- In a small bowl, combine the first nine ingredients; set aside. In another small bowl, combine the oil, brown sugar, jerk seasoning, thyme, rosemary and seasoned salt. - Rub pork with oil. Combine the pepper, paprika, salt, garlic powder, chili powder, cinnamon and cayenne; rub over pork. Refrigerate for 30 minutes., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat using a drip pan. Place pork over drip pan and grill, covered, over indirect medium-hot heat for 25-30 minutes or until a thermometer reads 160°. SPICED PORK TENDERLOIN AND AVOCADO SALSA
Steps:
- Preheat oven to 400°F.
- Stir together salt, allspice, and cayenne. Pat pork dry and sprinkle spice rub all over pork, pressing to adhere.
- Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown pork, 1 tenderloin at a time, on all sides, about 1 minute each. Transfer as browned to a large roasting pan and arrange 2 inches apart.
- Roast in middle of oven until an instant-read thermometer inserted diagonally 2 inches into center of each tenderloin registers 155°F, 20 to 25 minutes. Let pork stand 5 minutes before slicing.

PORK TENDERLOIN W/ HONEY AND SESAME SEED AND PEACH AVOCADO SALSA
This is a tender and tasty way to prepare pork tenderloin. I've made it with the salsa in the summer(yummy!) and I've made it without the salsa when peaches were not in season. Prep time does not include the 6+ hours to marinate.

Steps:
- Combine first 5 ingredients.
- Place the tenderloin in a zip-loc bag and add the mixture.
- Chill for at least 6 hours.
- Remove pork from the marinade and discard the marinade.
- Stir the honey and brown sugar together.
- Brush the pork with the honey mixture and sprinkle with the sesame seeds.
- Place on a lightly greased rack in a roasting pan (I buy a throw away pan because the honey can make cleaning up a real chore-much easier to pitch the pan than cleaning it).
- Bake at 400 degree oven for 25-30 minute.
- or until meat thermometer in thickest part reaches 160 degrees.
- Cut pork into slices and serve with peach-avocado salsa.
- Peach-avocado salsa: 1 cup peeled, diced fresh peaches- I use 2 peaches.
- 1 large tomato, diced.
- 1/2 cup diced avocado, 1 TBsp minced red onion, 1 TBsp lime juice, 1 tsp olive oil, 1/4 tsp salt, 1/4 tsp ground red pepper. Combine salsa ingredients in a large bowl.
- Cover and chill until ready to serve.

- Puree first 9 ingredients in a blender; stir in beer. In a 5- or 6-qt. slow cooker, combine pork and pineapple mixture. Cook, covered, on low until pork is very tender, 6-8 hours. CHIPOTLE PORK WITH STRAWBERRY-AVOCADO SALSA
This was printed in our local newspaper. Prep time includes marinating. I made it the other night and it was wonderful. I did need to grill the pork for longer, but the tenderloins I had were kind of thick. I also used a little more lime juice in the "marinade", which I found to be more like a wet-rub than a marinade.

- For pork, combine all but the salt in a large plastic zipper bag. Marinate in refrigerator, turning the bag occasionally, for 2 hours.
- Remove pork and discard marinade; sprinkle pork evenly with salt.
- Grill pork over indirect heat for about 20 minutes, or until internal temperature reaches 155°. Let stand 10 minutes. Slice crosswise.
- For salsa, combine all ingredients in a medium bowl and toss gently. Serve immediately with the sliced pork.

- Remove silver skin from pork tenderloin and then place pork in a gallon-size zip top bag. Add in the salsa, vinegar, and Worcestershire sauce. Remove air from bag, seal, and smush everything around to coat the pork and mix up the marinade. Refrigerate for 3 hours.
- Heat grill to 400+ degrees F. Remove pork from bag, shaking off excess marinade, and place on grill. Cook pork for 25-30 minutes, turning once, or until internal temperature reaches 150 degrees F.
- While the pork rests make the salsa. Remove pit from peach and seed from avocado. Dice both peach & avocado and place in a small mixing bowl. Add onion, lemon zest, and parsley. Stir to combine. Season with salt and pepper to taste.
