Provided by Food Network

Time 2h

Yield 4 to 6 servings

Number Of Ingredients 21

2 tablespoons ground cinnamon
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons fennel seeds
2 tablespoons paprika
2 tablespoons freshly ground black pepper
2 tablespoons kosher salt
2 pork tenderloins (1 package contains 2 loins)
Olive oil, for searing
Cranberry Chutney, for serving, recipe follows
1 yellow onion, finely chopped
4 cloves garlic, minced
1/4 cup red wine vinegar
1/4 cup granulated sugar
2 tablespoons ground ginger
1/4 teaspoon ground allspice
1 tablespoon fennel seeds
1 teaspoon chile flakes
Pinch ground clove
One 6-ounce bag dried cranberries (see Cook's Note)
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, combine the cinnamon, chili, cumin, fennel, paprika, pepper and salt.
  • Rub each pork loin generously with the seasoning blend. Let the pork sit 20 to 30 minutes at room temperature.
  • Preheat a large, oven-proof saute pan over medium-high heat. Once hot, add enough oil to coat the bottom of the pan. Place the pork tenderloins in the pan and sear the pork on all sides until golden brown, 3 to 4 minutes per side.
  • Place the seared pork into the oven and cook until an instant-read thermometer reads 155 to 160 degrees F, 20 to 30 minutes. Remove the tenderloins from the oven, place them on a plate or cutting board, tent with foil and allow the meat to rest 10 minutes.
  • Cut the pork into 1-inch thick slices and spoon liberal amounts of Cranberry Chutney over the pork and enjoy!
  • In a medium saucepot, add the onions, garlic, 1/2 to 3/4 cup water, vinegar, sugar, ginger, allspice, fennel, chile and cloves. Bring the mixture to a boil.
  • Add the cranberries to the pot and reduce the heat to a simmer. Cook the mixture until the cranberries have reconstituted and start softening and breaking down. If too much liquid evaporates, just add more water and keep cooking until you achieve the desired consistency. The chutney should be on the firmer/chunkier side of a jelly. Once the chutney is cooked, season with salt and pepper.

1/4 cup Sherry vinegar or apple cider vinegar
1 tablespoon chopped garlic
1 tablespoon mustard seeds
2 teaspoons grated peeled ginger
1/2 teaspoon freshly ground black pepper
1 bay leaf
Kosher salt
Pork:

Cover and simmer over medium heat, stirring occasionally, for 8 minutes. Uncover and continue cooking, stirring occasionally, until fruit is soft and juices have thickened, 20-25 minutes. Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 25

2 cups red wine
1/2 cup sugar
1 bay leaf
12 ounces diced prunes
1/2 teaspoon ground coriander seeds
1 apple, peeled and diced
1 pear, peeled and diced
2 tablespoons cornstarch
2 tablespoons water
1 onion, chopped
1/2 celery stalk, chopped
2 carrots, peeled and chopped
1 parsnip, peeled and chopped
2 tablespoons tomato paste
1 quart veal stock
3 tablespoons butter, plus 2 tablespoons
3 tablespoons flour
1 ounce hazelnuts, chopped
2 tablespoons orange juice
1/2 cup heavy cream
Salt and white pepper
1 pork tenderloin
1 1/2 cups flour
Salt and freshly ground black pepper
Vegetable oil

Steps:

  • Chutney: Add wine, sugar, and bay leaf to pot and bring to a boil. Add the prunes and coriander and cook until soft. Add apple and pear and cook until soft. Combine cornstarch and water to make a slurry. Whisk in cornstarch and bring to a boil to thicken and remove bay leaf.
  • Cream Sauce: Saute the onion, celery, carrots, and parsnip until soft, then add tomato paste and saute, stirring constantly, for 3 minutes. Be careful not to burn the tomato paste. Add veal stock and reduce by half.
  • In a separate saute pan over low heat, add 3 tablespoons butter and melt. Add flour and cook, stirring constantly, to make a roux. Cook over low heat until roux is brown, about 15 minutes. Whisk brown roux into the vegetable/stock mixture to thicken. Bring to a boil, then reduce heat and simmer for 10 to 15 minutes to cook out the flour taste. Season with salt and pepper and strain.
  • In another saute pan, melt remaining 2 tablespoons butter and saute hazelnuts for a few minutes. Add 1/2 cup of the sauce and the orange juice and bring to a boil and cook for 2 to 3 minutes. Add heavy cream, salt and white pepper and cook for 2 to 3 minutes. Reserve excess brown sauce for another use.
  • Slice tenderloin into 1/2-inch thick slices. Place each slice in between 2 pieces of plastic wrap and pound to 1/8-inch thick. Season flour with salt and pepper. Dredge the pork in the flour. In a large saute pan, add some of the oil and heat over medium-high heat. Add the pork and saute until golden brown on each side, about 2 minutes per side.
  • Serve with chutney and cream sauce.

4 to 5 sprigs thyme, tied with butcher's twine
1 fresh bay leaf
4 cups chicken stock
Kosher salt
6 tablespoons extra-virgin olive oil

Reserve the pan that the pork was cooked in for later, draining off any excess oil. Transfer the pork into the oven and bake for 7 to 8 minutes, or until it reaches an internal temperature of 140 degrees F. Set aside to rest for 10 minutes, then cut the pork into 1/2-inch slices.
  • Place the saute pan that the pork was cooked in back onto the heat and add the remaining 2 tablespoons olive oil and the other half of the onion. Season with salt and crushed red pepper. Cook, stirring occasionally, until the onion is soft, 5 minutes. Add the peaches, whole-grain mustard, maple syrup, balsamic vinegar, remaining 1 1/2 cups chicken stock and remaining 1/4 teaspoon fennel pollen. Stir to combine and cook until reduced, 5 to 7 minutes. Season to taste with salt. Plate the farro, followed by the sliced pork tenderloin and a generous scoop of sauce. PORK TENDERLOIN WITH RHUBARB-CURRANT CHUTNEY

Pork Tenderloin With Rhubarb-Currant Chutney image

This recipe is from Bon Appetit. I have made it with pork chops as well as pork tenderloin. The chutney is a nice compliment for pork and is a great use of rhubarb if you have it in your garden or freezer. I keep my ginger in the freezer, take it out about 10 minutes before I want to use it and then grate it with my Microplane.

  • In a small bowl, stir together the salt, 1 tablespoon sugar, the mustard, and ground red pepper. Rub salt mixture all over meat. Arrange pork in two large shallow roasting pans. Cover and chill overnight.
  • For chutney, in a 5- to 6-quart Dutch oven, stir together the 3 cups sugar, the vinegar, and water. Bring to boiling, stirring to dissolve sugar. Stir in the dried fruit and cinnamon sticks. Return to boiling; reduce heat. Boil gently, uncovered, until fruit is tender and most of liquid is absorbed, about 40 minutes. Transfer mixture to a large bowl to cool slightly. Serve or cover and chill overnight. (Mixture may be held up to 1 week in the refrigerator.)
  • For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above the drip pan. Place meat on the grill rack over the drip pan. Cover and grill for 40 to 50 minutes until an instant-read thermometer inserted in the pork registers 160 degree F. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Place meat on grill rack and grill as above.) Or, arrange pork on racks in large roasting pans, leaving 2 inches between each tenderloin. Roast, uncovered, in a 425 degree F oven for 25 to 30 minutes or until an instant-read thermometer inserted in pork registers 160 degree F.
  • Reheat chutney in saucepan over medium-low heat. Slice pork and serve with chutney. If desired, top chutney with halved cherry tomatoes. Makes 50 servings.
