This was one of my mother's best recipes. It is very quick, easy and delicious. A good way for the little ones to eat their spinach!

1 (10 ounce) package frozen chopped spinach
6 potatoes, peeled and chopped
½ cup butter
1 cup sour cream
1 tablespoon chopped onion
1 teaspoon salt
¼ teaspoon dried dill weed
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • Cook spinach according to package directions. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.
  • In a bowl, mix the spinach, mashed potatoes, butter, sour cream, onion, salt, and dill. Transfer to the prepared casserole dish. Top with Cheddar cheese.
  • Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

4 potatoes, peeled and cubed
1 tablespoon extra-virgin olive oil
½ cup diced red bell pepper
½ cup diced yellow bell pepper
¼ cup all-purpose flour
2 cups chicken broth
ground black pepper to taste
3 ounces baby spinach leaves
½ cup grated Parmesan cheese
2 tablespoons bacon bits
1 tablespoon minced garlic
2 tablespoons butter
½ cup cream
salt and pepper to taste

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Meanwhile, heat the olive oil in a saucepan over medium heat. Stir in the red and yellow bell pepper, and cook until the peppers begin to soften, about 3 minutes. Stir in the flour, and cook for 3 minutes more. Pour in the chicken broth, and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer gently for 15 minutes. Season to taste with black pepper.
  • Once the potatoes have finished draining, return them to the pot along with the baby spinach, Parmesan cheese, bacon bits, and garlic; mash until smooth. Fold in the butter and cream until incorporated and season to taste with salt and pepper. Serve the mashed potatoes alongside the bell pepper gravy.

1 cup sour cream
1/2 cup butter
1 teaspoon sugar
1 teaspoon salt

1/3 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.

4 large shallots, quartered
1 tablespoon grated lemon zest
2 garlic cloves, thinly sliced
1 pound spinach, trimmed and washed
Fresh lemon juice

Steps:

  • Preheat oven to 450 degrees. In a medium saucepan, bring potatoes to a boil in salted water and cook until tender when pierced with a knife, 15 minutes.
  • Meanwhile, season chicken with salt, pepper, and thyme. In a large ovenproof skillet, heat 1 teaspoon olive oil over medium-high. Cook chicken, skin side down, until golden and crisp, 5 minutes. Flip, then add shallots; cook until chicken is browned, 5 minutes. Flip shallots, then transfer skillet to oven. Roast until chicken is cooked through, 15 minutes.
  • Reserve 3/4 cup cooking water from potatoes. Drain potatoes and return to pan. Add 2 teaspoons oil, lemon zest, and reserved cooking water; season with salt and pepper and roughly mash.
  • Transfer chicken and shallots to a platter and heat skillet over medium. Add remaining 1 teaspoon oil and garlic and stir until fragrant, 30 seconds. Gradually add spinach, and toss until wilted, 3 to 5 minutes. Season to taste with salt, pepper, and lemon juice. Serve chicken with shallots, potatoes, and spinach.

1 large potato, peeled, cut into 1 inch pieces
salt and pepper, to taste
3 -4 tablespoons unsalted butter, divided
3/4-1 cup half-and-half, divided
10 -12 sea scallops
10 -12 whole baby spinach leaves, stems removed
1 teaspoon garlic, minced
1/8 cup dry white wine
3 tablespoons yellow onions, chopped finely
1/4 cup half-and-half
1 1/2 teaspoons dried tarragon or 1 1/2 teaspoons fresh tarragon, if you have it

Steps:

  • Boil until potatoes are tender, about 8 minutes.
  • Drain.
  • Return to pot.
  • Smash potatoes.
  • Stir in 1 tablespoons butter. Stir in Half and Half and ½ teas. tarragon into warm smashed potatoes.
  • Season to taste with salt and pepper.
  • Set aside and keep warm.
  • Steam spinach leaves and keep warm.
  • Melt 2 tablespoons butter in cast iron or heavy skillet over medium-high heat.
  • Dry scallops and sprinkle with salt and pepper.
  • Add scallops; sauté until just opaque in center, about 2 minutes per side.
  • Transfer to plate; tent with foil.
  • Reserve juices in skillet.
  • Sauté onions in skillet until softened; add garlic, then wine.
  • Deglaze skillet.
  • Simmer over medium heat until absorbed, about 2 minutes. Reduce heat to MED-LOW.
  • Stir in about 1/2 cup Half and Half and 1 teas. tarragon; simmer 1-2 minute to thicken.
  • Season sauce to taste with salt and pepper.
  • To serve: Divide and place steamed spinach on top smashed potatoes on two warmed plates.
  • Divide scallops and place on spinach.
  • Divide sauce over all.

I've also used red potatoes for this and can't wait for yellow fins to come in locally so I can try those with this recipe. While the potatoes are cooking, I cook the spinach at this time, it saves time. *all cooking times are approximate*

4 lbs white potatoes, peeled and cut into 2 inch pieces
1/2 cup butter (do not use margarine)
1 1/4 cups warm whole milk (I sometimes use 2 % mixed with half and half)
3 cups grated gruyere cheese (about 12 oz)
salt and pepper

Steps:

  • Bring large pot of salted water to a boil, add baby spinach from the bags.don't add the bags ;).
  • Cook for 1 minute.
  • Drain well.
  • Squeeze out as much excess water from spinach as you can.
  • Set Aside.
  • Cook potatoes in a large pot of boiling salted water until very tender or to your desired consistency for mashed taters, about 30 minutes.
  • Return potatoes to pot and mash until almost smooth.
  • Set pot over a low heat on stove.
  • Add butter and stir until melted.
  • Gradually add milk, mashing until smooth.
  • Add cheese and reserved spinach and stir until cheese melts.
  • Thin with more milk, if desired.

This potato dish is considered a special treat even by my grandchildren and great-grandchildren. It came to me from a dear friend who was raised on a farm in Kansas, and it's one of my personal favorites. The creamy spuds, spinach and melted cheese provide down-home flavor that can't be beat. It's a great side to bring to a potluck.

6 to 8 potatoes, peeled and diced
3/4 cup sour cream
1/2 cup butter, melted
2 tablespoons sugar
2 teaspoons salt
1/4 teaspoon pepper
1 package (10 ounces) frozen chopped spinach, cooked and drained
2 tablespoons minced chives
1-1/4 teaspoons dill weed
1 cup shredded cheddar cheese

Steps:

  • In a bowl, combine the potatoes, sour cream, butter, sugar, salt and pepper. Add the spinach, chives and dill. Spoon into a greased 2-qt. baking dish. Sprinkle with cheese. Bake, uncovered, at 400° for 20 minutes or until heated through.
