1 1/4 lbs ground turkey
1 yellow onion, chopped
3 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 cup chicken broth
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon cracked black pepper
1 tablespoon butter

Steps:

  • In a 4 1/2 quart pot/pan brown the ground turkey over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add tomato paste and crushed tomatoes, stirring until all is combined.
  • Add chicken broth to thin it down a little bit.
  • Add spices, butter, and salt and pepper and allow to simmer over low heat for about 15 minutes (just long enough to boil the water and cook the pasta!).
  • Taste and adjust seasonings to preference.

1 tbsp olive oil
2 onions, finely chopped
500g turkey mince (thigh is best)
1 garlic clove, crushed
2 x 400g cans chopped tomatoes
1 tbsp chipotle paste
300ml chicken stock
400g large pasta shells
250g tub mascarpone
200g cheddar, grated
2 tbsp grated parmesan

Steps:

  • Heat the olive oil in a large pan. Add the onions and cook for 8-10 mins until softened. Add the mince and brown all over. Once browned, add the garlic, tomatoes, chipotle paste and chicken stock, and bring to the boil. Turn down to a simmer and cook, uncovered, for 35-40 mins, adding a splash of water if it looks too dry.
  • While the turkey cooks, boil the pasta following pack instructions, then drain, reserving some of the water. Warm through the mascarpone with a splash of the hot pasta water over a low heat. Add 140g cheddar, season and stir to combine.
  • Heat oven to 200C/180C fan/gas 6. Transfer the turkey sauce to a large baking dish. Stir the cheese sauce through the pasta and pour over the mince. Sprinkle the remaining cheddar and the parmesan on top. Bake in the oven for 20 mins or until golden and crisping at the edges.

1/4 cup extra-virgin olive oil
1 onion, chopped
4 garlic cloves, minced
1 carrot, peeled and finely chopped
1 celery stalk, finely chopped
1 pound shredded cooked turkey (preferably dark meat)
3 cups marinara sauce
1/4 cup chopped fresh basil leaves
Salt and freshly ground black pepper
1 pound spaghetti
Freshly grated Parmesan

Steps:

  • Heat the oil in a heavy large frying pan over medium heat. Add the onion and garlic and saute until translucent, about 5 minutes. Add the carrot and celery and saute until the vegetables are tender, about 5 minutes. Add the turkey and saute 1 minute. Add the marinara sauce. Decrease the heat to medium-low and simmer gently for 15 minutes to allow the flavors to blend, stirring often. Stir in the basil. Season the sauce, to taste, with salt and pepper. (The sauce can be made 1 week ahead. Cool the sauce completely, then transfer it to a container and freeze for future use. Bring the sauce to a simmer before using.)
  • Meanwhile, cook the spaghetti in a large pot of boiling salted water until just tender but still firm to bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat, adding enough reserved cooking liquid to moisten as needed. Serve with the Parmesan.

9 oz pasta (250 g, Note 1)
2 tablespoons butter (divided)
1 medium onion (about 100 g/ 3.5 oz)
1 large garlic clove
1 tablespoon all-purpose flour
1 cup milk (250 ml)
1 1/2 cup grated Gouda (150 g, Note 2)
1 teaspoon Dijon mustard
a few gratings of nutmeg
1 1/4 cup chopped leftover turkey (150 g. Note 3)
2 eggs
1 teaspoon fine sea salt (more or less to taste)
freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees Fahrenheit/ 200 degrees Celsius. Lightly grease a casserole dish of about 10x8 inches/ 25x20 cm.
  • Cook noodles: Bring a large pot of water to a boil. Salt the water and cook the noodles according to the package instructions. Let drain well.
  • Cook onion: In the meantime, halve and slice the onion. Heat 1 tablespoon of the butter in a non-stick saucepan. Cook the onion slices for 4-5 minutes or until golden. Add the finely chopped garlic and stir for another minute. Remove to a bowl or small plate.
  • Make white sauce: Melt the remaining tablespoon of butter in the same saucepan. Sprinkle the flour on top and stir it for one minute. Slowly start adding the milk while whisking all the time to avoid the formation of clumps. If you do happen to have too many clumps anyway, you can save the sauce by blending it shortly with a handheld blender. Let the sauce bubble gently for about 2 minutes while stirring very often. Then, take it off the heat and stir in ¾ of the grated cheese, mustard, nutmeg, salt and pepper.
  • Separate the eggs. Add the egg yolks to the sauce and stir very well to incorporate. In a clean bowl, whisk the egg whites until soft peaks form. Gently fold the egg whites into the sauce.
  • Assemble the dish: Place the cooked pasta and the chopped turkey meat into the prepared casserole dish and mix them well. Pour the sauce over the noodles in the casserole dish and mix everything together.
  • Bake: Sprinkle the remaining cheese on top and bake the noodle turkey casserole for about 20 minutes until heated through and golden.
  • Rest for about 5 minutes and serve as suggested above.

12 oz. medium shell pasta (or pasta of choice)
1 lb (16 oz.) ground turkey
3 Tbsp. Olive oil
2 cloves garlic, minced
1/2 large red bell pepper, diced
4 oz. white mushrooms, sliced
1/2 large white onion, diced
1 tsp. salt (taste and add more as desired)
1/2 tsp. pepper
1 tsp. Italian Seasoning
2 Tbsp. flour
2 cups beef broth (or chicken broth)
1 can (15oz.) tomato sauce
1 cup heavy cream
1/2 cup Parmesan cheese

Steps:

  • Boil water for pasta and follow directions on the shell pasta box. Typically 8-10 minutes to cook medium shells.
  • In a dutch oven or wide stock pot, heat 2 Tbsp. of the olive oil over medium heat and cook the ground turkey. Season the ground turkey with salt and pepper. Once cooked, place ground turkey in a bowl and set aside.
  • Then place remaining tablespoon olive oil in the same pan. Sauté the garlic, bell peppers, mushrooms and onions with salt, pepper and Italian seasoning until fragrant (about 5 minutes, stirring occasionally). Then whisk in the flour until combined. Pour in the beef broth and tomato sauce and let it come to a simmer. Then add in the cooked ground turkey.
  • Pour in the cooked shells or pasta of choice, heavy cream and Parmesan. Stir to combine. Taste and adjust salt and pepper, as desired. If you would like it creamier, add more heavy cream.
  • *Optional to make a pasta bake: place pasta in an oven safe dish (or leave in dutch oven) and bake at 350° F. for and additional 20 minutes. You can top with more Parmesan if desired. Enjoy.
  • Other seasonings that make a great addition, but not necessary include garlic power, onion powder, red pepper chili flakes, dried oregano and cayenne.

3 cups (10 oz) whole wheat penne/fusilli pasta (uncooked)
4 - 5 cups kale ( stems removed & chopped)
1 large onion ( finely chopped)
4 large garlic cloves ( minced)
1 tbsp olive oil ( extra virgin)
1 tbsp oregano (dried)
1 tsp rosemary (dried)
1 tsp basil (dried)
Pinch of red pepper flakes
1/2 tsp salt
Ground black pepper ( to taste)
28 oz tomato sauce (low sodium)
1 tbsp honey or maple syrup
1 tbsp balsamic vinegar
1 cup pasta water
2 cups 6 oz mozzarella cheese (shredded & divided)
1/3 cup Italian parsley (chopped)
Cooking spray (I use Misto)

Steps:

  • Cook pasta al dente as per package instructions, undercooking by 4 minutes. Drain, reserving 1 cup of pasta water, and set aside. Preheat oven to 350 degrees F and spray 9 x 13 baking dish with cooking spray.
  • In the meanwhile, preheat large skillet on medium heat and add olive oil. Add onion and garlic, sauté for 2 - 3 minutes, stirring occasionally. Add oregano, rosemary, basil, pinch of red pepper flakes, salt and pepper. Cook for 30 seconds, stirring a few times. Add ground turkey and cook for another 5-7 minutes, breaking meat into pieces and stirring occasionally.
  • Add tomato sauce, honey, balsamic vinegar and pasta water. Stir, bring to a boil and simmer for 2 minutes. Add kale and stir to combine.
  • Now add cooked pasta and stir to combine more.
  • Transfer half of the mixture in previously prepared baking dish and sprinkle with 1 cup cheese. Add remaining pasta meat mixture and sprinkle with remaining 1 cup cheese. Cover with foil and bake for 20 minutes.
  • Remove from the oven, let stand for 10 minutes, garnish with parsley and serve hot. With a glass of red wine. OMG, so good!

300 g pasta (I use fusilli, but penne, spaghetti and linguine all work well too)
2 tablespoons olive oil
1 onion (sliced)
150 g mushrooms ((or other vegetables), sliced)
3 cloves garlic
300 g leftover turkey or chicken (shredded (see note))
300 ml double (heavy) cream
Salt and pepper to taste
4 tablespoons fresh parsley (finely chopped (or another herb - fresh sage or basil also work well))
Grated parmesan to serve

Steps:

  • Cook the pasta in boiling salted water according to your preferences or the packet instructions.
  • Meanwhile, put the olive oil and onions in a pan and cover with a lid. Cook over a low heat, stirring occasionally, for about 3 minutes, or until the onions have softened but not coloured.
  • Turn the heat up and add the mushrooms, fry for 3 minutes, stirring frequently, until the mushrooms and onions have browned nicely.
  • Lower the heat again and add the garlic and the turkey and cook for a further 2 minutes. Add the cream, salt and pepper, and cook for a further 5 minutes until the turkey is piping hot all the way through and the sauce has reduced slightly.
  • Meanwhile drain the pasta, reserving a couple of tablespoons of the cooking water.
  • Tip the pasta and cooking water into the sauce and stir to combine. Sprinkle over half the parsley and stir again.
  • Serve garnished with extra parsley and lots of parmesan cheese!

1 tablespoon canola oil (be generous here)
1 lb ground turkey
1 small onion, chopped
1 medium fresh tomato (chopped into a dice) (optional)
1 (15 ounce) can tomato sauce
1 cup elbow macaroni, cooked
1 teaspoon garlic powder or 1 fresh garlic clove, minced
1 teaspoon italian seasoning or 1 tablespoon fresh oregano
2 cups frozen peas
1/4 teaspoon kosher salt (to taste)
1/4 teaspoon ground pepper (to taste, we like pepper)
1 teaspoon capers (decrease salt to 1/8 teaspoon so not to salty) (optional)
1/4 cup of grated parmesan cheese

Steps:

  • Heat oven to 359 degrees. (Just checking here, you did see that -- right? It's 350 degrees. however, I think if you can get 359 that would be fine too).
  • In a non-stick skillet, place ground turkey and onion and cook for 8-9 minutes until no longer pink. Breaking up meat, and stirring.
  • Drain if necessary.
  • Using a 2 quart casserole dish, add turkey, onion, and rest of ingredients, (except Parmesan Cheese) right into the casserole. Fold in these ingredients until combined. Check for taste.
  • Cover with foil or lid of casserole and bake for approximately 30 minutes.
  • When serving sprinkle Parmesan cheese over top.

Steps:

  • Heat the oil in a large, high-sided skillet or Dutch oven over medium high heat until it shimmers and then add the ground turkey with 1 teaspoon kosher salt, 1 teaspoon 1 teaspoon ground cumin, the oregano, 1/2 teaspoon black pepper and the crushed red pepper. Break up the turkey with the spices and cook for about 5 minutes.
  • Add the onion, red bell pepper, and pressed garlic and cook for another 5 minutes or until the turkey is browned and the veggies soften.
  • Add the canned tomatoes with green chiles to the skillet or pot with the rest of the kosher salt, cumin, black pepper, chili powder and stir.
  • Add the penne pasta and cover with the chicken broth, bring to a boil, turn down to a simmer, cover and cook until the pasta is just tender, about 8 minutes, stirring occasionally.

1 tablespoon olive oil (or avocado oil)
1 yellow onion (peeled and minced)
3 cloves garlic (minced)
3 cups cooked turkey (roughly chopped (about 3/4 pound))
12 ounces dried gemelli pasta (or similarly sized pasta like fusilli or penne (about 3 cups))
1/2 cup marinated artichoke hearts (removed from liquid and chopped)
1/2 cup sun-dried tomatoes (packed in oil) (removed from their oil and chopped)
2 cups pasta sauce ("rosee" or your favourite variety)
3 cups unsalted chicken broth (divided)
1/2 cup half-and-half (or pasta sauce or unsalted chicken broth)
1/2 to 1 teaspoon crushed red pepper flakes (or to taste)
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt (optional)
10 ounces shredded mozzarella cheese (about 2.5 cups)
Freshly chopped parsley (garnish to taste (optional))

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Meanwhile, heat olive oil in a 12-inch heavy oven-safe sauté/deep pan over medium heat on the stovetop, then add onion and cook, stirring often, for 3 to 5 minutes or until softened. Stir in garlic and cook for 1 minute. Stir in cooked turkey, uncooked pasta, artichoke hearts and sun-dried tomatoes.
  • Next, pour in pasta sauce (take 1/2 cup of the chicken broth and rinse out the jar of pasta sauce to get every last bit and pour that in too), remaining 2.5 cups of chicken broth, half-and-half, crushed red pepper flakes, black pepper and salt (if using). Stir to combine everything, ensuring pasta is submerged in the liquid. Keep the pot over the heat for 3 to 4 minutes just to let the liquid start to warm before placing into the oven.
  • Top with shredded mozzarella cheese and bake (uncovered) for about 45 to 50 minutes (check on at the 45 minute mark) until bubbly, the pasta is cooked through and the cheese on top is melty and a little golden brown. Note: Ovens vary. If your cheese browns too quickly, you can loosely cover with aluminum foil (ensuring the aluminum foil isn't touching the cheese).
  • Once done, carefully remove from the oven and let cool for about 10 to 15 minutes (don't skip this step) before garnishing with parsley (if using) and serving. Enjoy!

4 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 pound ground turkey
1 teaspoon dried oregano
1 teaspoon fennel seeds
1 28-ounce can plum tomatoes
Salt and freshly ground black pepper
Pinch of hot red pepper flakes
2 tablespoons chopped Italian parsley

Steps:

  • Heat the oil in a heavy skillet. Add the onion and saute until soft and barely beginning to brown. Add the garlic and stir.
  • Add the turkey and cook over medium heat, stirring, until the meat is uniformly broken up and loses its color. Stir in the oregano and fennel.
  • Drain the tomatoes, reserving the juice. Break them up and add to the turkey. Bring to a simmer and cook, stirring from time to time, for about 20 minutes, until the sauce has thickened. Season to taste with salt, pepper and hot pepper flakes.
  • Before serving, reheat the sauce, adding a little of the reserved juice if the sauce is too thick. Sprinkle with parsley.

1 pound turkey Italian sausage links, casings removed
1/2 cup chopped green onions
2 garlic cloves, minced
2 teaspoons olive oil
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1/2 cup white wine or chicken broth
1 cup loosely packed fresh basil, minced
1 teaspoon dried oregano
Hot cooked spaghetti
1/2 cup shredded Parmesan cheese

Steps:

  • In a large nonstick skillet, cook the sausage, onions and garlic in oil over medium heat until sausage is no longer pink; drain. , Add the tomatoes, wine, basil and oregano; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until heated through. Serve over spaghetti; sprinkle with cheese.

3 thick rashers streaky bacon or pancetta, diced small
olive oil
1 medium onion, chopped
1 clove garlic, chopped
leftover turkey, chopped fairly small
200g/7oz fresh or frozen peas
2-3 tbsp double cream
salt and pepper
200-300g tagliatelle, cooked according to packet instructions
fresh Parmesan

Steps:

  • In a heavy frying pan fry the bacon or pancetta until just crispy. Turn the heat down, then add the onions and garlic and cook gently until soft but not coloured.
  • Add the peas and a splash of water and allow to bubble for a couple of minutes. When the pan is almost dry again add the turkey and heat through.
  • Add the cream and season well with salt and black pepper. Allow to bubble until the cream has reduced a little and the sauce has a nice coating consistency.
  • Serve tossed with the cooked tagliatelle, with plenty of fresh grated Parmesan on the table.

1/2 cup dry white wine
1/2 cup chopped fresh parsley
1/2 cup chopped fresh basil or 1 1/2 teaspoons dried
4 teaspoons chopped fresh oregano or 2 teaspoons dried
12 ounces penne, freshly cooked

Steps:

  • Heat olive oil in heavy large Dutch oven over medium-high heat. Add chopped garlic and sauté until tender, about 3 minutes. Add ground turkey and sauté until beginning to brown, breaking up large chunks with spoon, about 8 minutes. Add crushed tomatoes with puree, white wine, parsley, basil and oregano. Reduce heat to medium-low and simmer mixture until thickened to sauce consistency, about 30 minutes. Season sauce to taste with salt and pepper. Add pasta to sauce and toss to combine.

3 tablespoons unsalted butter, plus more for buttering the pan
8 ounces spaghetti
1 teaspoon ground cumin
4 scallions, sliced (green and white parts kept separate)
3 cloves garlic, chopped
2 tablespoons all-purpose flour
2 cups whole milk
2 cups shredded Mexican blend cheese
2 cups shredded Monterey Jack cheese
4 cups shredded cooked turkey
1 to 2 tablespoons sliced pickled jalapenos, chopped, plus 1 tablespoon brine
1 medium tomato, chopped

Steps:

  • Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Butter a 9-by-13-inch baking dish.
  • Cook the spaghetti according to the package instructions. Drain and then rinse. Shake off any excess water and transfer to the prepared baking dish.
  • Melt the butter in a large saucepan over medium heat. Add the cumin, scallion whites and garlic and cook, stirring, until soft, about 4 minutes. Sprinkle in the flour and cook, stirring, until completely absorbed, about 1 minute. Add the milk, 1 teaspoon salt and a few grinds of pepper and cook, stirring, until the sauce is heated through, steaming and thickened slightly, about 5 minutes. Remove from the heat and add small handfuls of half of each cheese, stirring to melt after each addition.
  • Stir in the turkey, pickled jalapenos, brine and tomatoes. Adjust the seasoning with salt and pepper.
  • Pour the sauce over the cooked spaghetti, using a wooden spoon or rubber spatula to evenly distribute the turkey into the pasta. Sprinkle the top with the remaining cheeses. Bake, uncovered, until melted and bubbly, 25 to 30 minutes. Sprinkle with the scallion greens.
