This is an easy one dish casserole that is great for a breakfast, brunch, holiday or for overnight guests as a special breakfast. I make this Christmas morning before I wake everyone up to open presents and the smell of it cooking makes us hurry to open the presents so we can dig in! Very versitile recipe. I have added various ingredients such as sauteed mushrooms, green chilis, olives, sausage and onions to make a rich omelet-like dish. I sometimes serve with a NW favorite to top...Tiger Sauce. This recipe came from my friend Kyle and was an immediate hit with all.

1 lb bacon, diced, cooked and drained
12 eggs
1/2 cup milk
32 ounces tater tots
2 cups cheddar cheese, shredded
1 pinch salt
1/8 teaspoon pepper

Steps:

  • Place cooked bacon in the bottom of a 13 x 9 pan.
  • Cover with tater tots.
  • Beat eggs, milk, salt and pepper. Pour over tater tots.
  • Top with cheese.
  • Bake at 350 degrees for 1 hour.

2 lbs frozen tater tots
4 eggs
1 cup milk
3 cups shredded cheddar cheese
2 cups shredded mozzarella cheese
1 cup sour cream
5 chives, chopped
1/2 lb spicy breakfast sausage
2 teaspoons seasoning salt
1 tablespoon hot sauce
1/4 cup breadcrumbs or 1/4 cup seasoned stuffing mix
salt and pepper

Steps:

  • Prepare a glass baking dish (at least 8x10) by spreading butter along the bottom and sides.
  • In a bowl, mix eggs, milk, sour cream, chives, seasoned salt, hot sauce and salt and pepper and whisk until well blended.
  • Add 2 cups cheddar and 1 cup mozzarella cheese and tots to mixture. Mix well until all tots are coated and all ingredients mixed.
  • In small pan, cook sausage until just before done (sausage will finish in the oven), drain well and add to tot mixture.
  • Pour the mixture into your pre-greased baking pan and top with the rest of the cheese and the bread crumbs. Spread topping evenly.
  • Bake at 350 degrees for 45 minutes or until topping is golden brown.

Butter, for the baking dish
1 tablespoon olive oil
1 pound spicy bulk breakfast sausage
1 medium onion, very finely diced
1 cup milk
1/2 cup half-and-half
1/4 teaspoon seasoned salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper, very finely diced
1 green bell pepper, very finely diced
2 cups grated Cheddar cheese
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • Line up the tater tots in a buttered 9-by-13-inch baking dish.
  • Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
  • In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

1/2 cup chopped tomatoes
1/4 cup sliced green onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 8- or 10-inch nonstick skillet, heat oil over medium heat. Cook onion in oil 3 to 5 minutes, stirring occasionally, until tender.
  • In medium bowl, stir onion, condensed soup, sour cream, milk, 1 cup of the cheese, 2 tablespoons of the dressing mix and the black pepper until mixed well; stir in chicken.
  • Place half of the frozen potatoes in single layer on bottom of baking dish. Spoon and spread chicken mixture on top of potatoes; sprinkle 1/4 cup of the bacon on top.

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage and onion in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Drain and cool.

1 (30 ounce) package frozen tater tots
1 (10 1/2 ounce) can cream of mushroom soup
1 lb frozen mixed vegetables (peas, carrots, corn, green beans)
1 lb hamburger
1 small onion, chopped (optional)
1/4 cup milk
1 -2 cup of shredded cheddar cheese

Steps:

  • Preheat oven to temperature indicated on tater tot bag.
  • Peel, cut or chop onion add to hamburger as browning (optional).
  • Brown and drain hamburger.
