1 tbsp sunflower oil
2 red onions , roots trimmed and cut into eighths
2 large pears , quartered and cored (leave the skin on)
few sprigs rosemary , leaves roughly chopped
4 pork steaks, about 175g/6oz each, trimmed of excess fat
50g blue cheese , cubed

Steps:

  • Heat the oil in a roasting tin on the hob (use 2 rings), then add the onions, pears, most of the rosemary and seasoning. Fry for 5 mins or until just starting to caramelise.
  • Heat grill to high. Season the pork, then arrange among the veg and fry for 5 mins, turning halfway until golden and cooked through. Scatter with the remaining rosemary and the cheese, grill until the cheese starts to melt, then serve.

4 boneless pork chops, centre cut, 3/4 inch thick
2 teaspoons vegetable oil
2 tablespoons lemon juice
2 tablespoons sugar
2/3 cup white wine (could use apple juice)
1/2 cup chicken stock
2 pears, peeled cored, thinly sliced
2 teaspoons cornstarch
1/2 teaspoon ground ginger
salt and pepper

Steps:

  • Trim fat from porkchops.
  • In larg non stick skillet heat oil (med heat).
  • Cook pork 3-5min per side.
  • Transfer to dish and cover with foil to keep warm.
  • Add the lemon juice and the sugar to the pan and stir contantly abd cook until golden.
  • Stir in wine and chicken broth.
  • Add pears and cook uncovered for 5-7 minutes or until tender.
  • Mix cornstarch with 2 tsp water.
  • Add salt and pepper to taste.
  • Add ginger.
  • Return pork chops to skillet and heat through.
  • ***I serve this with rice.

PORK TENDERLOIN WITH PEARS AND GINGER-BEER SAUCE



Pork Tenderloin With Pears and Ginger-Beer Sauce image

1 teaspoon vegetable oil
2 pork tenderloins
2 teaspoons salt
Freshly ground pepper to taste
8 medium-size red-skinned potatoes, quartered
15 Seckel pears, peeled, stemmed and cored through the bottom
2 cups ginger beer

Steps:

  • Preheat oven to 375 degrees. Heat the oil over medium-high heat in a flameproof, ovenproof roasting pan. Season the pork with 1 teaspoon of the salt and pepper, and place in the pan. Cook until browned on all sides, about 6 minutes. Remove the pork from the pan and set aside. Add the potatoes to the pan and season with the remaining teaspoon of salt and pepper to taste. Roast for 15 minutes.
  • Add the pears to the pan and roast with the potatoes for 5 minutes longer. Push the potatoes and pears to the edge of the pan and place the pork tenderloins in the center. Roast until the pork is only slightly pink in the center, about 15 minutes. Remove the pork, potatoes and pears from the pan and place the pan over medium heat. Add the ginger beer and cook, stirring and scraping the bottom of the pan. Let reduce to 1/2 cup, about 5 minutes.
  • Cut the pork into inch-thick slices. Divide the pork, potatoes and pears among 4 plates and spoon sauce over each. Serve immediately.

1 cup pear juice (should be opaque and pulpy, not clear)
1/2 cup soy sauce
1/4 cup honey
1 tablespoon freshly grated ginger
1 teaspoon sesame oil
4 cloves garlic, grated on a rasp
Freshly ground black pepper

Steps:

  • Combine the pear juice, soy sauce, honey, ginger, sesame oil and garlic in a small pot over medium heat. And a few grinds more than normal of black pepper. Bring to a boil, then remove from the heat and allow to cool completely. Use as desired.

2 tablespoons vegetable oil
4 1/2-inch-thick boneless pork loin chops
Dried rubbed sage
All purpose flour
2 pears, peeled, cored, thinly sliced (about 1 pound)
1/3 cup dry white wine
2 tablespoons sugar
2 tablespoons chopped crystallized ginger

Steps:

  • Heat oil in heavy large skillet over medium heat. Season pork with dried sage, salt and pepper. Coat pork with flour; shake off excess. Add pork to skillet and sauté until brown, about 3 minutes per side. Transfer to platter.
  • Drain fat from skillet. Add pears and sauté over medium heat 2 minutes. Stir in wine, sugar and ginger, scraping up any browned bits. Increase heat to high and boil until pears are tender and syrup is thick, about 5 minutes. Return pork and any accumulated juices to skillet. Simmer just until cooked through, about 1 minute. 1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons olive oil
2 bosc pears, cut into eighths
1 cup leek, sliced
1 tablespoon fresh ginger, minced
1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
1 cup chicken stock
2 tablespoons apple cider vinegar

Steps:

  • Sprinkle pork chops on both sides with the salt and pepper.
  • In a skillet heat oil over a medium heat and add the pork chops. Cook for 3-4 minutes per side, or until slight hint of pink remains in the centre of the chop. Place aside.
  • Add pears, leeks and ginger to skillet. Sprinkle with the sugar. Let cook stirring occasionally until the leeks and pears are starting to turn brown.
  • Pour in stock and vinegar. Simmer for 5 minutes or until pears are soften and sauce is reduced slightly.
  • Return pork to skillet and simmer for another 2 minutes until pork is cooked through.

500g red cabbage , finely shredded
2 ripe pears , peeled and cut into chunks
small piece fresh ginger , grated
250ml vegetable stock
2 tbsp balsamic vinegar
50g walnut , roughly chopped
450g pork fillet , trimmed of all visible fat
2 tsp olive oil
2 tsp wholegrain mustard

Steps:

  • Put the cabbage, pears, ginger, stock and vinegar into a pan. Bring to the boil, then reduce heat. Cover, then gently cook, stirring occasionally, for 40 mins. Stir in the walnuts.
  • Split the pork fillet almost in half down its length, then open out like a book. Rub on all sides with the oil and smear with mustard. Grill for 15 mins, turning once, until the pork is browned and just cooked. Cover with foil, rest for 2 mins, then slice and serve with the cabbage.

½ cup all-purpose flour
1 ½ tablespoons peanut oil
¼ cup chicken broth
¼ cup water

4 (4 ounce) boneless pork chops, select a thicker cut and trim all visible fat
salt & freshly ground black pepper
2 teaspoons canola oil or 2 teaspoons corn oil
3 tablespoons cider vinegar
2 tablespoons sugar (I think you can do this with Splenda by adding it closer to the end of the preparation)
2/3 cup white wine, dry would be best
1 cup reduced-fat chicken broth
1 firm ripe bosc pears or 1 Anjou pear, peeled, cored and cut lengthwise into eighths
1/4 cup fresh ginger, peeled and cut into thin julienne strips
6 scallions, trimmed and sliced into 1/2 inch lengths
2 teaspoons cornstarch
2 teaspoons water

Steps:

  • Season porkchops with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork and cook until browned and just cooked through, two to three minutes per side. Transfer to a plate and keep warm. Pour off fat from the pan.
  • Add vinegar and sugar to the pan and stir to dissolve the sugar. Cook over medium-high heat until the syrup turns dark amber, 10 to 20 seconds. Pour in wine and bring to a simmer while stirring.
  • Add broth, pears and ginger to the wine-vinegar sauce bring to a simmer. Cook, uncovered, turning the pears occasionally, for 4 minutes. Add scallions and cook until the pears are tender, about 2 minutes more.
  • Mix together the water and cornstarch into a slurry and add to the pan. Stir until the sauce thickens. Reduce heat to low and return the pork and any accumulated juices to the pan; turn to coat with the sauce.

2 garlic cloves, thinly sliced

  • Preheat oven to 475 degrees. With a paring knife, cut 10 small slits in each tenderloin. Stuff slits with garlic and thyme; season pork with salt and pepper. 1 ½ quarts water
5 tablespoons kosher salt
2 tablespoons white sugar
6 pork loin chops, 1/2 inch thick
½ cup olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, minced
½ cup balsamic vinegar
1 tablespoon butter
1 tablespoon olive oil
2 Vidalia onions, each cut into 8 wedges
2 pears, cored and each cut into 8 wedges
1 teaspoon salt

Steps:

  • In a large bowl, stir together the water, kosher salt, and sugar. Add pork chops to this brine, and let them soak for no more than one hour. Drain and discard the brine. Pat pork chops dry with paper towels.
  • In a shallow dish, stir together the olive oil, garlic, and rosemary. Place pork chops in the dish, and turn to coat. Cover, and marinate in the refrigerator for at least 1 or 2 hours.
  • Pour the balsamic vinegar into a small saucepan. Bring to a boil, and cook until reduced by 1/2, about 10 minutes. When the vinegar cools, it should be the consistency of syrup.
  • Melt butter with olive oil in a large skillet over medium-high or high heat. Add the onions and pears, and quickly brown being careful to keep the wedges intact. Once the onions and pears are browned, reduce heat to low, and cook for about 7 minutes, or until tender. Stir in the reduced vinegar and salt. The recipe can be prepared up to this point several hours before grilling.
  • Preheat the grill for medium-high heat.
  • Warm pears on a cool section of the grill (in the skillet), while placing the pork chops over the hot part. Cook pork for about 3 minutes per side, or to desired doneness. Remove to a serving plate, cover with aluminum foil and let rest for a few minutes. Uncover, top with the pear onion sauce, and serve.
