LOADED CAULIFLOWER CASSEROLE WITH CHEESE AND BACON | KETO
Loaded cauliflower casserole is a side dish recipe that makes you feel like eating your veggies is a treat. Low Carb, Keto Friendly, this casserole is smothered in cheese, topped with bacon and sour cream. You have a piled up plate of goodness that makes you want to eat your veggies...twice.

- Preheat oven to 350
- You need to first steam your fresh cauliflower head. Break apart the head of the cauliflower and discard the green leaves. Steam cauliflower until a fork can easily be stuck into the vegetable. Mash cauliflower in a large mixing bowl. Season with salt and pepper.
- If you prefer to use cauliflower rice, you need approximately 6 cups of steamed cauliflower rice.
- Set aside 1 tablespoon shredded cheddar cheese and then add remaining cheddar cheese, sour cream, ranch seasoning, onion powder, garlic powder and 3 tablespoons of bacon bits to the cauliflower and mix well. If you are adding whole whipping cream as the optional ingredient, add at this stage.
- Transfer cauliflower into a small baking dish and heat for 35 minutes until hot.
- Remove from oven and immediately sprinkle with remaining cheddar cheese and 1 tablespoon bacon bits.
- Serve white hot and melty.

Yummy substitute for potatoes, side dish or my family liked it so much I think we could make it a meal. I mixed all ingredients together in the baking dish and skipped the extra dishes and I left out the mushrooms and decreased the amount of chives but when I entered the recipe I entered it just as I found it on facebook. My family is still raving about this dish.

Steps:
- Preheat oven to 425.
- In a large pot boil water and cook cauliflower for 8-10 minutes, drain and let cool.
- In a large bowl combine sour cream, mayonaise, 1/2 of crumbled bacon, 3 TBS chives, 1 cup cheese, mushrooms and caulflower, mix well.
- Place mixture in baking dish and cover with remaining 1 cup of cheese and bacon.
- Bake for 15-20 minutes until cheese is melted. Top with remaining chives and serve.
