- Preheat oil in a deep-fryer to 350 degrees F.
- Remove the gills and stems from the underside of the mushrooms and trim the edges off. Slice into 1/4-inch strips.
- Measure flour into a pie plate. In another pie plate or bowl, combine panko, Parmigiano, parsley, red pepper flakes and salt and pepper.
- Dredge the mushrooms in flour, followed by the egg wash and finally in the panko.
- Working in batches, place the breaded mushroom slices in the hot oil and fry for 3 to 4 minutes, until golden brown. Drain on a paper towel lined sheet tray.

- Preheat an air fryer to 350 degrees F (175 degrees C).
- Rub 1 tablespoon olive oil over each mushroom. Sprinkle 1/2 teaspoon Italian seasoning inside each. Set mushrooms in the air fryer basket, cap sides up. Air fry for 3 minutes.
- Flip mushrooms over so that the cap is facedown in the basket. Divide pizza sauce between the 2 mushrooms. Cover with 2 tablespoons shredded mozzarella and 1 tablespoon sliced olives. Air fry for 3 minutes.
- Place 4 pepperoni slices on each pizza and cover with remaining mozzarella cheese. It is important to weigh the pepperoni down with cheese or the fan will blow them off the pizza.

- Preheat the oil in a deep fryer (or a large, heavy-based pot) to 350 degrees F.
- Wipe the tops of the mushrooms with a damp cloth to clean, and then scrape the gills off from the underside with the back of a spoon. Trim the stem and slice into 1/4-inch strips.
- Place the flour into a rimmed dish, the beaten eggs in a second rimmed dish and sprinkle both with some salt and pepper. In a third dish add the panko, some Italian seasoning, the paprika, garlic powder, and some more salt and pepper. Mix well. Dredge the mushroom "fries" in the flour, followed by the egg mixture and finally in the seasoned panko.
- Working in batches of 5 to 6, fry the mushrooms in the hot oil until golden brown and crunchy, about 4 minutes. Drain on a wire rack over some paper towels and season once more with salt.

- Wipe any excess dirt from one 8 oz. package of 'Baby Bella' Portobello mushrooms using a towel. Cut each mushroom into quarters and then cut each piece in half again (each mushroom will equal 8 pieces).
- Pour ½ cup flour onto a plate. Whisk 3 eggs in a bowl. Pour 1½ cups Panko breadcrumbs into a bowl. Add the garlic powder, onion powder, smoked paprika, Italian seasoning, salt and pepper. Stir until completely combined.Toss the chopped mushrooms in the flour until coated, then dunk the mushrooms in the eggs, and finally toss them in the spiced breadcrumb mixture until completely coated. Repeat with the remainder of the mushrooms.
- Arrange the mushrooms on a plate or flat surface. Spray lightly with a can of olive oil. Turn the Air Fryer 'On'. Set to 360°F and 7 minutes. Arrange ⅓ of the mushrooms in the Air Fryer basket. (Make sure the mushrooms are not over-crowded). Push the basket into the fryer and cook for 7 minutes.

- Clean the portobello mushrooms with a damp (paper) towel. Then place the portobello mushrooms onto a large plate or into a baking dish.
- Add the oil, balsamic vinegar, salt, Italian seasoning, black pepper, and garlic powder to a small bowl and mix well.
- Brush both sides of the mushrooms with the spice dressing. If your portobello mushrooms are very big, you might want to add some extra salt, pepper, or garlic powder to ensure good spice coverage.
- Preheat the air fryer to 380 degrees Fahrenheit.
- Once it's hot, add the mushrooms to the air fryer with the cap side down. You can spoon any of the leftover dressing into them at this point. Make sure that the portobello mushrooms fit into the air fryer in one layer without overlap. If you can't fit them in all at once, cook them in two batches.

FRIED PORTOBELLO PO'BOYS

- Marinate the mushrooms: Whisk the buttermilk and 1 tablespoon Cajun seasoning in a large bowl, then add the portobellos and toss to coat. Refrigerate for 4 hours.
- About 30 minutes before frying, make the slaw: Whisk the olive oil, vinegar, mustard, sugar, mustard seeds, garlic, a pinch of salt and a few grinds of pepper in a bowl. Add the coleslaw mix, red cabbage and scallions; toss lightly. Season with salt and pepper to your liking. Refrigerate until ready to serve.
- Bread the mushrooms: Combine the flour, remaining 1 tablespoon Cajun seasoning, the baking powder and a pinch each of salt and pepper in a large shallow dish. Remove the mushrooms from the buttermilk marinade and coat in the seasoned flour (you can also shake the mushrooms with the seasoned flour in a paper bag). Shake off any excess flour and transfer the breaded mushrooms to a large plate.
- Fill a large cast-iron skillet halfway with vegetable oil and fit the skillet with a deep-fry thermometer; heat the oil to 350˚ F. Line a baking sheet with paper towels and set a rack on top.
- Add 6 to 8 mushroom slices to the hot oil and cook 3 to 4 minutes, then flip and cook until golden brown, 2 to 3 more minutes. Remove to the rack. Repeat with the remaining mushrooms.
- Make the sandwiches: Lay the tomatoes and pickles on the bottoms of the bread, then top with the fried mushrooms, red onion and slaw. Close the sandwiches and cut each loaf in half.
