2 pounds ground pork
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon freshly ground black pepper
1 to 3 teaspoons rubbed or ground sage
Salt to taste, if desired
1/8 teaspoon ground allspice
Pinch of cayenne pepper
1/4 cup dry red wine
1/4 pound caul fat, optional (see note)
2 tablespoons peanut, vegetable or corn oil
Finely chopped parsley for garnish

Steps:

  • Put the pork in a mixing bowl and add the cheese, pepper, sage, salt, allspice, cayenne pepper and wine. Blend well with the hands.
  • Shape the mixture into eight portions of equal size. Shape into balls and then flatten into patties. If the caul fat is used, cut the sheets into eight six-inch squares and wrap each patty neatly in one square of the fat.
  • Heat the oil in a skillet and add the patties. Cook over relatively high heat until browned on one side, about two minutes. Turn and cook until nicely browned on the second side. Reduce the heat and continue cooking about 12 to 15 minutes.
  • Sprinkle with chopped parsley. Serve with freshly made English mustard or imported Dijon mustard.

These are so easy to put together. Make them as spicy as you like, we used a very hot chili, and hot curry paste, but you could tone it down if you wanted. Make them into 12 little patties for appetizers, or 4 large for dinner (cook longer). Serve with a thai dipping sauce, or a cucumber raita.

1 lb ground pork
3 teaspoons hot curry paste
3 tablespoons fresh breadcrumbs
1 small onion, finely chopped
2 tablespoons lime juice
2 tablespoons fresh cilantro, chopped
1 red chile, finely chopped
2 teaspoons soft brown sugar
canoli oil
salt and pepper, to taste

Steps:

  • Mix all ingredients, except the oil, in a large bowl and chill for 30 minutes.
  • Divide the mixture evenly into 12 portions and shape each one into a flat round pattie.
  • Heat the oil (enough to cover the bottom of the non-stick frying pan) over moderate heat for 3-4 minutes on each side, or until cooked through.
  • Remove and drain on a paper towel if you wish. Serve hot with dipping sauce or raita.

5 slices bacon
1 clove garlic, minced
1 pound ground pork
Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
  • Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
  • Serve the patties on the buns; top with coleslaw.

A wonderful and very elegant dinner party dish, and one that will impress your family and friends! These little parcels can be made ahead of time and frozen uncooked. In France you can buy these ready made in most supermarkets and butchers - but these are so easy to make, that I often make my own. You can also use turkey or veal escalopes - the sauce remains the same. Serve these little parcels with seasonal vegetables, gratin potatoes or rice and pasta.

8 pork escalopes or 8 thin pork steaks
salt
pepper
400 g good quality pork sausage
1/2 onion, peeled and very finely diced
1 teaspoon fresh mixed herbs or 1/4 teaspoon dried herbs
1 teaspoon olive oil
4 shallots, peeled and finely diced
2 tablespoons plain flour
2 tablespoons sun-dried tomato paste
750 ml medium sweet white wine
500 g fresh mushrooms, cleaned and thinly sliced
1 teaspoon dried orange peel or 1 teaspoon grated fresh orange zest
bay leaf
parsley
thyme
sage leaf
kitchen string

Steps:

  • Flatten the pork escalopes or pork steaks with the flat of a large knife. Salt and pepper generously.
  • Mix the finely diced onion with the sausage meat and add the herbs - mixing well with your hands. Season with black pepper.
  • Place a spoonful of the seasoned sausage meat on each pork escalope one-third of the way down the scallop. Roll the escalope around the sausage meat, tucking the meat around the stuffing until well rolled. Taking about two feet of string, place the bundle in the middle of the string, and tie; turn one-quarter turn and tie again; turn again and tie again. When you have a neatly tied packet of pork and stuffing, clip off any excess string and proceed to tie up the rest of the pork escalopes.
  • Place pork parcels in a single layer in a hot, deep sauté pan with olive oil. Brown on all sides and remove from the pan.
  • Sauté the chopped shallots in the oil left in the pan. Stir until they start to colour, then add the flour and the tomato paste. Continue to cook and stir until the mixture starts to colour then add nearly the whole bottle of wine, reserving a glass for yourself if you wish!
  • Place the pork paupiettes back in the pan with the bouquet garni and the sauce, cover, and simmer slowly for forty-five to sixty minutes.
  • Add the sliced mushrooms and orange zest to the sauce and cook uncovered for another fifteen minutes. Serve 2 paupiettes per person with plenty of sauce and with a selection of seasonal vegetables, gratin potatoes, rice or pasta.
  • To freeze: Place them in a plastic container with greaseproof paper in between them, or in a ziplock bag. Freeze for up to 3 months.
  • To defrost: Take the paupiettes out the night before you need to cook them and defrost in the fridge. Cook them as before when they have fully defrosted.

  • Cut the boar or pork shoulder into cubes large enough to fit into your meat grinder. Mix the salt and all the herbs and spices in with the meat, then grind through the coarse plate on your grinder. Mix in the chestnuts (if using) by hand. If you are using pre-ground meat, mix in everything at once by hand.
  • Put the caul fat into a bowl of lukewarm water. Gently unfold it and lay it out flat on a large work surface, like a pasta board, large cutting board or a counter or tabletop.
  • Form the meat into small patties. Size and shape is your option: I like patties the size of breakfast sausage patties, but you could go larger if you like. Many crepinettes are torpedo-shaped, so you could go that route, too. Lay each patty on the caul fat and, using a sharp knife, cut a square of caul fat around the patty a little larger than the meat: You need it to wrap completely around the patty. It is better to have too much fat than too little. It renders away, for the most part. Set each completed crepinette on a cookie sheet, seam side down. Refrigerate for 1 hour before you cook them; this helps the crepinettes hold their shape.
  • To cook, set the crepinettes seam side down in a large saute pan and turn the heat to medium-high. When they start to sizzle, turn the heat down to medium and let them sizzle gently for 10 minutes or so. Do not be tempted to rush this. Crepinettes are best cooked at a leisurely pace. When the seam side is nicely browned, flip and cook for another 6-8 minutes on the other side. When that side has browned, serve them up hot.
