Overnight Salad (Seven Layer Salad) image

A perfect combination of layers dressed with a delicious homemade dressing makes for a gorgeous salad!

Number Of Ingredients 11

1 head iceberg lettuce (chopped)
2 cups tomatoes (diced, or sliced cherry tomatoes)
2 cups frozen peas (defrosted (uncooked))
½ cup green onions (or red onions, sliced)
8 hard boiled eggs (cooled, peeled and chopped)
2 cups cheddar cheese (shredded)
8 slices bacon (cooked crisp and crumbled)
¾ cup sour cream
1 cup mayonnaise
2 tablespoons sugar
1 teaspoon seasoned salt

Steps:

  • Combine all dressing ingredients in a small bowl and mix well.
  • Place lettuce in the bottom of a large bowl (or 9x13 pan).
  • Top with tomatoes, peas, onions and boiled eggs. Spread dressing overtop to seal the edges. Top with cheese.
  • Cover salad and refrigerate at least 4 hours or overnight.
  • Top with bacon before serving.

Number Of Ingredients 10

1 medium head iceberg lettuce, torn
1 medium green pepper, chopped
1 small sweet red pepper, chopped
1 medium onion, sliced and separated into rings
2 cups frozen peas (about 10 ounces)
1 cup mayonnaise
2 tablespoons sugar
1 cup shredded cheddar cheese
12 bacon strips, cooked and crumbled
3/4 cup dried cranberries

Steps:

  • In a 4-qt. or 13x9-in. glass dish, layer the first 5 ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover., Sprinkle top with cheese, bacon and cranberries. Refrigerate, covered, overnight.

1 head iceburg lettuce
1 10-ounce package fresh spinach
1 bunch green onions, chopped
1 can peas, washed and drained
1 jar bacon bits
7 hard cooked eggs, chopped
8 ounces grated cheddar cheese
Parmesan cheese
1 cup sour cream
1/2 cup sugar
1/2 cup mayonnaise

Steps:

  • Wash greens, break into bite size pieces. Layer ingredients in a large container that seals in the order given. After all ingredients are used, spread the dressing over salad as you would in icing a cake. Sprinkle with Parmesan cheese. Seal bowl and refrigerate the salad overnight.
  • Mix all the ingredients together. To serve salad, toss dressing well through the other ingredients.

This recipe reminds me of the old "dinner on the ground" picnics from church during my childhood! It is a fruit version of the ever popular 7-Layer Salad. It should be made at least 8 hours ahead of time. It features oranges, apples and grapes atop a bed of shredded lettuce. Prep time and cooking time does not include the 8 hour chilling time! 2 cups iceberg lettuce, shredded, well-drained and dry
2 navel oranges
2 golden delicious apples, unpeeled and thinly sliced
2 cups green seedless grapes
1/3 cup mayonnaise
1/3 cup sour cream
1 cup mild cheddar cheese, shredded (4 oz)

Steps:

  • Place the shredded lettuce in a deep 2-quart glass serving bowl.
  • Peel and section the oranges over a bowl, reserving the juice. Combine apple slices and orange juice; toss to coat. Layer apple slices over the lettuce; top with the orange sections and grapes.
  • Combine mayonnaise and sour cream in a small bowl; stir well. Spread mayonnaise mixture over salad, sealing to the edge of the bowl. Sprinkle with cheese. Cover and chill at least 8 hours.

1 medium head iceberg lettuce
3/4 cup green onion (thinly sliced)
1 cup celery (thinly sliced)
10 ounces water chestnuts (pre-sliced)
1/4 lb fresh mushrooms (sliced)
10 ounces frozen peas (separated)
2 cups mayonnaise
2 teaspoons sugar
1 teaspoon garlic powder
1 teaspoon Lawry's Seasoned Salt
1 cup parmesan cheese (grated)
3/4 cup bacon (crumbled)
3 hard-boiled eggs (thinly sliced)
3 medium red beefsteak tomatoes

Steps:

  • Chop head of lettuce and place in base of a glass bowl. Layer with 1/2 cup of green onions, celery slices, water chestnut slices, mushroom slices, and peas.
  • Spread mayonnaise evenly over peas. Sprinkle with sugar, then garlic powder, and then Lawry's Seasoned Salt. Sprinkle top with parmesan cheese.
  • Refrigerate for a few hours or overnight (overnight recommended).
  • Just prior to serving, cover entire top with tomato slices and then with sliced hard-boiled eggs. Garnish with remaining 1/4 cup of green onions and crumbled, freshly cooked bacon (not bacon bits!).
  • Serve and enjoy.

I like making this when I have friends coming for lunch the next day. I can have it all ready the night before, stick it in the fridge and turn my attention to other things. Using a store bought rotisserie chicken makes this even easier!

6 cups shredded iceberg lettuce
1/4 lb bean sprouts
1 (8 ounce) can water chestnuts, drained and sliced
1/2 cup thinly sliced green onion, including tops
1 medium cucumber, thinly sliced
4 cups cooked chicken, cut into 2 to 3 inch strips
2 (6 ounce) packages frozen pea pods, thawed
2 cups mayonnaise
2 teaspoons curry powder
1 tablespoon sugar
1/2 teaspoon ground ginger
1/2 cup Spanish peanut
12 -18 cherry tomatoes, halved

Steps:

  • Spread lettuce evenly in a wide 4-quart glass serving bowl.
  • Top with a layer each of bean sprouts, water chestnuts, onions, cucumber and chicken.
  • Pat pea pods dry and arrange on top.
  • In a small bowl, stir together mayonnaise, curry powder, sugar and ginger.
  • Spread mayonnaise mixture evenly over pea pods.
  • Cover and refrigerate for several hours or until the next day.
  • Just before serving, garnish with nuts and tomato halves.
  • To serve, use a spoon and fork to lift out servings, scooping down to the bottom of the dish to include all layers.

This 7 layer salad recipe sounds like a bunch of vegetables thrown together, but every occasion people ask me if I will make this, it is really gooooooood. Overnight chilling not included in preparation time.

1 green pepper, chopped
1 cup celery (I leave this out)
1 small onion, chopped
1 cup frozen peas, uncooked
2 cups Miracle Whip (I use the Lite)
2 teaspoons sugar (You can use Equal or Sweet and Low)
1 (4 ounce) jar Bacos bacon bits (you can also use crumbled leftover bacon)
2 cups cheese, shredded

Steps:

  • Layer all of the above vegetables in order, evenly.
  • Cover with plastic wrap securely and refrigerate overnight.
