Steps:
- Heat oil in a wok or large frying pan on high. Stir-fry pork and garlic for 4-5 minutes, breaking up lumps with the back of a spoon, until browned.
- Add sugar, fish sauce and leaves. Simmer for 3-4 minutes or until thickened slightly.
- Add coriander, peanuts, shallots and chilli. Stir-fry for a further 3-4 minutes.
- Spoon into lettuce cups. Sprinkle with extra fried shallots. Serve with lime wedges.

- Heat the oil in a large frying pan. Fry the ginger, garlic and chillies for 1 min. Add the mince, then cook on a high heat until golden brown, breaking it up with a wooden spoon as you go. Sprinkle over the brown sugar, fish sauce, lime juice and shredded lime leaves, then cook everything down until sticky.
- Tip the mince into a serving bowl, then serve with a bowl of lettuce leaves for wrapping the mince in; the herbs, shallots and peanuts for scattering over; and the lime wedges for squeezing.

PORK LETTUCE CUPS
This was born of leftover filling from Spinners beautiful Spicy Roast Chicken recipe #54387 that we ate last night. Not liking to waste the yummy filling, this is what I came up with. We ate it as an appetiser tonight, but it would be good as part of an Asian style banquet.

Steps:
- Core the lettuce, and carefully seperate the leaves to form cups.
- Wash and dry gently and store in the fridge in a plastic bag to crisp while you make the filling.
- FILLING Heat the oil in a wok or frying pan, and cook the onion until softened-about 5 minutes, then add the mince and chilli and cook until the colour changes-a further 10 minutes.
- Add the remaining ingredients and toss for another couple of minutes to heat through.
- Serve in the lettuce cups (rolling them up like rice paper rolls) with a little extra chopped fresh coriander and oystersauce if you wish.
