Honey Baked Apples with Raisins and Cinnamon image

This dish is well suited to apples with a high moisture content, such as Jonagold, Braeburn and Gala; they soften nicely and produce a full-flavored juice that can be spooned over the top of the apples when served.

3 1/2 cups apple cider
1/2 cup packed brown sugar, plus 2 tablespoons
1/3 cup honey (preferably 100 percent raw honey from a small producer)
1 teaspoon ground cinnamon
1/8 teaspoon salt
Pinch freshly ground pepper
6 unpeeled Braeburn, Golden Delicious or McIntosh apples, halved and cored with a melon baller
1/2 cup golden raisins or currants
1/2 cup dried apricots, julienned
6 whole cloves
2 or 3 star anise pods
2 to 3 cinnamon sticks, optional
1/4 cup apple brandy

Steps:

  • In a medium saucepan, combine the apple cider, brown sugar, honey, cinnamon, salt, and pepper. Bring to a boil, reduce heat, and simmer for about 25 minutes or so, or until mixture is syrupy and reduced to about 2 2/3 cups.
  • Preheat the oven to 350 degrees F. Put the apples, cut side down, in a 12-inch baking pan. Distribute the raisins, apricots, cloves, star anise, and cinnamon sticks, if using, over the apples. Pour the hot syrup over the apples. Cover the pan with aluminum foil.
  • Bake 25 to 30 minutes, or until the apples are almost tender when pierced with the tip of a sharp knife. Remove from the oven, turn the apples over, add the brandy. Baste apples with the apple cider and apple brandy many times, allowing the apples to absorb the flavor. Let the pan stand, covered, for 15 minutes. Serve baked apples with the liquid and dried fruits spooned over them in a bowl. Served with whipped heavy cream or ice cream and a sprinkle of powdered sugar.

While this next-level cake isn't traditional, it's a fun dessert you can serve for the holiday or really anytime you want to impress. Scented with warm spices like cinnamon, cardamom, allspice and nutmeg, it requires just two bowls and no special equipment to whip up. And that's not even the best part: When you cut into the loaf, entire slices of tart apples are revealed. At the very end, everything is drizzled with a salted honey glaze for a dessert that is sure to knock their socks off.

Nonstick cooking spray
3 Granny Smith apples (about 1 pound 6 ounces), peeled and cored with an apple corer
1 3/4 cups all-purpose flour
3/4 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Kosher salt
2 large eggs
1/2 cup vegetable oil
1/4 cup buttermilk
1 tablespoon pure vanilla extract
1/2 cup plus 1 tablespoon honey
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8 1/2-by-4 1/2-inch loaf pan with nonstick cooking spray.
  • Stand each apple upright (with what would have been the stem-side up) on a cutting board. Working with 1 apple at a time, slice the apples vertically 1/4 inch thick, squeezing together the slices to keep the shape of the whole apple as intact as possible. Immediately place it into the prepared loaf pan, keeping the shape of the whole apple intact with the slices parallel to the long sides of the pan. Repeat with the remaining 2 apples.
  • Combine the flour, sugar, baking powder, cinnamon, cardamom, allspice, nutmeg and 1/2 teaspoon salt in a medium bowl. Whisk together the eggs, vegetable oil, buttermilk, vanilla and 1/2 cup honey in another medium bowl until smooth. Add the flour mixture to the honey mixture and whisk until the batter is smooth. Pour the batter over the apples in the loaf pan, scraping the bowl with a rubber spatula to make sure all the batter is used. Gently tap the pan 3 times on the counter to evenly distribute the batter throughout the apples.
  • Bake until a toothpick comes out with just a few moist crumbs, about 1 hour. Transfer the pan to a wire rack and let the cake cool completely, 1 hour to 1 hour 15 minutes. Invert the cake onto a serving platter.
  • Whisk the confectioners' sugar with 1 teaspoon water, 1/4 teaspoon salt and the remaining 1 tablespoon honey in a small bowl until smooth. Drizzle the glaze over the top of the cake. Serve at room temperature. Store in an airtight container for up to 1 week.

6 ounces dried apricots, cut in half,each half cut into thirds
1 cup white wine
2 tablespoons sugar
1/2 teaspoon ground coriander
1/3 cup golden raisin
1 tablespoon butter
1/2 cup cashews or 1/2 cup almonds, toasted and coarsely chopped
1 lemon, juice and zest of
3 large baking apples
1 cup white wine
1/2 cup honey
1/2 teaspoon ground coriander
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
thick Greek yogurt or sour cream

Steps:

  • Put apricot pieces, wine and sugar in small saucepan; bring to the boil, reduce heat, cover and simmer for 15 minutes; add raisins and continue to simmer for a further 5 minutes; remove from heat and stir in butter until it is melted; stir in lemon zest and cashews and cool completely (can be prepared to this point up to 1 day in advance; cover and refrigerate)
  • Peel and core the apples, then cut in half lengthwise, resulting in 6 halves with an indentation down the length; as each one is peeled and cored, rub with reserved lemon juice to discourage discolouration; place apples, rounded side down, in glass baking dish just large enough to hold them in one layer; evenly distribute apricot filling amongst the 6 apple halves, mounding slightly at middle
  • Preheat oven to 350°F
  • In a small saucepan, bring all the honey syrup ingredients, plus any lemon juice remaining, to the boil; boil rapidly for 5 minutes to thicken syrup slightly, being careful not to let mixture boil over; remove from heat and spoon over apples
  • Bake apples until tender when pierced with a sharp knife, about 45-55 minutes, basting 3-4 times; allow to cool 20 minutes before serving
  • These baked apples are very rich and an excellent contrast would be some crème fraiche, thick greek yoghurt or sour cream; a dollop on each apple, with some of the juices spooned over, is very nice

4 medium cooking apples
1/4 cup walnuts, chopped (optional)
1/4 cup golden raisin
1 teaspoon honey
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup water
1 cup honey
1 teaspoon lemon juice
1 cinnamon stick
whipped cream (optional)

Steps:

  • Core apples, being careful not to cut through bottom. Pare 1/2 inch at the stem end.
  • Combine raisins and walnuts, if used, and 1 tsp honey with the ground cinnamon and ground cloves. Fill the center of the apples with this mixture.
  • Place the apples in a 8" by 8" baking pan.
  • In a small saucepan combine water, honey, lemon juice and cinnamon stick and bring to a boil. Simmer for 2 minutes. Remove cinnamon stick and pour syrup over apples.
  • Bake in a preheated 375 oven until tender, about 45 minutes, basting occasionally with syrup from the pan.
  • Serve warm or cold, with whipped cream if desired.

1 ½ cups fresh cranberries
2 ¼ cups water
¾ cup packed brown sugar
3 tablespoons honey
6 scoops vanilla ice cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Core the apples, and remove the peel from the top third of each one. Place them in a baking dish, and fill the core holes with as many cranberries as you can fit.

3 egg yolks
2 tablespoons honey
1/2 cup sweet wine, such as marsala (I use Icewine)
1 cup heavy cream
4 -6 fresh apples, use your favourite baking apples
3 tablespoons soft butter
1/4 cup brown sugar

Steps:

  • For sauce:.
  • Beat egg yolks and honey until light and frothy, about 10 minutes.
  • Reduce speed; mix in wine.
  • Transfer mixture to double boiler and stir constantly over moderate heat until custard thickens and feels heavy. It should coat the back of a spoon thickly.
  • BE CAREFUL NOT TO LET THE MIXTURE BOIL!
  • Remove from heat, cool to room temperature; chill to cool completely.
  • Whip cream until it reaches soft peaks, then fold into cold sauce. Keep chilled until ready to serve.
  • To bake apples: Preheat oven to 350°F.
  • Slice top third off each apple, leaving stems intact; remove cores.
  • Push butter into core cavities and rub some onto skins. Place apples in baking dish; sprinkle with sugar, pushing some sugar into cavity of each. Replace tops; sprinkle with remaining sugar.
  • Bake 35-40 minutes until apples are tender. Cool to room temperature; serve with dollop of sauce between apples and tops.
