A deliciously flavorful and fruity barbecue sauce you can enjoy on your grilled meats, chicken, burgers, pulled pork sandwiches, and use it in any recipe that calls for barbecue sauce!

2 teaspoons oil
1 medium yellow onion (chopped)
3 cloves garlic (minced)
3 cups pitted cherries (fresh or frozen/thawed)
1 cup plain tomato sauce
1 cup ketchup
1 cup cane sugar, for low sugar alternative use sugar substitute, e.g. Swerve Sweetener, though if canning you'll need to confirm if it's suitable for that purpose)
1/4 cup apple cider vinegar
3 tablespoons molasses
1 tablespoon Worcestershire sauce
1 tablespoon ancho chili powder
1 teaspoon dry ground mustard
1 teaspoon onion powder
1/2 teaspoon garlic powder
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika
1-2 teaspoons liquid smoke (optional)

Steps:

  • Heat the oil in a medium-sized heavy-bottomed pot and cook the onions and garlic until soft and translucent, 5-7 minutes. Add the remaining ingredients and bring to a boil. Reduce the heat and simmer uncovered for 20 minutes. Transfer the sauce to a blender and puree until smooth.
  • Pour the sauce into non-reactive air-tight containers and store in the refrigerator. Wait at least 3 days before using to allow the flavors to meld. Will keep for up to a month.
  • If canning for long-term storage, pour the hot barbecue sauce into sterilized half pint or pint sized jars leaving 1/4 inch headspace. Process in a water bath for 15 minutes. Remove and let the jars sit undisturbed for 24 hours before moving them to a cool place. Will keep for up to a year.

1/2 cup KRAFT Sweet & Spicy Barbecue Sauce
1/4 cup HEINZ Apple Cider Vinegar
1 Tbsp. GREY POUPON Dijon Mustard
2 Tbsp. brown sugar
4 bone-in pork chops (1-1/2 lb.), 3/4 inch thick

Steps:

  • Use pulsing action of food processor to process cherries until slightly chunky. Spoon into small saucepan. Add barbecue sauce, vinegar, mustard and sugar; mix well. Bring to boil on medium-high heat, stirring constantly. Simmer on medium-low heat 10 min., stirring occasionally. Refrigerate 30 min. or until cooled.
  • Place chops in shallow dish. Pour 3/4 cup barbecue sauce mixture over chops; turn to evenly coat both sides of chops with barbecue sauce mixture. Refrigerate 30 min. to marinate.
  • Heat grill to medium heat. Remove chops from marinade; discard marinade. Reserve 1/4 cup of the remaining barbecue sauce mixture for serving with the cooked chops. Grill chops 5 to 7 min. on each side or until done (145°F), brushing with remaining barbecue sauce mixture for the last 3 min. Remove chops from grill. Let stand 3 min.
  • Serve chops with the reserved barbecue sauce mixture.

1 tablespoon freshly ground black pepper
1 tablespoon kosher salt
1 tablespoon granulated sugar
2 teaspoons sweet smoked paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 to 5 teaspoons chile flakes, depending on how spicy you like it
Four 1 1/4-inch-thick pork butt steaks
Olive oil, for drizzling
1 jalapeño, sliced
1 medium yellow onion, diced
1 teaspoon ground coriander
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 cups pitted fresh cherries (frozen work, too)
One 7.5-ounce can cherry soda, like Dr. Pepper
1/4 cup molasses
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
Juice of 1/2 lemon

Steps:

  • For the rub: In a mixing bowl, whisk together the pepper, salt, sugar, smoked paprika, garlic powder, onion powder and chile flakes. Liberally sprinkle the pork steaks on both sides and allow to marinate, refrigerated, for 3 hours or up to overnight.
  • Set up your grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Make the cherry barbecue sauce: Place a saucepan over the direct-heat side of the grill. Add a drizzle of olive oil along with the jalapeño and onion. Season with the coriander, cumin and salt and sweat until softened, 2 to 3 minutes. Add the cherries, cherry soda, molasses and Worcestershire sauce. Bring to a simmer and cook until the cherries have softened, about 10 minutes. Transfer to a blender and purée until smooth. Add the balsamic and lemon juice and purée again. Transfer back to the saucepan and place on the indirect-heat side of the grill. Cook until the sauce thickens and reduces, about 20 minutes. Remove from the grill and set aside.
  • Place the pork steaks on the indirect-heat side of the grill, close the lid and cook, keeping the temperature of the grill between 250 and 275 degrees F and basting with the cherry barbecue sauce once they have cooked for 2 hours, until the pork steaks are tender and an internal temperature reaches 195 degrees F, 3 to 4 hours total. Remove from the grill and allow the pork to rest for 10 minutes before serving. Serve with any remaining cherry barbecue sauce on the side.

I found this recipe in a weekly magazine that comes with our newspaper. I am not a big meat eater, but I figured that matching the pork with the cherries was a good mix and boy was I right. I hope you enjoy this as much as my husband and I did! The cherry sauce did call for putting in 12 whole cloves when you are simmering it with the sugar and cinnamon, and then removing them. I did not do this as I don't like cloves.

3 -4 lbs boneless pork loin roast
1 (14 ounce) can red tart pitted cherries, packed in water
1 -1 1/2 cup sugar
1/4 cup cider vinegar
1/4 teaspoon cinnamon
1/3 cup cornstarch
1 tablespoon lemon juice
1 tablespoon butter

Steps:

  • Preheat the oven to 325 degrees.
  • Combine salt, pepper, and garlic powder in a small bowl and mix well.
  • Rub on the pork roast.
  • Place in an 11 x 7 baking dish, fat side up.
  • Bake, uncovered for 1 1/2 - 2 hours, until internal temperature reaches 160 degrees.
  • Drain cherries, reserving liquid. Add enough water to cherry liquid to measure 3/4 cup.
  • Pour 1/2 cup into a medium saucepan and add sugar, vinegar, and cinnamon.
  • Bring to a boil, reduce heat, and simmer uncovered, 10 minutes.
  • Combine cornstarch with reserved 1/4 cup liquid and stir until cornstarch dissolves.
  • Using a wisk, stir cornstarch mixture into hot cherry liquid.
  • Bring to a boil and cook for 2 minutes, stirring constantly.
  • Stir in lemon juice, butter and cherries.
  • Cook 1 minute longer.
  • Place pork on cutting board and let stand for 15 minutes before slicing.
  • Serve with cherry sauce.

8 pork chops, bone-in, about 6 to 8 ounces each (about 1" thick)
sea salt
fresh ground black pepper
1 cup dry white wine
1 teaspoon Dijon mustard
1/2 lb fresh cherries, halved, pitted (or 1/2 cup dried cherries, soaked in hot water 10 minutes)
2 teaspoons unsalted butter (optional)

Steps:

  • Heat olive oil in a large skillet over medium-high heat.
  • Lightly season pork chops with salt and pepper, then, two to four at a time, depending on the size of your skillet, brown well on each side, removing to warm oven.
  • Deglaze the skillet with the wine, scraping up brown bits, reduce heat to medium and stir in the mustard, then add the cherries.
  • Season to taste with salt and pepper.
  • When the sauce begins to bubble, add all the pork chops back into the skillet, spooning sauce over them to coat, cover and reduce heat to medium low.
  • Cook over medium low about 5 minutes, then rearrange chops so those on the bottom are now on the top, and spoon sauce over.
  • Cover and cook an additional 5 minutes or more, until chops are cooked through, but still very slightly pink inside (test by prying into the thickest part of one chop with a knife point).
  • Remove chops to serving platter or individual plates.
  • Melt butter (optional) into remaining sauce in skillet, heat and spoon over chops.

2 1/2 cups chicken stock
2 ounces dried cherries
1/3 cup balsamic vinegar
4 pork loin chops, 1 inch-thick (bone in)
coarse salt & freshly ground black pepper
1 tablespoon olive oil
1 tablespoon butter
1 sprig of fresh watercress (or Italian parsley)

Steps:

  • Place 2 cups stock, the dried cherries and balsamic vinegar in a small saucepan over medium heat and simmer gently until the sauce is reduced by half.
  • Set aside.
  • Twenty minutes before serving, sprinkle each side of each pork chop with salt and pepper.
  • Place the olive oil and butter in a medium-sized saute pan and heat until the bubble subside.
  • Place each chop carefully in the pan so they are not touching.
  • Leave them to brown without moving for 2 to 3 minutes.
  • When the chops are a brown, turn with tongs and brown the other side.
  • Remove the chops from the pan, pour off any fat, add 1/2 cup chicken stock.
  • Return the chops to the pan, place over low heat, cover, and cook gently for 3-4 minutes, until the chops are just firm when pressed with a finger.
  • Remove the chops and keep warm.
  • Add the balsamic-dried cherry mixture to the saute pan and bring to a boil.
  • Let the sauce simmer for 5 minutes - it should coat the spoon again.
  • Taste, add salt and pepper to taste.
  • Place the chops on warm dinner plates; spoon over the dried cherry sauce.
  • Garnish with sprigs of watercress or Italian parsley.

2 tablespoons vegetable oil
1/2 cup onion, chopped
1 cup reduced-sodium chicken broth
1/3 cup dried tart cherry
2 tablespoons orange marmalade
1 tablespoon balsamic vinegar
red pepper flakes, to taste

Steps:

  • Season pork chops with some salt and pepper to your liking. Heat oil in a large skillet on high heat. Add pork chops; brown well, about 3 minutes per side. Remove to plate.

1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 cup cherry preserves
1 teaspoon balsamic vinegar

Steps:

  • Heat a large nonstick skillet over med-high heat.
  • Coat pan with cooking spray.
  • Sprinkle pork with half the salt and pepper.
  • Add pork to pan and cook 4-5 minutes on each side, or until browned and cooked through.
  • Remove and keep warm.
  • Add preserves, vinegar and remaining salt and pepper to pan.

3/4 cup dry red wine

2 teaspoons fresh lime juice, or to taste
eight 1-inch-thick boneless pork chops
vegetable oil for rubbing chops

Steps:

  • In a heavy saucepan boil the vinegar with the sugar over moderate heat until the mixture is reduced to a glaze. Add the wine, the shallot, and the cinnamon stick and boil the mixture until it is reduced to about 1/4 cup. Add the broth and the cherries and simmer the sauce for 5 minutes. Stir the cornstarch mixture, add enough of it to the sauce, stirring, to thicken the sauce to the desired consistency, and simmer the sauce for 2 minutes. Discard the cinnamon stick, stir in the lime juice and salt and pepper to taste, and keep the sauce warm, covered.
  • Pat the chops dry with paper towels, rub both sides of each chop with the oil, and season the chops with salt and pepper. Grill the chops on an oiled rack set 5 to 6 inches over glowing coals for 6 to 8 minutes on each side, or until they are just cooked through. Transfer the pork chops to a platter and spoon the sauce over them.
