CAULIFLOWER PUREE
This simple but surprisingly flavorful puree is a satisfying stand-in for mashed potatoes, and it couldn't be easier. There's no cream in it and only a teensy touch of butter, so it's good for anyone counting calories or carbs. It pleases the meat-and-potatoes eaters at my table, even though it contains neither.

ROASTED AND PUREED CAULIFLOWER
Steps:
- Preheat oven to 350 degrees F.
- On a sheet tray, spread 1/4 of the florets with the oil, season with salt and bake until caramelized, about 25 minutes. Meanwhile, combine remaining cauliflower, milk and half a teaspoon of salt in a medium saucepan over medium heat. Bring mixture to a simmer, cover, and cook until cauliflower is tender, about 20 to 25 minutes. Strain cauliflower from milk mixture, reserving both. Transfer cauliflower to a blender. Add remaining 1/2 teaspoon of salt and butter to the blender. Add half of the reserved milk liquid. Secure top on blender and puree mixture until smooth. If mixture is too thick, thin by adding some of the remaining liquid. Season, to taste. Serve in a large serving bowl topped with caramelized florets and chives.

CAULIFLOWER PUREE
Made this for the family for a change. The kids are on a health kick and our family favourite is mashed spuds!!!!! So I found this recipe and everyone loved it, so this will subsitute on a few occasions from now on..............and maybe cut down on some carb's! I do use the low fat cream version as DH hates evaporated milk, and also use the chicken stock.

Steps:
- To make the dressing, fry the onion in a small, non-stick pan with a splash of oil for 5 mins. Transfer to a bowl and add the rest of the dressing ingredients with a pinch of salt, and leave to macerate for 2 hrs.
- To make the bhaji, whisk the flour, egg and milk into a light batter. Add the onion, chilli and coriander with a pinch of salt and set aside for 30 mins.
- For the purée, melt the butter over a medium heat in a heavy-based saucepan. Add the onion, a generous pinch of salt and fry for 5 mins until soft and translucent. Add the curry powder and cook for another 5 mins, then stir in the cauliflower and cook for a few mins more. Pour in the cream, bring to the boil, then turn the heat right down. Cover with a lid and cook gently for 25-30 mins. Transfer to a blender and blend to a smooth purée. Check the seasoning.
- Half an hour before you want to serve, heat oven to 160C/140C fan/ gas 3. To fry the bhaji, heat enough oil to half-fill a large pan to 160C. Using a slotted metal spoon, lift the onion mix from the batter and let the excess liquid drain away. Lower into the oil and fry until the slices are crisp and golden. Drain on kitchen paper, then spread out on a baking tray and keep warm in the oven while you prepare the other elements.
- Wilt the spinach in a splash of olive oil, seasoning as you do so, and warm your purée through. Keep both on a low heat while you cook the cod.
- Put a non-stick ovenproof pan over a high heat. Season the top of the cod with salt. Add a splash of oil to the pan and put the seasoned side of the cod into the oil. Fry until golden brown, turn down the heat, turn the fish over and roast in the oven for 2-3 mins until just cooked.
- To serve, spoon some purée onto four heated plates. Put the spinach alongside and top with a piece of cod. Spoon a generous amount of the dressing onto the cod and garnish the fish with a bhaji.

CAULIFLOWER AND POTATO PUREE (PUREE DE CHOU-FLEUR)
Most classic purees usually include large quantities of butter or heavy cream. This recipe is lighter, less rich and delicious. One night I made dinner and, without asking, served a puree of cauliflower and potatoes with broiled chicken and string beans. The puree, which was enough for six, was devoured by four, and I now receive frequent requests for it. Use this recipe as a guide for pureeing other vegetables. Use a ration of potato to vegetable 1 to 3 or, at most, 1 to 2. NOTE: Using a food processor to puree potatoes alone will make them pasty, but using it to puree them together with another vegetable works exceptionally well. I had to do it in two batches because I have a smaller food processor. Put cauliflower in first then the potatoes on top. I did not have to use milk it was smooth enough without it. Yummy!

Steps:
- Boil the vegetables until tender, about 15 minutes for the cauliflower and 30 minutes for the potatoes.
- Drain the vegetables and puree them together in a food processor. The puree should be moist enough, but if it isn't, add some milk.
- Stir in the butter and season with the salt and pepper. Blend well. (The puree can be made a day or two in advance and covered with plastic wrap to prevent it from drying out. Reheat in a water bath (bain-marie) or microwave oven.).
- NOTE: When boiling vegetables for a puree, I find that very little additional liquid is necessary for the puree. I steamed my vegetables until soft.
- VARIATIONS:.
- In step 1, when you cook the cauliflower, add one or all of the following: 1 onion, diced; 2 garlic cloves, or 2 carrots, thickly sliced.
- PUREE de NAVETS (Turnip Puree): To use turnips in place of cauliflower, boil equal amounts of potatoes and turnips, cut into chunks, until tender, about 15 minutes for turnips and 30 minutes for potatoes. Prepare as above.
- PUREE de BROCOLI (Broccoli Puree): Substitute 3 pounds of broccoli for the cauliflower.

- Bring the water to a boil in a medium saucepan over medium-high heat. While the water is heating, arrange the cauliflower in a steamer basket and carefully situate it in the pan of water. Cover and steam until the cauliflower is tender when pierced with a sharp knife, anywhere from 10 minutes to 40 minutes, depending on the size of the florets and whether they’re fresh or thawed or frozen.
- Drain the cauliflower, reserving the cooking liquid. Return the cauliflower to the dry pan, return it to the burner, and cook, shaking the pan occasionally, until any excess water evaporates, about 1 minute.
- Remove the pan from the heat. Add the oil, salt, pepper, garlic powder, if using, yogurt, and Parmigiano-Reggiano and purée the cauliflower mixture with a handheld immersion blender or transfer the mixture to a food processor and process until light and smooth, about 1 1/2 minutes. If you prefer a thinner consistency to your cauliflower purée, add a little of the reserved cooking liquid, 1 tablespoon at a time, and stir until the puree reaches the desired consistency. Serve immediately.

- In a medium saucepan with a steamer basket, bring 2 inches of water to a boil over medium high heat. Add the cauliflower into a steamer basket, cover, and cook for 7 minutes.
- Add the peaches into the steamer basket on top of the cauliflower, fresh or frozen, cover and cook for an additional 3 minutes. If using frozen peaches, you may need to steam for an additional 2-3 minutes or until thawed. Reserve steamer water. Let slightly cool.
- Transfer the cauliflower and peaches into a blender. Add in ginger. Blend on high for 1-2 minutes or until smooth, adding in 1/4 cup of reserved steamer water if your puree is too thick. I didn’t add any extra water into my puree, but all peaches have a different water content, so use extra water if needed.
