CLASSIC TURNIP AND APPLE CASSEROLE
I first had this recipe at my husband's aunt's home back in 1979; got the recipe from her and have been making it to serve with turkey dinner ever since. I love the apples and turnip together! If you want to make it ahead of time, you can; just make it up to the layering stage then cover tightly and refrigerate. Put topping on, though, just before it goes into the oven.

Steps:
- Preheat oven to 350F; butter a casserole dish (or spray with Pam) and set aside.
- Peel and dice turnip (this can be a tough job, as turnips are very dense) and place in a large pot.
- Cover with cold, lightly salted water and bring to a boil.
- Boil until turnip is tender (this takes longer than potatoes, usually), then drain and return to the pot.
- Mash turnip with the 1 tbsp butter and cream; stir in 1/4 cup brown sugar and the cinnamon; set aside.
- Peel apples, core, and slice.
- In prepared casserole dish, layer 1/3 of the turnip, then half the sliced apples, then 1/3 of the turnip, then the remaining apples, then the remaining turnip; smooth top.
- At this point, you could cover the dish tightly and refrigerate for several hours; don't put topping on until you're ready to pop this into the oven.
- When ready to bake, combine topping ingredients in a small bowl until they are crumbly; sprinkle over top of turnip.
- Bake in preheated oven for one hour; serve.

PURPLE TOP TURNIP AND APPLE SLAW

Steps:
- Peel turnips and slice into 1/4 inch slice. Stack slices on top of each other cut as thin as you can into matchsticks. Repeat with unpeeled apple.
- Place in a large bowl, and squeeze 1/2 lemon juice over apple so they don't turn brown.
- MAKING THE DRESSING:
- Combine remaining ingredients( except pumpkin seed ) in a glass jar with a tight fitting lid. Shake until combined.
- Mix pumpkin seed, dressing and slaw until combined. Serve chilled.
TURNIP AND APPLES
This is a great side dish for CHristmas, Thanksgiving or Easter Dinner. Even those who don't like Turnips love these. From the Best of Bridge, but tailored to how I like them.

- Peel, dice and cook turnip.
- Drain and mash with butter.
- Peel and slice apples.
- Toss with brown sugar and cinnamon.
- Arrange turnip and apple slices in greased casserole in alternate layers beginning and ending with turnips.
- Combine crust ingredients to a crumbly texture and pat on top of casserole.
- Bake at 350°F for one hour or until heated through.
- Prep time includes peeling and cooking turnip.
TURNIP SLAW
I found this recipe in a local newspaper when we moved to Arkansas almost 20 years ago. The recipe was said to be so good that even people "burned out" on turnips would like it. I'd never heard of slaw made from turnips, but I tried it and now my husband likes it better than cabbage slaw.

PURPLE APPLE COLE SLAW
I have not made this as yet. But was looking for recipes to serve next weekend when we are having guests who tend to like veggies. So wanted to do some experimentation. This recipe also looked like a way to use our plentiful apple crop! Cook time is minimum refrigeration time.

So I was browsing around and found some recipe for TURNIP COLE SLAW! Couldn't believe it... REALLY? TURNIP cole slaw? Let just say I wasn't really convinced. until one day I found myself with a head of green cabbage and two large purple top turnips that I didn't know what to do with since Boyfriend doesn't like them. I remembered the Turnip Cole Slaw. Now, I don't like cole slaw, and Boyfriend doesn't like turnips. I just happen to love turnips, and he loves cole slaw. So I threw this together, and he actually asked for more! I told him there were turnips in it and he said "Really?! its GOOD!" I served with oven fried chicken and biscuits, but I think it would be great on/or accompanying a BBQ pulled pork sandwich!
