OVERNIGHT SALAD (SEVEN LAYER SALAD)
A perfect combination of layers dressed with a delicious homemade dressing makes for a gorgeous salad!

Steps:
- Combine all dressing ingredients in a small bowl and mix well.
- Place lettuce in the bottom of a large bowl (or 9x13 pan).
- Top with tomatoes, peas, onions and boiled eggs. Spread dressing overtop to seal the edges. Top with cheese.
- Cover salad and refrigerate at least 4 hours or overnight.
- Top with bacon before serving.

- In a 4-qt. or 13x9-in. glass dish, layer the first 5 ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover., Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight.

STAY CRISP LAYER SALAD
Steps:
- Wash greens, break into bite size pieces. Layer ingredients in a large container that seals in the order given. After all ingredients are used, spread the dressing over salad as you would in icing a cake. Sprinkle with Parmesan cheese. Seal bowl and refrigerate the salad overnight.
- Mix all the ingredients together. To serve salad, toss dressing well through the other ingredients.
OVERNIGHT LAYERED FRUIT SALAD
This recipe reminds me of the old "dinner on the ground" picnics from church during my childhood! It is a fruit version of the ever popular 7-Layer Salad. It should be made at least 8 hours ahead of time. It features oranges, apples and grapes atop a bed of shredded lettuce. Prep time and cooking time does not include the 8 hour chilling time! Steps:
- Place the shredded lettuce in a deep 2-quart glass serving bowl.
- Peel and section the oranges over a bowl, reserving the juice. Combine apple slices and orange juice; toss to coat. Layer apple slices over the lettuce; top with the orange sections and grapes.
- Combine mayonnaise and sour cream in a small bowl; stir well. Spread mayonnaise mixture over salad, sealing to the edge of the bowl. Sprinkle with cheese. Cover and chill at least 8 hours.
LAYERED OVERNIGHT SALAD
An excellent layered salad for a potluck. Often a big hit! Not sure why, but it's best when you let it rest in the refrigerator overnight before serving.

Steps:
- Chop head of lettuce and place in base of a glass bowl. Layer with 1/2 cup of green onions, celery slices, water chestnut slices, mushroom slices, and peas.
- Spread mayonnaise evenly over peas. Sprinkle with sugar, then garlic powder, and then Lawry's Seasoned Salt. Sprinkle top with parmesan cheese.
- Refrigerate for a few hours or overnight (overnight recommended).
- Just prior to serving, cover entire top with tomato slices and then with sliced hard-boiled eggs. Garnish with remaining 1/4 cup of green onions and crumbled, freshly cooked bacon (not bacon bits!).
- Serve and enjoy.

OVERNIGHT LAYERED CHICKEN SALAD
I like making this when I have friends coming for lunch the next day. I can have it all ready the night before, stick it in the fridge and turn my attention to other things. Using a store bought rotisserie chicken makes this even easier!

Steps:
- Spread lettuce evenly in a wide 4-quart glass serving bowl.
- Top with a layer each of bean sprouts, water chestnuts, onions, cucumber and chicken.
- Pat pea pods dry and arrange on top.
- In a small bowl, stir together mayonnaise, curry powder, sugar and ginger.
- Spread mayonnaise mixture evenly over pea pods.
- Cover and refrigerate for several hours or until the next day.
- Just before serving, garnish with nuts and tomato halves.
- To serve, use a spoon and fork to lift out servings, scooping down to the bottom of the dish to include all layers.
7 LAYER SALAD
This 7 layer salad recipe sounds like a bunch of vegetables thrown together, but every occasion people ask me if I will make this, it is really gooooooood. Overnight chilling not included in preparation time.
