STUFFED MUSHROOM CASSEROLE

Steps:
- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large skillet over medium-high heat. Add the mushrooms, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the mushrooms are softened and have released most of their liquid, 7 to 8 minutes. Add the garlic and cook, stirring occasionally, until soft and fragrant, about 1 minute. Stir in the cream cheese and cook until melted and evenly coating the mushrooms. Stir in the mozzarella, 1/2 cup of the panko and 1/4 cup of the Parmesan until combined. Transfer to an 8-inch square baking dish.
- Combine the parsley, butter and remaining 1/2 cup panko and 1/4 cup Parmesan in a medium bowl. Sprinkle over top of the mushrooms and bake until the breadcrumbs are light golden brown, 25 to 30 minutes.
YUMMY PORK NOODLE CASSEROLE
This is my Mom's pork noodle casserole. The added sour cream gives it a little twist on the usual version. The added red pepper and corn give it color and flavor. You can add and subtract any vegetables in this versatile recipe. This is one of my favorite comfort food recipes.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
- Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Melt the butter in a skillet over medium heat. Stir in the onion, celery, carrots, and red bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the noodles, cream of chicken soup, sour cream, Cheddar cheese, corn, and cooked pork, then season with salt and black pepper. Transfer mixture into the prepared baking dish. Sprinkle bread crumbs on top.
- Bake in the preheated oven until bubbly, 30 to 35 minutes.

PORK AND MUSHROOM CASSEROLE
This is a very old recipe that I found years ago in one of my mother's cookbooks that she got when she first got married. It is very delicious and a favorite in my household.

Steps:
- Panfry bacon in skillet until browned.
- Remove with a slotted spoon.
- Saute onion and mushrooms in bacon fat until tender.
- Remove with slotted spoon and combine with bacon.
- Season tenderloin pieces.
- Dip in beaten egg, then roll in cracker crumbs.
- Brown in remaining bacon fat.
- Fill a 1-QT casserole dish with alternate layers of the browned tenderloin slices and the browned bacon, onions, and mushrooms.
- Add the mushroom liquid, cover and bake at 350*F for 30 minutes.
- VARIATIONS: I most often substitute orange juice or apple juice for the mushroom liquid.
- Makes it even more delicious!

This recipe is one of my favorites for using pork chops. The meal turns out to be very tasty and tender. I got this many years ago from Nova Scotia, where I am originally from.

Steps:
- Season chops with pepper and paprika.
- Saute chops at low temperature in butter.
- Season with salt after chops are brown.
- Transfer chops to baking dish or casserole.
- Combine celery, onions, parsley, soup mushrooms and water. Pour over chops.
- Cook covered in 180 C or 350 F oven for 30 minutes. Turn chops over and cook for another 30 minutes or until done and the meat is no longer pink.
- Serve with rice or noodles.
- Enjoy!

Tender, tasty pork chops in a creamy vegetable sauce. I paired it with Carol Bullock's Greek Potatoes (Recipe #8926) and it was a big hit. Also served green beans and sliced carrots. I omitted the salt from the chops as there was enough in the (low sodium) soup for our tastes.

CREAMY PORK AND MUSHROOM CASSEROLE

- Fry the bacon, onions and garlic in the oil, in a pan until soft.
- Add the pork and fry till browned slightly.
- Add the mushrooms, wine, cream, stock salt and pepper. Mixing it all in gently.
- Cook slowly on a low heat, stirring occasionally. This takes about 30 minutes or so to be ready.
- Add flour to thicken if needed. Serve with mashed potatoes and green vegetables and carrots.

- In a skillet, brown pork in butter. Transfer meat to an ungreased shallow 1-1/2-qt. baking dish. Sprinkle with salt and pepper; set aside. In the pan drippings, saute the onion, mushrooms and celery until tender. Combine flour and broth until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes. Pour over meat. CREAMY PORK CHOPS, MUSHROOM AND POTATO CASSEROLE
Total comfort food! You will need 3/4-inch thick pork chops for this, make certain to slice the potatoes the same thickness as the chops to assure that both are cooked at the same time. You can use fresh mushrooms instead of canned but they will need to be sauteed firstly to release their liquid. Serve this with hot cooked buttered egg noodles and green beans!

- Het oven to 325 degrees.
- Butter a 13 x 9-inch baking dish.
- Heat oil with butter in a skillet.
- Season the chops with seasoned salt and black pepper, add to the skillet and lightly brown on both sides; remove to a plate and set aside.
- To the same skillet (add in more butter and/or oil if needed) add in onion, garlic, celery and mushroom pieces; saute for about 3 minutes; remove from heat.
- Arrange the potato slices in the buttered baking dish, then top with the onion/celery mixture.
- In a bowl combine the mushroom soup with sour cream, milk and Parmesan cheese, 1 cup grated old cheddar cheese, 1 teaspoon seasoned salt and black pepper to taste.
- Spoon the soup mixture over the potatoes and onions.
- Arrange the browned chops on top.
- Cover with foil and bake about 1-3/4 to 2 hours or until the chops and potatoes are tender.
- Remove from oven and sprinkle with about 1 cup (or more or less) grated old cheddar cheese, then return to oven uncovered for another 8-10 minutes.
- Let stand about 10 minutes before serving.
PORK CHOP CASSEROLE
I cut this out of a cooking magazine, probably Taste Of Home and changed it to suit or our tastes. It sounds like a very flavorful way to have pork chops and to keep them moist. I haven't made them yet but plan to make them and serve them over mashed potatoes, yummy!!!!! Note: This recipe also works great in a crock pot. My friend and I have decided that it is easier to just mix all the sour cream with the soup and broth in the beginning.

- In a shallow bowl, combine the flour, salt and pepper; dredge pork chops.
- Heat oil in a large skillet; cook pork chops for 4 to 5 minutes per side or until browned.
- Place pork chops in a single layer in an ungreased 13x9x2 inch baking dish.
- Combine cream of mushroom soup, chicken broth and 1/2 cup sour cream; pour over chops.
- Sprinkle with half of the French fried onions.
