Pork chops simmered in applesauce, white wine, and onions. I first made this on a camping trip, and it's very easy.

- Season pork chops with salt and pepper.
- Place a large skillet over medium-high heat. Lay seasoned pork chops into the hot skillet. In the spaces between the chops, add the butter and onions. Cook and stir the onions while the first side of the chops cook until browned, 5 to 7 minutes. Turn the chops and continue cooking until the no longer pink in the center, 5 to 7 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Pour white wine into the skillet; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir applesauce through the onion and wine mixture; simmer until the liquid thickens somewhat, about 5 minutes.
- Plate the pork chops and top with the apple and onion mixture to serve.

I'm constantly on the lookout for ways to "spice up" a standard dish. When I fixed these pork chops for the first time, my husband-who has a hearty appetite for down-home cooking-commented, "You can make this anytime!" We have a 5-month-old son, and he's already showing signs he'll take after his dad in the eating department. Our daughters, 6 and 8 , help me with the cooking. So it's a good thing that I have a large recipe collection!

- In a large skillet, brown chops in oil on both sides. Add water, paprika, pepper and 1 teaspoon salt; bring to a boil. Reduce heat to low; cover and simmer about 35 minutes, turning once. Meanwhile, grate peel from the stem end of the orange, then cut six slices from the other end. Set aside. In a saucepan over medium-high, combine 1 tablespoon peel, sugar, cornstarch, cinnamon, cloves and remaining salt. Stir in juice. Cook and stir until thickened. - Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.

- Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 12 minutes, stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.
- Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear. - Preheat the oven to 350 degrees F.
- Gently cut pockets into chops by slicing horizontally in the side. On a plate, place salt and pepper. Dredge chops in seasoning. In a medium skillet over medium heat, saute the bacon, chopped onions, thyme, and sage until the bacon is almost crispy and the onions are beginning to caramelize around the edges, about 10 minutes. - Preheat the oven to 375 degrees F.
- Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. - Season both sides of pork chops with kosher salt and black pepper. Add 1 Tbsp olive oil to large heavy bottomed pan (or skillet), and heat over MED-HIGH heat. Add pork chops to pan, leaving at least an inch between the chops to ensure even cooking and browning. Sear 3-5 minutes per side, or until pork chops are mostly done. Chops will continue cooking in the sauce later.
- Remove pork chops to a plate.
- In a small mixing bowl, whisk together chicken stock and mustard, set aside.
- Add remaining 1 Tbsp oil to the pan, then add apples and onions. Cook 4 minutes, stirring occasionally. Season with salt, pepper, sage, rosemary, and thyme. Stir to combine.

- In a shallow pan, pour marinade over pork chops and marinate for 1 hour.
- Remove the meat from the marinade and drain off the excess. In a skillet over high heat, pan-sear the pork chops on both sides in butter and oil to seal in juices. - Melt butter with oil in heavy skillet over medium-high heat. Add apples and saute until tender and golden, about 10 minutes.
- Add liqueur and bring to boil. Add broth, 2 tablespoons parsley, honey and orange peel. Simmer until liquid is slightly thickened, about 5 minutes.

- Trim excess fat from pork chops; season lightly with salt and pepper. Brown quickly in shortening. Pour from skillet all but 1 tablespoon of drippings. Sauté onion in the drippings. - Gather the ingredients. Heat the oven to 350 F.
- Arrange the apple slices in a buttered 13 x 9-inch baking dish . Sprinkle with the cinnamon and brown sugar.
- Melt the butter in a skillet over medium heat. Sprinkle the pork chops with salt and pepper, then brown on both sides in the butter. Transfer the pork chops to the prepared baking dish, arranging over the apples.
- Add the apple juice, cider, brandy, or wine to the hot pan; swirl and scrape up any browned bits. Pour over the chops.
- Cover the baking dish tightly with foil and bake for 35 to 45 minutes, or until pork chops register at least 145 F-the minimum safe temperature for pork -on an instant-read thermometer inserted into the thickest part of a pork chop.

- Drizzle olive oil into a medium skillet over medium-high heat.
- Meanwhile, season pork chops with paprika, garlic powder, salt and pepper.
- Once oil in skillet is glistening, brown pork chops on both sides.
- In a small bowl, whisk together orange juice, brown sugar, orange marmalade and apple cider vinegar.
- Lower skillet heat to medium-low. Pour liquid mixture over chops and cover skillet. Simmer for 10-15 minutes, occasionally flipping chops and scraping the bottom of the skillet with a wooden spoon to keep them from burning or sticking.
- Just before serving, increase skillet heat to medium-high for 3-5 minutes until the sauce caramelizes (darkens and thickens slightly) to your preference. Watch closely in order to prevent from burning.
- Serve chops over hot, cooked rice with sauce spooned over all.
