Vietnamese Pork Chops with Ginger Rice image

2 tablespoons packed brown sugar
2 tablespoons low-sodium soy sauce
1 tablespoon fish sauce
2 tablespoons finely chopped fresh lemongrass (or 1 tablespoon grated lemon zest)
2 cloves garlic, grated
1 shallot, finely chopped
4 thin bone-in pork chops (about 4 ounces each)
1 cup jasmine rice
1 2-inch piece ginger, peeled and grated (about 2 tablespoons)
1/2 cup roughly chopped fresh mint
2 Persian cucumbers, diced
Kosher salt and freshly ground pepper

Steps:

  • Combine 1/4 cup water with the brown sugar, soy sauce, fish sauce, lemongrass, garlic and shallot in a shallow dish. Add the pork chops and turn to coat. Let marinate 15 minutes.
  • Meanwhile, cook the rice as the label directs, adding the grated ginger to the water.
  • Preheat the broiler. Remove the pork chops from the marinade; transfer to a broiler pan (reserve the marinade). Broil until the pork is charred and cooked through, 6 minutes. Transfer the marinade to a skillet; add 1/4 cup water and bring to a boil over high heat. Cook, stirring occasionally, until thickened, about 3 minutes.
  • Fluff the rice with a fork and stir in the mint and cucumber; season with salt and pepper. Serve the pork with the rice and pan sauce.

2 tablespoons soy sauce
2 tablespoons minced fresh ginger root

1 teaspoon minced garlic

Steps:

  • In a shallow container, mix together orange juice, soy sauce, ginger, orange zest, garlic, chile paste, and salt. Add pork chops, and turn to coat evenly. Cover, and refrigerate for at least 2 hours, or overnight. Turn the pork chops in the marinade occasionally.
  • Preheat grill for high heat, and lightly oil grate.

1 tablespoon minced fresh gingerroot

  • In a small skillet over medium-low heat, cook onion in 2 teaspoons oil until golden brown and very tender, about 10 minutes. 3 pears - peeled, cored and chopped
3 tablespoons brown sugar
2 tablespoons lemon juice
¾ cup pear juice
2 tablespoons ground cinnamon, or to taste
1 tablespoon vegetable oil
6 thin cut boneless pork chops

Steps:

  • In a medium saucepan, mix the pears, brown sugar, lemon juice, pear juice, and cinnamon. Bring to boil. Cook 30 minutes, stirring occasionally, until thickened.
  • Transfer the sauce mixture to a blender, and blend until smooth. Return to saucepan, cover, and simmer 15 minutes over low heat. Remove from heat, and allow to cool.

2 teaspoons vegetable oil
2 tablespoons lemon juice
2 tablespoons sugar
2/3 cup white wine (could use apple juice)
1/2 cup chicken stock
2 pears, peeled cored, thinly sliced
2 teaspoons cornstarch
1/2 teaspoon ground ginger
salt and pepper

  • Trim fat from porkchops.
  • In larg non stick skillet heat oil (med heat).
  • Cook pork 3-5min per side.
  • Transfer to dish and cover with foil to keep warm.
  • Add the lemon juice and the sugar to the pan and stir contantly abd cook until golden.
  • Stir in wine and chicken broth.
  • Add pears and cook uncovered for 5-7 minutes or until tender.
  • Mix cornstarch with 2 tsp water.
  • Add salt and pepper to taste.
  • Add ginger.
  • Return pork chops to skillet and heat through.

4 (4 ounce) boneless pork chops, select a thicker cut and trim all visible fat
salt & freshly ground black pepper
2 teaspoons canola oil or 2 teaspoons corn oil
3 tablespoons cider vinegar
2 tablespoons sugar (I think you can do this with Splenda by adding it closer to the end of the preparation)
2/3 cup white wine, dry would be best
1 cup reduced-fat chicken broth
1 firm ripe bosc pears or 1 Anjou pear, peeled, cored and cut lengthwise into eighths
1/4 cup fresh ginger, peeled and cut into thin julienne strips
6 scallions, trimmed and sliced into 1/2 inch lengths
2 teaspoons cornstarch
2 teaspoons water

Steps:

  • Season porkchops with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork and cook until browned and just cooked through, two to three minutes per side. Transfer to a plate and keep warm. Pour off fat from the pan.
  • Add vinegar and sugar to the pan and stir to dissolve the sugar. Cook over medium-high heat until the syrup turns dark amber, 10 to 20 seconds. Pour in wine and bring to a simmer while stirring.
  • Add broth, pears and ginger to the wine-vinegar sauce bring to a simmer. Cook, uncovered, turning the pears occasionally, for 4 minutes. Add scallions and cook until the pears are tender, about 2 minutes more.
  • Mix together the water and cornstarch into a slurry and add to the pan. Stir until the sauce thickens. Reduce heat to low and return the pork and any accumulated juices to the pan; turn to coat with the sauce.
  • Serve immediately.

2 thick center-cut pork chops
1 Tbsp (7 ml) of any vegetable oil
1 Tbsp (15 ml) of butter
½ cup (125 ml) of orange juice
2 Tbsp (30 ml) of marmalade
2 Tbsp (5 ml) or so of soy sauce
A knob of unpeeled ginger, grated
2 green onions, chopped
1 Tbsp (15 ml) or so of rice vinegar
A sprinkle or two of salt and lots of freshly ground pepper

Steps:

  • Preheat your oven to 350F (175C).
  • Preheat a large saucepan over medium-high heat. Splash in some oil and toss some butter in the center of the oil. Season the pork chops with salt and pepper. When the butter starts to brown, lay in the pork chops. Sear until lightly and evenly browned and delicious looking then flip to cook the other side on low. Reduce your heat to its lowest possible setting, place a lid on the saucepan and allow the chops to finish cooking in your improvised oven. This will take about 5 minutes or so. Rest the chops on a plate covered loosely with foil. Toss it in the warm oven. Close the door, turn off the heat and make the sauce.
  • Turn the pan heat to high. Pour in the orange juice and spoon in the marmalade. Stir the sauce as it boils and scours the pan of all the browned flavour bits, the concentrated pan juices. The sauce thickens as it reduces. This makes for less sauce but bigger flavor. When the sauce thickens to a smooth consistency, finish by stirring in the soy sauce, ginger, green onions and vinegar. Serve up the warm chops with the sauce, share and enjoy!
  • Freestyle Twist: These simple chops can be dressed up by simply twisting the sauce in a variety of ways. Try white wine and mustard, red wine and raspberry jelly or for some zing, apple juice and horseradish.

fat
1 tablespoon cooking oil
1 small onion, sliced and separated into rings
1/4 cup crushed ginger snaps (4 cookies)
1/4 cup red wine vinegar
1 teaspoon beef bouillon granules
1/8 teaspoon ground ginger
1/8 teaspoon ground pepper
1 dash ground cloves

Steps:

  • In a skillet, brown chops in hot oil on both sides.
  • Drain on paper towels.

4 1/2-inch-thick boneless pork loin chops
Dried rubbed sage
All purpose flour
2 pears, peeled, cored, thinly sliced (about 1 pound)
1/3 cup dry white wine

2 tablespoons chopped crystallized ginger

Steps:

  • Heat oil in heavy large skillet over medium heat. Season pork with dried sage, salt and pepper. Coat pork with flour; shake off excess. Add pork to skillet and sauté until brown, about 3 minutes per side. Transfer to platter.
  • Drain fat from skillet. Add pears and sauté over medium heat 2 minutes. Stir in wine, sugar and ginger, scraping up any browned bits.
