2 Tbsp olive oil ((extra virgin))
1 shallot ((minced))
1/2 Tbsp garlic ((minced))
2 Tbsp butter
2 Tbsp all-purpose flour
1/2 tsp tarragon
1/2 tsp ground sage
1/2 tsp thyme
1/4 tsp each, salt & pepper ((more to taste, if necessary))
1 cup Baby Portabella Mushrooms ((stemmed, sliced))
1 1/2 cups beef broth
2 Tbsp Worcestershire sauce
1/2 Tbsp Dijon Mustard ((coarse ground))
1 cup leftover prime rib roast ((sliced into 2 inch strips))
1/4 cup sour cream
8 oz egg noodles ((rinsed and drained))
2 Tbsp parsley ((chopped, optional garnish))

Steps:

  • Start with a large, deep frying pan or dutch oven. Heat the olive oil to medium high heat, then add minced shallot and garlic and cook for 1 minute (just enough to start sweating the shallot). Add butter and melt with the shallot and garlic.
  • Add the all-purpose flour, combine with shallot and garlic until all of the flour is absorbed. Add seasoning (tarragon, ground sage, thyme, salt & pepper) and mushrooms. Stir to combine, then add the beef broth, Worcestershire and Dijon.
  • Stir all of the gravy ingredients, reduce heat to medium and allow to simmer (reducing heat as necessary to maintain a low simmer) for about 10 minutes. Gravy should thicken while simmering.
  • Once gravy has simmered and reduced, slightly thickening, add the sliced leftover prime rib roast meat and cook an additional 2-3 minutes to heat the meat through completely. Remove from heat and add sour cream. Serve immediately over cooked pasta, rice, or potatoes. Top with chopped parsley for garnish, if desired.

2 (2 pound) beef chuck roast, cut into 1/2-inch thick strips
½ cup red wine
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon extra-virgin olive oil
2 tablespoons butter
1 large onion, diced
3 cloves garlic, minced
2 tablespoons butter
1 cup sliced mushrooms
¼ cup butter
¼ cup all-purpose flour
1 ⅓ cups beef stock
1 tablespoon Worcestershire sauce
1 teaspoon prepared yellow mustard
2 teaspoons crushed red pepper flakes
⅓ cup sour cream
1 (3 ounce) package cream cheese, softened

Steps:

  • Place the beef into a large bowl. Stir in the red wine, salt, and black pepper. Marinate for 10 minutes, then remove the beef and pat dry with a paper towel. Reserve the remaining marinade.
  • Heat the olive oil in a large skillet over medium heat. Stir in the beef; cook and stir until browned, then transfer to a plate, 5 to 7 minutes. Drain any remaining grease from the skillet. Melt 2 tablespoons butter over medium heat. Stir in the onion, garlic, and a pinch of salt. Cook and stir until the onion is soft and translucent. Transfer the onion mixture to the plate with the prepared beef; set aside.
  • Melt another 2 tablespoons butter in the same skillet over medium heat, and stir in the mushrooms. Cook and stir until the mushrooms are tender, about 10 minutes. Place the cooked mushrooms in a bowl and set aside. Melt 1/4 cup of butter in the skillet. Whisk in the flour, cook and stir until the flour no longer tastes raw, about 4 minutes. Slowly whisk in the beef stock. Bring to a boil, stirring constantly, then reduce heat to medium low. Pour in the reserved red wine marinade, Worcestershire sauce, prepared mustard, and red pepper flakes, then add the beef and onion mixture. Cover and simmer until the meat is tender, about 1 hour. Season with salt and black pepper.
  • Stir in the mushrooms, sour cream, and cream cheese about 5 minutes before serving.

If you have left over cooked roast and don't know what to do with it, here is a nice little recipe I found in Taste of Home. I like to add a few tablespoons of sour cream just before serving, but it is up to you.

2 -3 cups cooked beef, julienned
1 small onion, chopped
2 garlic cloves, minced
1 teaspoon vegetable oil
1 (10 ounce) can cream of mushroom soup
1/2 cup milk
1/2-1 cup mushroom, sliced
2 tablespoons ketchup
1 teaspoon beef bouillon
pepper

Steps:

  • In saucepan over medium heat, saute onion in oil about 5 minutes.
  • Add garlic and cook 2 minutes longer, then add mushrooms and cook til tender.
  • Add roast beef and cook until heated through.
  • In a small bowl, mix soup, milk, ketchup and bouillon then add to the meat mixture. Bring just to a boil and then reduce heat to simmer.
  • Cook uncovered 8-10 minute.
  • If using sour cream, stir in just before serving.
  • Serve over noodles or mashed potatoes.

2 cups prime rib roast ((1/4" cubed))
2 cups potatoes ((1/4" cubed, I use russet potatoes or yukon golds))
1/2 cup yellow onion ((minced))
1/2 Tbsp garlic ((minced))
1/4 tsp turmeric
1/8 tsp nutmeg
1/8 tsp paprika
1/8 tsp ground sage
1/8 tsp tarragon
1/2 tsp each, salt & pepper ((to taste))
1/4 cup milk
2 Tbsp all-purpose flour
4 large eggs ((4 eggs = 1 per person per serving, use more if you prefer))
2 Tbsp fresh parsley ((chopped, optional for garnish))

Steps:

  • Use either the rendered fat from your prime rib roast, or extra virgin olive oil, and heat your large skillet or frying pan to medium heat. Cook the cubed potatoes, minced onion and garlic on medium heat for about 3 minutes until the potatoes are starting to get tender and the onion is no longer translucent.
  • Add the seasoning: turmeric, nutmeg, paprika, ground sage, tarragon, and salt & pepper (to taste). Cook for 8-10 minutes, browning the potatoes. Add the cubed prime rib and cook for 4-5 minutes.
  • Combine the milk (or your mixed milk and au jus) with the flour and stir it into the hash mixture. Use your spatula to spread the hash evenly throughout the pan and flatten the hash.
  • Cook on medium high for an additional 5 minutes, flipping the hash as needed to brown your hash and get your desired level of crispiness. *Leave the hash in halves or quarters of the flattened hash, turning the whole pieces to brown. Break up the hash once both sides are browned and continue to brown to your preferred consistency.
  • In another frying pan or skillet, cook your eggs sunny side up to serve on your hash. Heat the pan with 1 teaspoon of cooking oil at low heat until the oil begins to shimmer, then add the eggs. Cover with a tight fitting lid and cook until the white is completely set, about 2-2 1/2 minutes.
  • Dish up the leftover prime rib hash with the egg(s) served on top, add fresh chopped parsley for garnish (optional).

1 tablespoon olive oil
1 onion (sliced)
100 g chestnut mushrooms (sliced)
2 cloves garlic (grated or crushed)
3 teaspoons smoked paprika
Salt and black pepper to taste
600 g leftover roast beef ((see notes for steak version))
150 ml sour cream ((or crème fraiche if you prefer))
2 tablespoons parsley (chopped (plus extra for garnish))
Rice, bread or mashed potato
Kale (or another green vegetable such as spinach, cabbage or broccoli)

Steps:

  • Put a tablespoon of olive oil in a large frying pan and then add the onions. Cook for about 3 minutes until softened.
  • Add the sliced mushrooms and turn up the heat. Cook for a further 2 minutes.
  • When the onions and mushrooms are lightly browned, add the garlic, paprika, salt and pepper, plus the leftover beef and any juices. Cook over a low heat for a further 3 minutes. Add a splash of water if it gets too dry.
  • Finally, add the sour cream and heat gently until it just starts to bubble. Turn the heat off and sprinkle in the chopped parsley. Serve with the rice and kale, or whatever accompaniments you prefer.

Leftover night just got better. This is an easy beef stroganoff-like recipe to use up your leftover roast beef, pork, or chicken in a home-cooked meal.

12 ounces leftover roast chicken (or pork or beef, cut into strips)
8 ounces mushrooms (sliced)
1/2 teaspoon dried thyme
2 tablespoons unsalted butter (divided)
1/2 small onion (chopped)
1/2 cup wine
1/2 cup stock
1 tablespoon tomato paste
1/2 cup sour cream
Salt to taste
Pepper to taste
4 ounces egg noodles

Steps:

  • Gather the ingredients.
  • Fill a pot of water and bring it to a boil. Salt it and, once boiling, add the egg noodles and cook per the package instructions. Drain and reserve.
  • Place the mushrooms in a large, dry, non-stick skillet and sprinkle them with salt.
  • Cook over medium-high heat until the mushrooms begin to brown and give up their liquid, or about 6 minutes.
  • Stir the mushrooms, add in the thyme, and add 1 tablespoon of the butter. Cook until browned, about 3 minutes.
  • Scoop the mushrooms onto a plate and set aside.
  • Using the same pan over medium heat, add the remaining butter, onion, and tomato paste and then cook until the onion is translucent, stirring frequently for about 5 minutes.
  • Return the mushrooms to the skillet and add the wine.
  • Increase the heat to medium-high and cook until the wine is reduced by half, approximately 5 minutes.
  • Add the stock and cook for 5 more minutes.
  • Reduce the heat to low, add the meat, and simmer for 5 minutes.
  • Remove from heat and stir in the sour cream and pepper. Taste test and adjust the seasonings.
  • Serve over the cooked noodles.
  • Enjoy.
