6 (1 inch thick) boneless pork chops
6 tablespoons process cheese sauce
12 slices bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Fry the bacon in a skillet over medium heat until cooked through but still flexible. Wrap two slices of bacon around each pork chop and top with a tablespoon of cheese sauce. Place the pork chops in a baking dish.
  • Bake for 1 hour in the preheated oven.

Pork Chops With Bananas and Bacon (Antigua and Barbuda) image

This recipe is from week eleven of my food blog, Travel by Stove. I am attempting to cook one meal from every nation on Earth, and Antigua and Barbuda is my eleventh stop. You might think bacon and banana sounds like a strange combination, but it works surprisingly well. This recipe comes together pretty quickly and can be cooked on an indoor grill or on the barbecue.

4 pork chops
3/4 tablespoon cumin
salt and pepper (to taste)
1 lemon, juice of
2 tablespoons butter, softened
2 bananas
6 slices bacon
beer (optional)

Steps:

  • Combine the butter with the cumin, salt and pepper. Rub the pork chops all over with the mixture.
  • Now put the pork chops on the grill and cook them over medium heat for about 7 and a half minutes per side.
  • Cook the bacon in a frying pan for just a couple of minutes, long enough for some of the fat to render. Remove and let cool.
  • Cut the bananas into chunks sprinkle them with lemon juice. Wrap the bacon around each chunk. Skewer each wrapped piece through the overlap in the bacon.
  • After the chops have been cooking for about 15 minutes, turn the heat down to medium low and put the bacon and bananas on the grill. Use a meat thermometer to make sure the chops aren't cooking too fast.
  • Continue to turn the chops and the bacon/banana skewers. At this point you can also start basting the chops with beer.
  • When the chops and bacon are thoroughly cooked, remove from the grill and serve.

2 cups orange juice
1/4 cup sea salt
Four 8- to 10-ounce pork chops
2 tablespoons grapeseed oil
1 tablespoon salt
1/2 teaspoon ground pepper
1 tablespoon grapeseed oil
1 cup 1/2-inch-diced apple
1/4 cup medium-diced cooked bacon
1/4 cup julienned red onion
1 teaspoon salt
1/4 cup white balsamic vinegar
1 teaspoon sugar
2 tablespoons butter
1/4 cup celery leaves

Steps:

  • For the pork chops: Mix together the juice, salt and 1 gallon cold water. Submerge the pork chops and let brine in the refrigerator overnight.
  • In a large saute pan over high heat, warm the oil. Sprinkle the chops with the salt and pepper. Then add the chops to the oil and reduce the heat to medium. Sear the chops until browned on the first side, 4 to 5 minutes, and then flip and repeat the process on the second side. After cooking on the second side, remove the pork from the pan and drain out any excess oil from the pan.
  • For the salad: Return the pan to medium-high heat with the oil. Then add the apples, bacon, onions and salt to the pan. Cook for 6 to 7 minutes, stirring throughout. Add the balsamic and sugar, and then reduce the vinegar for 2 minutes. After reducing, remove the pan from the stove and stir in the butter until smooth. Add the celery leaves.
  • Serve the chops with the apple bacon salad.

6 boneless pork chops (1 1/2 lb.), 1 inch thick
1/2 tsp. dried thyme leaves
1/4 tsp. ground black pepper
6 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
1 onion, chopped
1 jar (12 oz.) HEINZ HomeStyle Brown with Onions Gravy

Steps:

  • Sprinkle chops with thyme and pepper.
  • Cook and stir bacon and onions in large skillet on medium-high heat until bacon is crisp. Remove bacon mixture from skillet with slotted spoon; place in medium bowl.
  • Add chops to reserved drippings in skillet; cook 5 min. on each side or until chops are evenly browned on both sides. Meanwhile, stir gravy into bacon mixture.
  • Pour gravy mixture over chops; cover. Simmer on medium-low heat 15 min. or until chops are done (145ºF). Remove from heat. Let stand 3 min. before serving.
