into the hot cooked pasta.

1/2 pound capellini (or spaghetti)
2 tablespoons unsalted butter
1/3 pound blue cheese (crumbled)
1/4 cup fresh parsley (finely chopped)

Steps:

  • Gather the ingredients.
  • Bring a pot of salted water to a boil and cook pasta according to package directions. Reserve 1/2 cup of the pasta water, then drain the noodles.
  • Turn the heat down to low and add the butter to the pot.
  • When the butter has melted, add the noodles back to the pot and stir to coat.
  • Slowly add the blue cheese, stirring the noodles so the cheese melts.
  • As you add the cheese, also drizzle a little of the reserved pasta water over the noodles, using as much or as little as needed. The water will keep the noodles from clumping together and thin out the blue cheese as it melts so the sauce has a lighter, less-sticky texture.
  • Once the blue cheese has mostly melted, stir in the parsley. Add salt to taste.
  • Serve immediately and enjoy!

Rib Eye Steak with Onion Blue Cheese Sauce image

4 rib eye steaks (about 5 ounces each)
Salt and freshly ground black pepper
1 stick softened butter
1 large yellow onion, sliced
1 cup heavy cream
3 to 4 tablespoons Worcestershire sauce
3/4 cup crumbled blue cheese

Steps:

  • Preheat the grill to a high heat or light your outdoor grill.
  • Sprinkle the steaks with salt and pepper and smear both sides of the steaks with 1/2 stick of the butter.
  • Grill the steaks until medium-rare, 3 to 4 minutes per side, and then remove from the heat and keep warm. (You can also saute them in a skillet over medium-high heat if you prefer.)
  • Melt the remaining 1/2 stick of butter in a large skillet over medium-high heat, and then saute the onions until golden brown, 7 to 8 minutes. Pour in the cream, a dash of salt and pepper and the Worcestershire sauce. Let it bubble up, then add the blue cheese and stir together to melt, adding more pepper or Worcestershire sauce as you wish.
  • Place the steaks on plates and spoon the sauce over the top.
  • Take a bite. And the world at long last will make sense.

2 tablespoons crumbled blue cheese
1 tablespoon skim milk
2 teaspoons mayonnaise

1/4 cup hot sauce, such as Frank's
1 tablespoon freshly squeezed lemon juice
2 tablespoons olive oil

8 cups cauliflower florets (from about 1 medium head)

Steps:

  • Preheat the oven to 400 degrees F.
  • For the cheese sauce: Whisk together the sour cream, blue cheese, milk, mayonnaise, 1/8 teaspoon salt and a few grinds of pepper in a small bowl. Cover and refrigerate until chilled, about 30 minutes
  • For the Buffalo cauliflower: Meanwhile, microwave the butter in a small microwave-safe bowl on high until melted. Whisk in the hot sauce and lemon juice and set aside.
  • Mix olive oil, 1/4 teaspoon salt and 1/2 cup water in a large bowl. Add the cauliflower and toss until well coated. Spread the cauliflower on a rimmed baking sheet and roast until beginning to brown and just tender, 20 to 25 minutes. Whisk the hot sauce mixture again, drizzle over the cauliflower and toss with tongs to coat. Roast the cauliflower until the sauce is bubbling and browned around the edges, 5 to 7 minutes more. Very assertively-flavored steak recipe that I learned about 12 years ago when I was learning to cook to impress my now-husband. Adapted from Betty Crocker's New International Cookbook. This Spanish-influenced recipe can tend to be somewhat on the salty side, so be careful to use unsalted butter to saute the steaks, and a good-quality, not-overly-salty blue cheese in the sauce. Serve simply, with a lightly-dressed salad, good crusty bread, and a nice red wine.

8 ounces good blue cheese, crumbled
1 -3 garlic clove, chopped
2 tablespoons dry white wine (drinking quality)
1 dash ground red pepper
2 tablespoons unsalted butter
4 small New York strip steaks (about 1 inch thick, about 2 pounds) or 4 small rib eye steaks (about 1 inch thick, about 2 pounds)
fresh ground pepper
1/4 cup water
chopped parsley (for garnish)

Steps:

  • In a medium skillet, combine cheese, garlic, wine, and red pepper over low heat.
  • Stir frequently until cheese melts.
  • Remove from heat and keep warm.
  • In large skillet, melt butter over medium-high heat, and cook steaks to your liking, turning only once.
  • (About 4- 5 minutes per side will result in steak done to about medium, depending on your cook top).
  • Sprinkle pepper over steaks, remove from skillet and keep warm.
  • Add water to skillet and heat to boiling, stirring constantly to loosen browned bits.
  • Boil 2 minutes, then stir pan juices into cheese mixture.
  • Pour over steaks and sprinkle with parsley.
