Delicious and warm. Wake up and smell the coffee cake. I love this recipe, although it is a bit time-consuming.

1 cup white sugar
½ cup butter
1 egg
1 cup sour cream
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 egg
½ cup chopped pecans
½ cup brown sugar
⅓ cup all-purpose flour
⅓ cup butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Beat 1 cup white sugar, 1/2 cup butter, and 1 egg in a bowl until smooth. Add sour cream and vanilla extract; mix well. Stir in 3 cups flour, baking soda, and baking powder until mixture comes together in a sticky dough. Spread half the dough evenly into prepared baking dish.
  • Beat cream cheese, 1/2 cup white sugar, and 1 egg in another bowl until smooth. Spoon mixture into baking dish over dough. Drop remaining half of dough by spoonfuls over cream cheese mixture.
  • Mix pecans, brown sugar, 1/3 cup flour, and 1/3 cup butter in a bowl until mixture resembles a coarse crumble; sprinkle over dough.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

Polish Coffee Cake (my grandma's recipe!) image

A simple, yet mouthwatering yeast raised cake, with the most explosive amount of crumb topping! A recipe passed down through my family!

Yield 1 large cake

Number Of Ingredients 11

3 1/2 cups all purpose flour
3/4 cup white sugar
2 1/4 teaspoon active dry yeast
1/2 teaspoon salt
rind of 1 lemon, 2-3 TB
1 cup milk (I used 2%)
1/2 cup unsalted butter
3 eggs, beaten
1 cup white sugar
1 cup AP flour
1/2 cup cold butter

Steps:

  • In a large bowl, whisk together the flour, sugar, yeast, and salt. Grate in the lemon rind.
  • In a small saucepan on the stove, melt the butter and milk together over medium-low heat. Remove from heat, and allow to cool to about 108°, you don't want to kill your yeast because your milk is too hot. If it is really hot, to speed up the cooling process, I put it in the freezer for a few minutes.
  • Using a wooden spoon, begin to stir the milk mixture into the dry ingredients. Once halfway combined, stir in the eggs. Fold everything together until just blended.
  • Grease and flour a large baking pan. Pour in the batter, it will be thick, and spread evenly in the pan.
  • Cover and allow to rise until it doubles in size, 1-2 hours. I stick mine in the oven with the oven light on, it works pretty quick! (Just be sure not to turn your oven on while it's in there!)
  • When it's doubled in size, preheat your oven to 350°. (make sure it's not in there still!)
  • To make the crumb topping, aka the best thing ever, in a medium sized bowl, stir together the sugar and flour. Cut the butter in in chunks, and using a large fork, begin to mash the butter into the dry ingredients. After a couple minutes, I tend to just use my hand, its much more efficient, and you get a better crumb.
  • Using your hands, while simultaneously squeezing into chunks, spread the crumb topping across the risen cake.
  • Pop in the oven and bake for 25-30 minutes, until a toothpick inserted in the middle comes out clean. Allow to cool for a few minutes before devouring.

I am of Polish ancestry (both parents were Polish) and this is the recipe I came across recently that seems to be like the cheesecake we had at Easter when I was a child. This uses farmer's cheese or cottage cheese and Splenda. You can use regular sugar as well. The following note is what drew me to this recipe, because the cheesecake I had as a child was very dense and heavy: "NOTE: I found this filling to be heavy and dry, which surprised me as I assumed all the whipped ingredients would lighten it. I was wrong."

2 1/2 cups flour
2 teaspoons baking powder
1/2 cup sugar
1/4 cup butter or 1/4 cup margarine
2 eggs, beaten
1/4 cup milk
1 (20 ounce) can crushed pineapple, partially drained (just not dry)
750 g farmer cheese (I used a brand called Friendship found with the cream cheese packages)
150 g sugar or 150 g Splenda granular
3 tablespoons lemon juice
1/2 teaspoon salt
50 g cornstarch or 50 g potato flour
4 eggs, separated
1 cup heavy cream, whipped

Steps:

  • Preheat oven to 350ºF.
  • Pan sizes: 9x13 or 11x17-inches, depending on how high you want the cake. (I use 2 disposable foil pans, one inside the other. To remove from the pan after baking, I loosen the sides then cut the pan and peel it away).
  • OR you can line the foil pans with foil [;), and lift it out to cut.
  • COOKIE DOUGH:
  • Mix flour, baking powder, 1/2 cup sugar, and margarine.
  • Work as for pie dough.
  • Then add beaten eggs and milk.
  • Pat in pan which has been greased on bottom and sides.
  • Cover dough with pineapple.
  • CHEESECAKE FILLING:.
  • Cream the cheese with the sugar until very smooth.
  • Add lemon juice, salt and potato starch.
  • Add eggs yolks and beat slightly.
  • Beat heavy cream until soft peaks form.
  • Fold into the cheese mixture.
  • Beat egg whites until soft peaks form and fold into cheese mixture.
  • Pour cheese over pineapple.
  • TO BAKE:.
  • Bake for about one hour.
  • Test with knife in center to see if done.

8 ounces cream cheese (room temperature)

Steps:

  • Grease and flour (or spray with Pam) bottom and sides of a 9-inch spring form pan.
  • Combine flour and 3/4 cup sugar.
  • Cut in butter until mixture resembles coarse crumbs; reserve 1 cup of mixture setting aside.
  • To crumb mixture in bowl add baking powder, soda, salt, sour cream, 1 egg and almond extract blending well.
  • Spread batter in pan.
  • Combine cream cheese, 1/4 cup sugar, and 1 egg and poor over batter in pan.
  • Sprinkle reserved 1 cup of crumb mixture over all.
  • Bake at 350° 45 to 50 minutes or until cheese filling is set and cake is golden.
  • Cool at least 15 minutes before removing sides of pan slice and serve warm or at room temperature.

Number Of Ingredients 18

4-1/2 cups all-purpose flour
1/2 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1 cup sour cream
1/2 cup butter, cubed
1/2 cup water
2 large eggs
FILLING:
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1 large egg
1 teaspoon almond extract
1/8 teaspoon salt
GLAZE:
2 cups confectioners' sugar
3 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. In a small saucepan, heat sour cream, butter and water to 120°-130°; add to dry ingredients. Beat on medium speed 2 minutes. Add eggs and 1/2 cup flour; beat 2 minutes. Stir in enough remaining flour to form a firm dough. Do not knead. Cover and refrigerate for 2 hours., In a small bowl, beat filling ingredients until smooth; set aside. Turn dough onto a lightly floured surface; divide into four pieces. Roll each into a 12x8-in. rectangle. Spread filling to within 1/2 in. of edges. , Roll up, jelly-roll style, starting with a long side; pinch seams to seal and tuck ends under. Place, seams side down, on two greased baking sheets. With a sharp knife, make deep slashes across the top of each loaf. Cover and let rise in a warm place until doubled, about 1 hour. , Preheat oven to 375°. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks. Combine glaze ingredients; drizzle over warm loaves. Cool. Refrigerate leftovers.
