EASY PORK WITH HOISIN SAUCE
Steps:
- Trim excess fat and silverskin from tenderloin. Cut into 1-inch pieces, pat with paper towels, rub with some sesame oil, and season with salt and freshly ground black pepper.
- Place a medium skillet over medium high heat, add 1 tablespoon sesame oil. When oil shimmers, add pork and cook until browned and cooked partially, about 2 to 3 minutes per side.
- Remove pork to a plate, return skillet to stove, and add garlic. When garlic is fragrant, add green beans and stir occasionally until browned, about 3 minutes. Add sherry and hoisin, stir to combine, and cook until beans are tender and sauce is reduced slightly and sherry smell is cooked off, about 4 minutes. Return pork to pot, turn to coat in sauce, season with salt and freshly ground black pepper. Sprinkle with sesame seeds and green onions, if using, and serve over rice.

- Put the ribs in a large pan and cover with water. Bring to the boil and simmer for 15 mins. Meanwhile, pour the hoisin sauce in a jug and stir in the soy sauce, honey, vinegar and five-spice.
- Drain the ribs very well, then brush with the glaze - if barbecuing, chill, cover and keep in the fridge for later.
- Heat the grill to high, if using. Grill or barbecue for 15-20 mins, turning from time to time until shiny and slightly charred in places. Serve hot.

- Preheat oven to 400 degrees F (200 degrees C).
- Whisk together the oyster sauce, Dijon mustard, hoisin sauce, ginger, honey, and soy sauce in a bowl until combined; stir in the green onions. Spread about 1/4 of the mixture into the bottom of a 9x13-inch baking dish. Arrange the pork chops over the sauce in a single layer, and pour the remaining sauce over the chops, covering them completely.
- Bake in the preheated oven until the chops are no longer pink at the center and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Baste once or twice while baking.
- Drain the liquid in the baking dish into a saucepan. Turn on the oven's broiler, and place the chops underneath the broiler until caramelized and brown, 1 to 2 minutes.

- 1. Cut the spareribs apart into 1 or 2 rib servings. Place in a shallow glass baking dish.
- 2. Combine the light soy sauce, Hoisin sauce, ketchup, rice wine or sherry, brown sugar and the chopped garlic. Pour over the spareribs. Cover and marinate 2 to 3 hours or overnight in the refrigerator, turning occasionally to make sure the ribs are thoroughly coated.
- 3. Preheat oven from 325 up to 350 degrees F.
- 4. Fill a shallow roasting pan with 1/2 inch of water and place on the middle rack of the oven. Dissolve honey in separate bowl in the boiling water. Place the pork on a rack above the water. Roast the pork for 40 minutes, or until the ribs just begin shrinking and the internal temperature reaches 160 degrees F. -- Brush the spareribs several times with the honey and water mixture during roasting. Turning and brushing with the marinade every 10 minutes. Let the marinade cook on for the final 10 minutes to make a glaze. Finish under the broiler if desired. Discard any remaining marinade.

- 1. In a blender, combine the hoisin sauce with the soy sauce, molasses, ginger, garlic and 1/2 cup of the honey and puree until smooth. Add the Chinese chile-garlic sauce and pulse to combine. Sometimes I like to add 2 Tablespoons of sesame seed oil too.
- 2. Cut the ribs into 3 rib sections and transfer to a pressure cooker. Add the hoisin puree and let stand, turning the ribs occasionally, for 45 minutes.
- 3. Add 1/4 cup of water to the cooker. Cover and cook at high pressure for 20 minutes. Line a rimmed baking sheet with foil. Run cold water over the pressure cooker to release the pressure. Transfer the ribs to the prepared baking pan, meaty side up. Boil the cooking juices until reduced to 2 cups, about 5 minutes. Transfer the hoisin pan sauce to a bowl.
- 4. Preheat the broiler and position a rack 8-inches from the heat. Brush the ribs all over with the remaining 1/4 cup of honey and broil, turning once, until the ribs are glazed and browned, about 5 minutes. - Combine the hoisin sauce, honey, oil, rice wine vinegar, garlic and black pepper in bowl.
- Cut the ribs into serving size pieces and place in extra large heavy plastic resealable bag, pour the sauce over the ribs.
- Seal the bag and place in a large bowl, refrigerate overnight.
- Set oven to broiler heat.

- Pre-soak the ribs with clean water for 30 minutes. During the process, the clean water turns slightly pink or red. Change the water once after the first 10 minutes. Then drain completely.
- Whisk all of the marinating sauce in a bowl. Pour the marinating sauce to the ribs. Set aside for at least 4 hours or overnight in fridge.
- Get a lined baking sheet, place only the ribs in. Wrap the ribs with foil paper. Pre-heat oven to 180 degree C.
- Place the baking sheet in the middle rack and roast for 40 minutes (depending how soft you want the ribs to be). Take the upper foil off and then brush the honey water. Rise the oven temperature to 200 degree C. Continue roasting for around 10 minutes until well colored.
STICKY PORK RIBS
Steps:
- Preheat oven to 425 F (205 C).
- Add ketchup, hoisin sauce, soy sauce, honey, vinegar, garlic, ginger, and onion powder to a bowl and stir to combine. Pour out cup (60 ml) sauce to reserve for glazing at the end.
- To remaining sauce, add ribs and toss to coat evenly. Arrange ribs in one layer on a parchment covered baking sheet. Place on the middle rack in the oven and cook for 12-15 minutes or until golden brown and crispy.
- Brush ribs with reserved sauce and cook for 8-10 more minutes.
- Serve with chopped scallions scattered on top.

Another recipe from my sister-in-law. She made a version of this over Christmas and they were delish. They sound like a lot of work, but it isn't. Serving Size depends on the size of ribs. The time to make varies by how long you let it marinade.

- For the Marinade:.
- Trim bottom ½ inch from lemongrass stalks and discard.
- Starting from bottom, thinly slice remaining lemongrass until rings are no longer tinged with pink; discard remainder of each stalk.
- Place lemongrass in small processor and mince finely.
- Add sugar, oil, shallots, and chiles; process until finely minced.
- Add fish sauce until blended.
- Cover and chill at least 2 hours (better overnight) in a Zip bag.
- For the Sauce:.
- Heat oil in heavy medium saucepan over medium heat.
- Add shallots, garlic, ginger and chile. Saute until soft about 3 minutes.
- Mix ketchup and all remaining ingredients.
- Bring mixture to boil; reduce heat to low.
- Simmer 20 minutes.
- Transfer sauce to blender and puree until smooth.
- To prepare the Ribs:.
- Preheat oven to 375ºF.
- Place ribs bone side down, atop rack on rimmed baking sheet.
- Roast for 1 hour.
- Brush ribs generously on both sides with some honey-hoisin sauce.
- Roast 15 minutes.
- Brush ribs again with honey-hoisin sauce.
- Roast another 15 minutes.
- Cut ribs up and brush the ribs with the remainder of the honey-hoisin sauce.
- Add toasted sesame seeds over ribs, optional.
HOISIN AND HONEY PORK RIBLETS
Steps:
- In a kettle of boiling salted water simmer the ribs, covered, for 30 minutes and drain them well. In a large bowl whisk together the honey, the soy sauce, the garlic paste, the hoisin sauce, the mustard, the vinegar, and black pepper to taste, add the ribs, and toss the mixture well, coating the ribs thoroughly. Let the ribs marinate, chilled, for at least 1 hour or overnight.
- Remove the ribs from the marinade, arrange them in one layer on the oiled rack of a foil-lined broiler pan, and broil them under a preheated broiler about 4 inches from the heat, basting them with the marinade, for 3 minutes. Turn the ribs with tongs and broil them, basting them with the marinade, for 2 to 3 minutes more, or until they are browned well and glazed. Discard the marinade.

- Make the Spice Mix: Lightly toast each spice individually in a sauté pan on medium heat until each spice is fragrant and lightly golden-colored. Let the spices cool completely before adding to a spice grinder to a medium-fine consistency.
- Prepare the Ribs: Season the whole rack of ribs with generously salt and a few large pinches of Chinese Five Spice mix, and then double-wrap with heavy duty aluminum foil and refrigerate for at least one hour, up to overnight.
- Make the Hoisin: Place all ingredients in a medium saucepan and bring to a boil. Remove from heat and let cool before transferring to a blender and pureeing until smooth.

- While cucumbers drain, combine all remaining ingredients except cucumber in a bowl and stir until sugar is dissolved. Once drained, add cucumber pieces to the bowl with the dressing and toss to combine.
- Make the Garlic Rice: Thinly slice 3 cloves of garlic. Heat butter in a saucepan over medium heat until melted and slightly frothy. Add the garlic slices and swirl the pan to coat.
- Grate the remaining 2 cloves of garlic on a microplane and add to a small saucepot. Add 1 tablespoon of the butter used to fry the garlic and cook over medium heat until garlic is fragrant, about 30-60 seconds.
- Once ribs are tender, remove them from the foil and turn the broiler on low. Use part of the leftover foil to line the baking sheet. Brush hoisin sauce liberally all over both sides of the ribs, leaving the meaty side up, and broil for a moment.
