Steps:
- Spray large nonstick skillet with cooking spray. Add pork and green pepper; cook on medium-high heat 3 to 4 minutes or until pork is cooked through and vegetables are crisp-tender. Add salsa; cook until heated through, stirring frequently.
- Place tortillas on microwavable plate. Cover with plastic wrap. Microwave on HIGH 30 seconds or until warmed.
- Spoon meat mixture evenly over tortillas; sprinkle with cheese. Roll up.

TEX-MEX PORK FAJITAS WITH PEPPERS AND ONIONS
Spiced pork chops are grilled and thinly sliced and served with charred peppers and onions in tortillas and toppings.

- Mix together the paprika, brown sugar, chili powder, cumin, chipotle chile powder, garlic powder and 1 teaspoon salt in a small bowl. Toss the pork chops in a container with the oil and lime juice, then rub with the spice mixture. Refrigerate, covered, for at least 30 minutes up to 2 hours before cooking.
- Heat a cast-iron skillet over medium-high heat until hot. Toss the peppers and onions in a bowl with the oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot skillet and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
- Prepare an outdoor grill for medium-high heat.
- Lightly brush the grill grates with oil and grill the pork chops until marked and cooked through, 4 to 5 minutes per side. Transfer to a cutting board, let rest for 10 minutes and then thinly slice.
- Serve with the warm tortillas peppers and onions, guacamole, sliced pickled jalapenos, lime wedges, shredded pepper jack cheese, salsa, chopped scallions, sour cream.

PORK TACOS WITH ONIONS AND PEPPERS

- Put a rimmed baking sheet under the broiler; preheat 5 minutes. Toss the pork with 1 tablespoon olive oil and 1 teaspoon fajita seasoning in a large bowl. Transfer the pork to the hot baking sheet and broil 5 minutes. Meanwhile, add the bell peppers, thickly sliced onions, 1 tablespoon olive oil and the remaining 1 teaspoon fajita seasoning to the bowl; toss.
- Turn the pork and scatter the vegetables around it. Broil, tossing the vegetables and turning the pork occasionally, until the vegetables are tender and charred around the edges and a thermometer inserted into the center of the pork registers 145 degrees F, 5 to 7 minutes. Remove the pork to a cutting board and let rest 5 minutes. (Continue broiling the vegetables, if needed.)
- Toss the thinly sliced onion, radishes, cucumbers, jalapenos and brine in a bowl; season with salt and pepper. Add the cilantro, the remaining 1 tablespoon olive oil and the lime juice; toss.
- Slice the pork and toss with the peppers and onions. Serve in the tortillas with the cucumber salad and lime wedges.

- In a shallow dish mix the flour with seasoned salt and pepper.
- Dredge the pork cubes in the flour mixture.
- Heat oil in a Dutch oven and brown the pork cubes.
- Add in the chili flakes (if using) broth, tomatoes with juice, green chilies with juice, onions, garlic, cumin, oregano; bring to a boil, reduce heat and simmer over medium-low heat (uncovered) for about 1-1/2 hours (season with salt and pepper to taste).
- Add in the black beans and corn; simmer for about 20-30 minutes.
- Spoon the mixture down the center of each tortilla, then sprinkle with shredded cheese and chopped green onions.
- Fold the sides over filling.
- Serve with desired toppings.

- Brown the pork in the oil and set aside.
- Add the onion, garlic and cumin.
- Cook until the onions are transparent.
- Return the meat to the pan.
- Add peppers.
- Stir in the tomatillos,broth, peppers, tomato, cumin and oregano.
- Bring to a boil, simmer covered about 1 1/2 hours.
- Uncover and simmer about a 1/2 hour more or until the sauce has decreased and thickened.
- Stir in the lime juice.
- Serve over cooked rice, sprinkle with the toasted almonds.
