BAKED SRIRACHA BUFFALO WINGS WITH SWEET CHILI MAYO DIPPING SAUCE
Make hot wings with sriracha and serve with a chili-lime dip.

- Whisk the chili sauce, mayonnaise, lime juice and 1/2 teaspoon salt together in a small bowl. Cover and refrigerate until ready to serve.
- Preheat the oven to 425 degrees. Generously oil 2 rimmed baking sheets.
- Toss the wings with 2 teaspoons salt and a few grinds of pepper in a large bowl and divide them between the 2 prepared baking sheets, spreading them out into a single layer. Bake until very crispy, about 55 minutes.
- Whisk the melted butter and sriracha together in a large bowl. Transfer the baked wings to the bowl and toss to coat. Serve with the dipping sauce and celery sticks if using.
SRIRACHA BUFFALO WINGS
Spicy Buffalo wings get a little twist with some Sriracha sauce. I like to deep fry my wings, but I've also included instructions in the recipe notes for baking them.

Steps:
- Heat vegetable oil to 350°F in preparation for frying. In a small bowl, whisk flour, water, and cornstarch until thick, smooth slurry forms. Coat wings lightly in the slurry (if it clings on too thick, manually wipe some of it off). Fry in small batches, about 9-10 minutes until crispy and golden.
- While wings are cooking, make the buffalo sauce. Melt butter in a small saucepan on the stove. Stir in sriracha until sauce becomes uniform and orange. If desired, add in a squeeze of fresh lime juice. Coat finished wings with sauce (I used a brush and brushed the wings with the sauce, double coating each one). Garnish with cilantro if desired. Serve with carrots, celery and ranch dressing.
BAKED GARLIC BALSAMIC WINGS WITH BLUE RANCH DIPPING SAUCE
Chicken wings are baked until super crispy and then tossed with a sweet and tangy balsamic-honey glaze and whole cloves of roasted garlic and served with a cool buttermilk-blue cheese sauce for dipping.

- Whisk together the sour cream, mayonnaise, blue cheese, buttermilk, chives and garlic. Season to taste with and pepper. Refrigerate until ready to serve.
- Preheat the oven to 425 degrees F. Drizzle the garlic heads with 1 tablespoon of oil and wrap in foil. Bake until golden and soft, about 1 1/2 hours.
- After about a 30 minutes, generously oil 2 rimmed baking sheets. Toss the wings with 2 teaspoons salt and a few grinds of pepper and divide them between the two baking sheets, spreading them in a single layer. Bake until very crispy, about 55 minutes.
- Squeeze the baked garlic from the heads into a large bowl. Combine the vinegar, honey, thyme, red pepper flakes, 1/3 cup water and 1 teaspoon salt in a small saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and simmer briskly until the liquid becomes syrupy and is thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and whisk in the remaining 3 tablespoons of oil. Whisk into the bowl with the garlic.
- Transfer the baked wings to the bowl with the glaze and toss to combine. Serve with the dipping sauce.
WASABI RANCH SAUCE
Steps:
- Mix 3/4 cup ranch dressing, 1/2 cup grated cucumber, the juice of 1/2 lemon and 1 tablespoon wasabi paste. Season with salt.

- Preheat the oven to 425 degrees. Line a rimmed baking sheet with parchment paper.
- Place the chicken wings in a large bowl and toss with the oil, sea salt, and pepper. Place the chicken wings on the prepared baking sheet in a single layer. Bake in the oven for 35-40 minutes, or until the wings are quite crispy.
- While the wings are baking prepare the sauce. Melt the butter in a small frying pan over medium-high heat. Add the sriracha and whisk to combine.

- For the sriracha ranch dipping sauce: In a medium bowl, whisk together the mayonnaise, buttermilk, sour creamcilantro, parsley, scallions, sriracha, sugar and lime zest and juice until smooth. Season with salt and pepper.
- For the chicken: Crumble the chips into a food processor and process until finely ground. (You should have about 3 cups crumbs.) Spread the crumbs in a large shallow bowl.
- Beat the eggs and sriracha in a second shallow bowl, and combine the flour, 1/2 teaspoon salt and some pepper in a third shallow bowl.
- Sprinkle the chicken strips with some salt and pepper.
- Heat about 1 inch vegetable oil in a large cast-iron skillet until a few crumbs sizzle on contact (350 to 360 degrees F).
- Dredge the chicken in the flour, then the egg, then the crumbs. Fry, in batches, until crisp and golden, about 4 minutes per batch. Drain on paper towels.
- Sprinkle with salt and serve warm with the sriracha ranch dipping sauce and crudites.

- Place the chicken wings in large resealable bag in a shallow baking dish.
- Melt the butter in a small saucepan and remove from the heat. Stir in the honey, hot sauce, paprika, salt and cayenne pepper. Let cool completely and pour over the chicken wings. Seal the bag and let marinate at room temperature 25 to 30 minutes. Drain and discard the marinade.
- Meanwhile, preheat the oven to 425 degrees F. Line a large sheet tray with aluminum foil and spray with nonstick spray.
- Bake the chicken on the sheet tray, flipping once halfway through cooking, 35 minutes.
- Serve alongside the Blue Cheese Dipping Sauce and celery sticks.
- Combine the blue cheese, mayonnaise, sour cream and Worcestershire sauce together in mixing bowl or food processor and mix until combined. Season with salt and pepper.
