SHANE'S SWEET AND SOUR MEATBALLS
Steps:
- Preheat oven to 350 degrees F.
- In deep non-greased baking pan, add the thawed meatballs. Top the meatballs with the pineapple chunks. In a medium bowl add the mustard, red and green onion, and garlic. Mix well. Top the meatballs and pineapple with the mustard sauce. Add the Sweet and Sour Sauce and season with black pepper.
- Bake for 30 minutes. Remove from the oven; add the remaining pineapple juice, stir to combine, and place back in the oven for the remaining 30 minutes. Serve while hot.
- In a saucepot, mix all ingredients together. Cook on high heat. Keep your eye on it. Do not walk away. Cook for 2 minutes and stir. After 3 to 4 minutes, take it off the heat and mix for 2 minutes. Use it same day or keep in the refrigerator for about 2 to 3 weeks at the maximum.
SHANNON'S MEATBALLS
I came up with recipe for a friend's party. Everybody loved them. I make them ahead of time and freeze them then defrost and throw into a crockpot with any type of spaghetti sauce.

Steps:
- Mix all together.
- You may need to add more potato flakes if needed.
- Make into mini meatballs and place in glass baking dish.
- Bake at 350 degrees for approximately 45 minutes.
- Let cool.
- Freeze for individual use (like a sandwich) or freeze in large ziploc for party use. Reheat and serve with marinara sauce.

SHANNEN'S APRICOT MEATBALLS
These were a big hit at the last family get together. The recipe comes from my cousin and is based on her mother's little smokies in apricot recipe.

Steps:
- Pre-heat oven to 350°F.
- In a bowl, combine the first four ingredients. Crumble raw meat over mixture and mix well. Shape into 1" balls.
- In a skillet working in batches brown meatballs in medium heat skillet. Drain and transfer to a greased 2 quart baking dish.
- Combine preserves and barbecue sauce; pour over meatballs. Cover and bake at 350 F for 30 minutes or until the meat is no longer pink.
- Serve from a warm from oven or keep warm in small warming pot. Best enjoyed warm.

MEATBALLS
From Meatball subs to spaghetti and everything in between, these are an all around staple in our house. Even my SO who isn't a fan of red sauce loves them.

Steps:
- In a large mixing bowl add the meats and blend together with your hands.
- Add the onion, parsley, pepper, and garlic salt. Mix again with your hands until all the seasonings are well blended with the meat.
- In a bowl beat the eggs until well beaten. While mixing the egg into the meat mixture, add the bread crumbs 1/2 cup at a time until the meat begins to feel slightly firm.
- Form the meat into 1 1/2" balls with your hands.
- Gently place in cooking pan so that the meatballs are close but not touching.
- Cook in pre-heated oven at 450 degrees Fahrenheit for 10 minutes or until browned.
- The meatballs will not be fully cooked yet.
- Add meatballs to your favorite sauce and simmer for one hour. (I usually use my Grandmother's sauce recipe, since this was her meatball recipe. I posted it under Spaghetti Sauce #79000 for anyone who would like it.).
